Cheater's Eggnog Cake

Eggnog Cake

3 large eggs
1/4 cup unsalted butter, melted
1 1/4 cups prepared eggnog
2 tablespoons rum
1 1/2 teaspoons vanilla extract
1/4 teaspoon freshly grated nutmeg
1 box white cake mix

1 cup unsalted butter, softened
4 1/2 cups confectioners' sugar
2 tablespoons prepared eggnog
2 teaspoons rum
1 teaspoon vanilla extract
1/8 teaspoon freshly grated nutmeg

Preheat oven to 350 degrees F. Coat 2 (9-inch) round cake pans with non-stick flour-added cooking spray, or use your favorite method.

In a large bowl, using an electric mixer on low speed, beat together eggs, butter, eggnog, rum, vanilla, nutmeg, and cake mix, until moistened. Increase mixer speed to medium, and beat the mixture for 2 additional minutes.
Divide the batter into the prepared pans, and bake for 28-31 minutes, or until a toothpick inserted into cake comes out clean.

Cool cakes in pan for 10 minutes, on wire racks. Run a knife around the outside edges of pan, then invert cakes onto wire racks, to cool completely.

To make the frosting, in a large bowl, using an electric mixer on medium speed, beat together butter, and confectioners' sugar, until creamy. Beat in eggnog, rum, vanilla, and nutmeg, for an additional 3 minutes, or until ingredients are really well combined.
Spread and decorate the cake with frosting.

  2. That's such a pretty cake! I think the flavor of the frosting would be delicious. Eggnog has never done much for me, but I think the flavor in a cake would be great.

    The idea of adding eggnog to icing is BRILLIANT! I never thought of that, I've never had that and I want it.

  5. I make some cakes that use cake mixes, and they are really good. I think they are better when they are doctored up.

    My husband loves eggnog. I may have to make that for him. But not now. I'm kind of sugared out.

  7. I am with you I don't like to make cake from a box, it is cheating! But this looks really good from the doctoring you did and the end result is beautiful. Sometimes ending the day with all your marbles is so much better then a cake you can claim as your own.

  18. I'm not against using a cake mix if what you're going to do something fun with it. A friend of mine gave me a recipe for a pistachio chocolate cake that uses a mix and it's just as big a hit with people as many of my homemade cakes are (fortunately not all of them). Alton Brown once said that cake mixes are better tasting than homemade ones because the chemicals give it better texture. I don't know about that, but a cake mix can be a basis for a spectacular dessert if used wisely (just don't make a cake from a mix and cover it with canned frosting and expect me to be impressed).

    This cake looks delicious, no questions asked.

    I like the texture of cake mix cakes, but I don't like the flavor. They taste sort of like chemicals. And Sue pointed out to me, that the sodium is crazy high. It's funny, because I never noticed that before.
