Cranberry-Pistachio Bark

>> Sunday, December 23, 2007

I'm getting très excite about Christmas...are you? It's almost here. I ordered most of my gifts online, and they arrived at the house within a few days. I'm really excited about the gifts I bought...I hope my family likes them. I think they're good.
I wonder how many of us bloggers will post over the next few days? I might, but I don't know. Depends if I make anything delicious. I know I'm making bread for Christmas. We're going Italian, with pasta.

This is a simple recipe for Cranberry-Pistachio Bark. I know it's not much, but I still thought it was worth posting. Definitely easy to make, and very tasty. If you're just here for the food, don't read my non-food related post, below.

Have a wonderful Christmas Eve, and a Merry Christmas!

Cranberry-Pistachio Bark (Recipe by Emiline)

Ingredients:
11 ounces (about 2 cups) white chocolate chips (1 bag of Ghiradelli)
1/3 cup sweetened dried cranberries
1/3 cup coarsely chopped pistachios

Directions:
Line a small sheet pan with waxed paper.

Melt the white chocolate over a double boiler, stirring frequently. Spread the chocolate evenly over waved paper, about 1/8-inch thick. Sprinkle cranberries and pistachios over chocolate, and press gently into chocolate.
Cool in the refrigerator until firm; break into pieces.

I kept meaning to make something with cranberries and pistachios this year but ran out of time. This looks like I might could manage with not too much time and it looks so holiday-ish.

Hey Em,
YOU are a posting machine. I HAVE a few posts in mind, but whether they get to the page is another matter.

If this is it before Christmas, have a really great one!!! I like that you're so enthusiastic about the gifts you're giving. It IS better to give than receive, although getting can be pretty nifty too.

Love ya, kid,
Sue
