This is the sassiest, best cherry pie you've ever eaten.

Cherry Pie with an Attitude
Pie dough:
2 cups all-purpose flour, plus additional for rolling
2 tablespoons granulated sugar
1/2 teaspoon salt
12 tablespoons cold unsalted butter, cut into small pieces
4 tablespoons (trans-fat free) shortening
6 tablespoons ice water
1 1/2 lbs. fresh dark sweet cherries, stemmed, pitted, halved
1/4 cup granulated sugar
1/4 cup firmly packed brown sugar
2 1/2 tablespoons cornstarch
2 teaspoons vanilla extract
1/4 teaspoon ground cinnamon
Dash of freshly grated nutmeg
1 egg yolk whisked with 1 tablespoon milk
Directions:
In a large mixing bowl, stir together the flour, sugar, and salt. Work the butter and shortening in, using a pastry blender or your fingers, until the mixture resembles coarse bread crumbs. Sprinkle in the water, 1 tbsp. at a time, stirring gently with a fork after each addition and adding only enough of the water to form a rough mass.
Using floured hands, divide the dough in half, and pat into 2 smooth, flattened disks. Wrap in plastic wrap, and chill for 30 minutes.
Preheat oven to 375 degrees F.
In a large bowl, combine cherries, granulated sugar, brown sugar, cornstarch, vanilla, cinnamon, and nutmeg, and stir well to combine.
Roll out one of your pie dough rounds, thinly, on a floured surface, and fit into a 9-inch pie plate; pour the cherries into the pie plate.
Roll out the second pie dough round, and fit it over the top of the cherries. Trim away the excess dough, and make the crust look all pretty. Snip some vents into the pie dough. Brush the yolk mixture evenly over dough.
Bake pie for 1 hr & 5-10 minutes, or until crust is golden brown. If your crust or your crust edges starts to brown too quickly, cover with foil.
Cool pie on a wire rack, to room temperature, before slicing.
Yield: 8-10 slices

Dang Girl, I hate you for having such an awesome looking pie but...I dedicate this song to you and your pie...

My, my...what a tale you have to tell. Well, I hope you feel a little better after taking it out on this pie. Looks rather tasty to me!
ReplyDeletePeter- Oh, that's bad.
ReplyDeleteIt's perfect though!
I'm tempted to post it.
GN- I like to post angry blogs. People seem to like them.
You poor thing! I am hoping that you do not get very many people that behave so poorly! On top of that, you are working while sick. Well, your pie is awesome and looks absolutely delicious! he pie crust looks tender and flaky and the cherries jump right out of the phot. Perfect! =D
ReplyDeleteShandy
OMG! I was a server for like 3 months and hated it! Why can't people be nice to you when you are busy and running all night long? Well, good thing you took your anger out on the pie and not the mean lady! It is a lot healthier I believe. Or maybe making the pie and then putting it on the mean lady's head as a hat? Hehehe.
ReplyDeleteGet well!
That cherry pie looks amazing!
ReplyDeleteI agree that your pastry rocks. Look at how flaky that is Emeline :D You can always tell the customers who have been servers at some point in our lives. We are the ones who stack our plates neatly and wipe up our crumbs. The others...well......you know....:D
ReplyDeleteyou make angry cute and delicious.
ReplyDeleteget better soon. i've been sick for what seems like forever at this point and it sucks.
I'm hungry for cherry pie now - yours looks great! :)
ReplyDeleteSorry to hear about that grouchy lady. I hope you have a good rest of the week!
I feel your anger. I work with the public in my day job with the whole cosmetics thing and part time as a server with a caterer. People are rude and insensitive and think they can dump on you. And you cant bitch back or risk trouble or termination. Take it out in your baking and keep producing those tasty and gorgeous pies!
ReplyDeleteOh, fab - a pie stuffed with fat juicy cherries... It does have my name on it, doesn't it??
ReplyDeleteI do understand your anger. But I do not understand why do you have to torture your readers with such a great photo of a pie that looks so great and so delicious. :-)
ReplyDeleteHey there Emiline, that's a mighty sweet pie that you baked with such a horrible experience in mind. Loved the post name and the photo -got my attention immediately!!!
ReplyDeleteThat's one bitchin' awesome title, Emiline. ;) And how's about a piece of that pie?
ReplyDeleteWell, that lady is an ass, Emiline.
ReplyDeleteAnd this pie looks so delicious! I'm a sucker for cherries and that oozing filling is killing me! :)
oh i need a slice of this "bitchin" cherry pie coz i encounter a lot of "&à ç%*" people too :-) goodluck my dear i hope you wont encounter crazy customers like that everyday :-)
ReplyDeleteThe pies looks gorgeous! Lovely photos. Sorry you had to deal with such a cow. Some people are just like that. You can't buy class.
ReplyDeleteThat pie reminds me of summer!
ReplyDeleteThat lady was a beeyotch. Hope you at least got a decent tip from the rest of the table, who should have been completely embarrassed by her. And I hope you feel better. Your pie looks deelish.
ReplyDeleteThis kind of people arise all the bad in me (imagine some little horns growing in my head now) I would think about poisoning her meal (only think about it. That would make me feel better). Or dropping some juice over her...
ReplyDeleteYour Cherry Pie looks wonderful and the first pic is great!!!
My mom was a waitress all her working life. My son is in the restaurant business. I have heard stories that certainly made me want to never be a server. On the other hand, I am a perfect customer because I know how hard you work.
ReplyDeleteI like the crust and the juice on a pie so I don't care how runny it is! Your pie looks delish.
That is exactly why I didn't last long as a server...Good thing you have this amazing looking pie to cheer you up!!
ReplyDeleteI was in food and beverage service for 11 years. I don't think I'd be able to force myself to go back.
ReplyDeleteAnd Lordy! you DO rock at pie crust. I'm never photographing a pie I make again. I can't even get store bought pie crust to look that good!
What a jerky lady! I can't believe anyone could be so mean to you - you are such a sweetie! Just like your pie!
ReplyDeleteI serve as well--sometimes I'd like to give certain customers a good swift kick to the shins.
ReplyDeleteYour pie crust looks so flaky and delicious!
That pie looks so amazing! I've starred it.
ReplyDeleteI don't miss serving rude customers. The best was when a customer was rude to me on my last day at the job. I told her off and it felt great.
Honey, this is why I'll never work in a restaurant again. I did my time in service for four years, and barely escaped without killing someone. I have slipped eyedrops in someone's drink before (it causes diarrhea).
ReplyDeleteAll's I can say is, I've seen Fight Club. ;)
I should never come here to your blog on an empty stomach. I am drooling over the pie. And I'm filled with admiration on your fortitude in the face of the ridiculous customer that is the "inspiration" for this phenomenal looking creation!
ReplyDeleteCindy at Rosehaven Cottage
Wow,we insult the little dogs when we call some people like her a bitch. Call her a witch next time:-) Your cherry pie is sooooo good. I wish we could find some frozen fruit in Athens to make cherry pies in the winter. Even when it's spring we can't make them because they're so expensive.
ReplyDeleteThat looks gorgeous. What a beautiful crust.
ReplyDeleteYou took an ugly situation and created soemthing beautiful out of it. Now that's a chef!
Hope you're feeling better.
I think frozen cherries are a good idea. I love making cherry pie in the summer, but I hate dealing with pits.
Oh dear - sounds like a right old cow you had there. But see, you both maintained your dignity as well as told her to @@%£%!!&@ through your blog - best of both worlds! Now have a nice slice of pie. ;)
ReplyDeleteI have no use for rude people. I feel your pain. My face gets hot and red when I'm mad too! LOL...
ReplyDeleteThe cherry pie looks wonderful-almost looks like blueberry pie. And the crust looks perfect too!
Wow, some people have some nerve to act that way. Good for you for keeping your cool with her. I can imagine how easy it would have been to say a few choice words to her!
ReplyDeleteYour pie looks gorgeous that's for sure and perfectly named!!
i have yet to make my own pie crust *gasp* this pie looks so mouth watering delicious!
ReplyDeleteHaha! Ohh, dear Emiline...I could never be a server, because I would not be as patient and kind as you. I hate mean people! I think they need to be kicked in the throat. But that pie looks great! I guess something good came from the shitty lady ordeal...?
ReplyDeleteDon't you dare say whether you did this or not, but I hope a few dust bunnies made it into a dish or two for that ill-mannered horrible lady. Actually that was no lady!!! I would have tripped her on the way out.
ReplyDeleteI probably also would have eaten that entire pie to console myself...
Plus if you make something THAT good when you're mad, imagine what you would make when you're really happy!
I love all of the swearing that's going on in the comments. Just let loose everyone!
ReplyDeleteValli- Oh, you would know. I forgot you were a server. Mmm, pizza.
Glamah- You feel my pain!
Nuria- Juice, huh?
Anj- I'm sure you are the perfect customer! You're too sweet.
Mary- Thanks! I'm glad you like the crust.
Heather- Eyedrops, huh?
This proves you should never be mean to your server.
Ley- Yes, I think so. The Bitchin' Cherry Pie was invented.
Sue- Dust bunnies, huh? I'm getting all sorts of ideas.
LMAO I love how you baked a cake in honour of a BITCH! It looks great and why is it I never heard of baking cherry pie for President's day? NYC needs you!
ReplyDeleteHi Emiline, I have tagged you for a MeMe:
ReplyDeletehttp://kitchenlaw.blogspot.com/2008/02/meme-food-for-gossip.html
those cherries look like they would just explode in your mouth, so who cares about a soggy crust? delicious!
ReplyDeletei've tagged you, if you're interested. never fear, i won't be hurt if you skip it. :)
Hahaha, as someone who used to waitress, I tooootally understand. Sometimes you want to "season" their entree with a little something extra....
ReplyDeleteNice looking cherry pie- sorry about the crazy! Some people shouldn't be let out in public.
