Cherry Pie with an Attitude

This is the sassiest, best cherry pie you've ever eaten.

Cherry Pie with an Attitude

Pie dough:
2 cups all-purpose flour, plus additional for rolling
2 tablespoons granulated sugar
1/2 teaspoon salt
12 tablespoons cold unsalted butter, cut into small pieces
4 tablespoons (trans-fat free) shortening
6 tablespoons ice water

1 1/2 lbs. fresh dark sweet cherries, stemmed, pitted, halved
1/4 cup granulated sugar
1/4 cup firmly packed brown sugar
2 1/2 tablespoons cornstarch
2 teaspoons vanilla extract
1/4 teaspoon ground cinnamon
Dash of freshly grated nutmeg
1 egg yolk whisked with 1 tablespoon milk

In a large mixing bowl, stir together the flour, sugar, and salt. Work the butter and shortening in, using a pastry blender or your fingers, until the mixture resembles coarse bread crumbs. Sprinkle in the water, 1 tbsp. at a time, stirring gently with a fork after each addition and adding only enough of the water to form a rough mass.

Using floured hands, divide the dough in half, and pat into 2 smooth, flattened disks. Wrap in plastic wrap, and chill for 30 minutes.

Preheat oven to 375 degrees F.

In a large bowl, combine cherries, granulated sugar, brown sugar, cornstarch, vanilla, cinnamon, and nutmeg, and stir well to combine.

Roll out one of your pie dough rounds, thinly, on a floured surface, and fit into a 9-inch pie plate; pour the cherries into the pie plate.
Roll out the second pie dough round, and fit it over the top of the cherries. Trim away the excess dough, and make the crust look all pretty. Snip some vents into the pie dough. Brush the yolk mixture evenly over dough.

Bake pie for 1 hr & 5-10 minutes, or until crust is golden brown. If your crust or your crust edges starts to brown too quickly, cover with foil.

Cool pie on a wire rack, to room temperature, before slicing.

Yield: 8-10 slices

  4. You poor thing! I am hoping that you do not get very many people that behave so poorly! On top of that, you are working while sick. Well, your pie is awesome and looks absolutely delicious! he pie crust looks tender and flaky and the cherries jump right out of the phot. Perfect! =D


  5. OMG! I was a server for like 3 months and hated it! Why can't people be nice to you when you are busy and running all night long? Well, good thing you took your anger out on the pie and not the mean lady! It is a lot healthier I believe. Or maybe making the pie and then putting it on the mean lady's head as a hat? Hehehe.

  6. I agree that your pastry rocks. Look at how flaky that is Emeline :D You can always tell the customers who have been servers at some point in our lives. We are the ones who stack our plates neatly and wipe up our crumbs. The know....:D

  9. I feel your anger. I work with the public in my day job with the whole cosmetics thing and part time as a server with a caterer. People are rude and insensitive and think they can dump on you. And you cant bitch back or risk trouble or termination. Take it out in your baking and keep producing those tasty and gorgeous pies!

  19. My mom was a waitress all her working life. My son is in the restaurant business. I have heard stories that certainly made me want to never be a server. On the other hand, I am a perfect customer because I know how hard you work.

    I like the crust and the juice on a pie so I don't care how runny it is! Your pie looks delish.

    And Lordy! you DO rock at pie crust. I'm never photographing a pie I make again. I can't even get store bought pie crust to look that good!

    I don't miss serving rude customers. The best was when a customer was rude to me on my last day at the job. I told her off and it felt great.

  25. Honey, this is why I'll never work in a restaurant again. I did my time in service for four years, and barely escaped without killing someone. I have slipped eyedrops in someone's drink before (it causes diarrhea).
