Strawberry-Lemonade Rhubarb Tartelettes
Ingredients:
Pie dough
3/4 lb. rhubarb, trimmed, coarsely chopped
1/2 cup granulated sugar
1/3 cup water
1/2 teaspoon finely grated lemon zest
1 tablespoon lemon juice
2 1/2 teaspoons cornstarch
1 teaspoon vanilla extract
1 cup thinly sliced strawberries
Whipped cream
Directions:
Preheat oven to 400 degrees F.
Roll out pie dough, thinly, on a lightly floured surface. Use a cookie cutter or a drinking glass to punch out dough rounds; fit into mini tart pans. Prick bottom of tarts, using a fork.
Bake for 20 minutes, or until light golden brown; invert shells onto a plate.
Stir together rhubarb, sugar, water and lemon zest in a medium sized saucepan, over medium heat, and bring mixture to a boil. Boil for 5 minutes, whisking frequently, until rhubarb is cooked, and starting to dissolve into a thick liquid. Stir together lemon juice and cornstarch, in a small bowl, until smooth. Whisk cornstarch mixture into rhubarb mixture; bring rhubarb mixture to a boil, whisking frequently. Remove pan from heat, whisk in vanilla extract, and cool pan for 5 minutes. Place pan in refrigerator, to cool completely.
Divide rhubarb mixture into tart shells, top with sliced strawberries, and whipped cream.
Yield: About 12 mini tarts
Why don't you start sing "Ipsy wipsy Spider climbed...." maybe it will then go away..LOL. Great tatelettes Emiline, you baking maestro!
ReplyDeletePS I had no idea you liked wearing summery dresses and drinking lemonade!
No, don't! My ears!
ReplyDeleteAnd yes, I do like those things, along with twirling in the countryside.
Here's a question for everyone else:
Do you like burritos?
Burrito: yes, please.
ReplyDeleteThe tarts look like a great summer sweet. This post makes me want to explore some savory use of rhubarb. Seems like some great sauce/marinade possibilities.
To clarify: burritos?
Good to see you're back and the oven is fixed. Can't find rhubarb around here but soon we'll be jumping into strawberry season so I must keep your recipe in mind.
ReplyDeleteAlso I have an award waiting for you on my blog so come and get it ;)
Yeap, love burritos but I'm still in the experimenting-phase when it comes to homemade tortillas.
What wonderful tarts. I would definitely go for those. But I'd still be worried about the spider.
ReplyDeleteI like burritos a bunch.
Yeah. The Princess of Pastry is back with delectable tartlettes. I hav eto admit I always secretly admired Roseanne and her spunk. Jusy all that craziness with her various husbands and stuff annoyed me.
ReplyDeleteOh! Don't smash him! He might be a reincarnated Buddha! Or maybe even Julia Child! And Robert Mondavi just died!
ReplyDeleteDo I like burritos???? Yes. It's a food group.
I will try these tartelettes...I have some rhubarb ready to go.
I'm so glad you can "bake for 20 minutes" now. Those tartlettes look delicious. I'm a rhubarb fan myself.
ReplyDeleteIt's too early in the morning to scare me with the spider! Yikes. Hopefully it crawled back outside.
ReplyDeleteI've been so tempted to try to make something with rhubarb, this looks delish!
OMG i absolutelycompletely DETEST spiders!!! They're so evil! One time there was a spider on my ceiling and me and my roommates were all too terrified of it, so one of my roommates too a cup, CUPPED the spider to the ceiling, and we taped the cup with the spider in it to the ceiling until my other roommate's boyfriend could come kill it! Good luck getting rid of your spider...
ReplyDeleteAt least your tartelettes look gorgeous!
Glad to see your oven is working again and you are cooking up a storm Em. Rhubarb and strawberries are the best of combinations:D
ReplyDeleteIf you had gotten any closer to that strawberry I think you'da had to make it an honest berry and marry it.
ReplyDeleteI'm not afraid of spiders at all (I think they're good luck), but that one looks like a bitey spider. Maybe even a black widow!
Yes, yes I do like burritos. Why does Blaise look like fetal alcohol syndrome?
The burrito thing is from Top Chef:
ReplyDeletehttp://www.thekitchn.com/thekitchn/roundup-food-tv/top-chef-chicago-do-you-like-burritos-050850
Glamah- Yeah, I just liked the show, not everything else.
Dessertobsessed- I wish I had done that, so at least I'd know where it was!
Heather- Black widow?! Really? Ahhhhh!
Ha, yes, Blaise does kind of look like that. Actually, it looks like he's been drinking a lot. He always looks really tired. I just don't see any Baby Blaises in the future.
With strawberry, rhubarb and lemon this sounds great! Nice shot of the spider!
ReplyDeleteAHHH!! I'm BEYOND terrified of spiders!!! Eek.
ReplyDeleteHaha, no worries - I like watching re-runs of 'Roseanne' :0)
Oh my, those tartelettes are FABULOUS!! Love the rhubarb-strawberry-lemon combination.
Yes, I love burritos!
OMGooses, the spider!!! I hate spiders. I remember the year when the wolf spiders would CHASE me. Seriously.
ReplyDeleteYes, I usually like burritos. Especially with meat made how Chipotle makes theirs and not just ground beef.
The tartelettes look really pretty! I have some rhubarb outside I need to pick, though there is still a bag of frozen rhubarb from a year or two ago.
I have some rhubarb in my garden that is begging to be made into some tarts. Really, there is no nicer way to enjoy it. Yours look amazing!
ReplyDeletePS. Go Antonia!
I do the same thing when I see bugs, I freak myself out thinking they are crawling all over me, it's ridiculous!
ReplyDeleteYour little tartlettes are adorable and the pics are beautiful, Nice work!
Hope you get some sleep!
Breakfast burrito fans in my house.
12 tarts is not going to work for me - I will have to triple this recipe.
ReplyDeletehave you ever heard that the average person swallows four or five spiders a year while asleep? i think it's a myth, although i can't be sure. good thing i'm not like the average person. :)
ReplyDeletemeanwhile, your tarts are obviously gorgeous and surely delicious. and burritos rock my world.
Hee hee hee. You said RHUBARB! One of these days I might post the meaning of my blog name. I'm just afraid that if I do so, it will pretty much confirm to everyone that I am certifiably insane.
ReplyDeleteAlthough summer is my favorite season, the bugs are really a drawback. You can't take your horse for a walk in the woods without breathing insects. But remember the spiders eat a lot of the insects that drive us nuts. Come on, didn't you read "Charlott's Web" as a kid?
(I would worry less about that spider on me and more about the spider getting into your dessert.)
I always liked Roseanne. I remember whe it made its debut on TV that I found it a refreshing and realistic change from the whole Cosby/Family Ties/Growing Pains perfect-middle-class-white-picket-fence family sitcoms.
I prefer tacos to burritos. Burritos are a little too big and heavy.
This is lovely and really yummy!! But your spider!! woww
ReplyDeleteIs nice you may cook at the ove again. I love burritos Emiline!!!xGloria
ewwwwwww! I hate bugs! A couple of weeks ago, I found a spider in the tub and I squished it with the shampoo bottle and it looked dead. I turned away and then came back. It was gone! The next day he was there again! I squished him again and I got spider juice on the bottle so I totally thought he was dead. Heck no. I came back and he was gone! Maybe there is a spider heaven! That's what I tell myself anyways.
ReplyDeleteSupposedly we eat 8 spiders annually while we sleep. It might be time to duct tape our mouths when he go to bed.
These look scrumptious!
ReplyDeletelove the fruit combo + mini versions are always fun to make.....always on the look out for spiders~don't like creepy crawlers-nice spooky pix tho.
ReplyDeleteInteresting blog btw and love your photos+recipes combined!
wow! this is beautiful. the strawberries are so fresh around me right now, i want to use them in everything! I must try this combination! ...not a huge fan of burritos ;)...
ReplyDeleteAre you serious? This is the spider!? It's huge!!!
ReplyDeleteAre you sure it didn't fall into the tartelettes? Hehe. It could explain why it's soo delicious.. a sugar-coated spider. Yum! Sorry, I'm not trying to freak you out. Haha. Nice work!
Those are exquisite, Emiline!
ReplyDeleteAnd I'm totally terrified of all insects. :S
Isn't rhubarb awesome?? I love it, and these look great!
ReplyDeleteLUUUUVERLY tartlettes! (I am not surprised, beacause you are a genious). HEY! Your oven is back!! YAY!
ReplyDeleteI'm really not afraid of spiders at all- but my husband is. It's pretty hilarious. He calls me in to the bathroom to dispose of the creepy crawlers. He watches nervously while I do the cup/piece of paper trick and send it outside (I am a firm believer that killing spiders is way bad kharma).
Having said that- your spidey visitor is kind of mean looking.
I love roseanne. Isn't is strange how in all those years, DJ like NEVER ages?
I am so glad to see your oven is working again and you come back with a huge bang with these truly scummy tartelettes - just stunning!
ReplyDeleteRosie x
That spider is super scary! But the tart looks delicious. I've never tried rhubarb before. I always see it paired with strawberry though. Does it taste similar or what? I need a description of what a rhubarb tastes like before I'm willing to take a chance. Because in its raw form it does not look like something I would like. LOL!
ReplyDeleteToo funny. I actually had a really scary spider episode the other day. Mine was also black and BIG but it looked a little different. Well, anyway, I was on the computer and out of the corner of my eye I saw something moving. It was crawling very close to my laptop. I jumped up in a panic and it knew I spotted it. It began to furiously run around in spastic circles and I ran to get a wet paper towel (the best way to kill a spider, trust me) and it scurried right into one of the plug holes IN MY COMPUTER!!!!!
ReplyDeleteI had to literally try to tweeze it out, although I was scared shit to even get that close. Long story short, it came running out and extended its web and landed on the floor. Thank God! I got it....
Nice taretletts by the way. I love strawberry rhubarb pie so this looks intriguing.
I have to agree with you on the bugs topic, for sure. I track the first day of summer based on how many bug bites I have! Eek. I love the mix of strawberries and lemonade; this sounds like a great summer dessert...it'd definitely do a good job of temporarily warding off the itchiness of the many mosquito bites :D. I'm interested in trying rhubarb, I've never baked with it!
ReplyDeleteMy mouth is puckering just at the title! :) Mmmm.....
ReplyDeletei already did a combination of this two: strawberry and rhubarb. and im definitely sure these tartelettes are exquisite :-)
ReplyDeleteps, i love drinking lemonade and wearing summery dresses too..the ones with lots of flower designs.:-) too bad i still have to wait for real summer to put them. the weather here is still a bit cold
Hola beauty! I'm sorry I didn't come to your place until now... it's so hard to be everywhere!!! You know what I mean, right? :D
ReplyDeleteI HATE spiders, bugs, mosquitos, all insects in general... I rather face a lion!!!!
Your tartalettes look fantastic!
Hey, Em. I'm writing my paper on Sylvia Plath right now...well sort of, not really. I decided checking my email and your blog was higher up on my priority list. I'll see you when I get home, b.s.
ReplyDeleteBurritos? Yes! Strawberry-Lemonade Rhubarb Tartelettes - Bring 'em on! I knew the minute I saw that photo, I wanted one. Or three. Rhubarb seems to be making it to many of the blogs these days..
ReplyDeleteI just grab spiders with a wad of paper towels and throw them outside. Don't want them crawling over me, either, but don't like smashing them.
I'm intrigued by the recipe, but oh my god, why the spider picture?! *shudders*
ReplyDeleteLove the tartlettes! Definitely on my list to make.
ReplyDeleteYes, I like burritos!
I freaking hate those spring spiders.
ReplyDeleteAnd YES, I do like burritos! :-)
Wow, what a great blog you have, so refreshing. I saw you on Cynthia´s blog. I am hosting Tried And Tasted Event, we re cooking Carribean this month - up for the challenge? It is about cooking from other blogs, a lot of fun :-)
ReplyDeleteUghh! I hate hate hate when spiders live after you swat them. I'm afraid of spiders and would probably not be able to sit in a room if a spider were to escape after an initial attempt to kill it.
ReplyDeleteI'm not a big burrito(s?) fan, but I do like the tartlette.
