Strawberry-Lemonade Rhubarb Tartelettes

Strawberry & rhubarb are a match made in heaven!  

Strawberry-Lemonade Rhubarb Tartelettes

Pie dough
3/4 lb. rhubarb, trimmed, coarsely chopped
1/2 cup granulated sugar
1/3 cup water
1/2 teaspoon finely grated lemon zest
1 tablespoon lemon juice
2 1/2 teaspoons cornstarch
1 teaspoon vanilla extract

1 cup thinly sliced strawberries
Whipped cream

Preheat oven to 400 degrees F.

Roll out pie dough, thinly, on a lightly floured surface. Use a cookie cutter or a drinking glass to punch out dough rounds; fit into mini tart pans. Prick bottom of tarts, using a fork.
Bake for 20 minutes, or until light golden brown; invert shells onto a plate.

Stir together rhubarb, sugar, water and lemon zest in a medium sized saucepan, over medium heat, and bring mixture to a boil. Boil for 5 minutes, whisking frequently, until rhubarb is cooked, and starting to dissolve into a thick liquid. Stir together lemon juice and cornstarch, in a small bowl, until smooth. Whisk cornstarch mixture into rhubarb mixture; bring rhubarb mixture to a boil, whisking frequently. Remove pan from heat, whisk in vanilla extract, and cool pan for 5 minutes. Place pan in refrigerator, to cool completely.

Divide rhubarb mixture into tart shells, top with sliced strawberries, and whipped cream.

Yield: About 12 mini tarts

  4. Good to see you're back and the oven is fixed. Can't find rhubarb around here but soon we'll be jumping into strawberry season so I must keep your recipe in mind.

    Yeap, love burritos but I'm still in the experimenting-phase when it comes to homemade tortillas.

  10. OMG i absolutelycompletely DETEST spiders!!! They're so evil! One time there was a spider on my ceiling and me and my roommates were all too terrified of it, so one of my roommates too a cup, CUPPED the spider to the ceiling, and we taped the cup with the spider in it to the ceiling until my other roommate's boyfriend could come kill it! Good luck getting rid of your spider...

    I'm not afraid of spiders at all (I think they're good luck), but that one looks like a bitey spider. Maybe even a black widow!

    Yes, I usually like burritos. Especially with meat made how Chipotle makes theirs and not just ground beef.

    The tartelettes look really pretty! I have some rhubarb outside I need to pick, though there is still a bag of frozen rhubarb from a year or two ago.

  21. Hee hee hee. You said RHUBARB! One of these days I might post the meaning of my blog name. I'm just afraid that if I do so, it will pretty much confirm to everyone that I am certifiably insane.

    Although summer is my favorite season, the bugs are really a drawback. You can't take your horse for a walk in the woods without breathing insects. But remember the spiders eat a lot of the insects that drive us nuts. Come on, didn't you read "Charlott's Web" as a kid?

    (I would worry less about that spider on me and more about the spider getting into your dessert.)

    I always liked Roseanne. I remember whe it made its debut on TV that I found it a refreshing and realistic change from the whole Cosby/Family Ties/Growing Pains perfect-middle-class-white-picket-fence family sitcoms.

    I prefer tacos to burritos. Burritos are a little too big and heavy.

  23. ewwwwwww! I hate bugs! A couple of weeks ago, I found a spider in the tub and I squished it with the shampoo bottle and it looked dead. I turned away and then came back. It was gone! The next day he was there again! I squished him again and I got spider juice on the bottle so I totally thought he was dead. Heck no. I came back and he was gone! Maybe there is a spider heaven! That's what I tell myself anyways.

    Supposedly we eat 8 spiders annually while we sleep. It might be time to duct tape our mouths when he go to bed.

    I'm really not afraid of spiders at all- but my husband is. It's pretty hilarious. He calls me in to the bathroom to dispose of the creepy crawlers. He watches nervously while I do the cup/piece of paper trick and send it outside (I am a firm believer that killing spiders is way bad kharma).
    Having said that- your spidey visitor is kind of mean looking.

    I love roseanne. Isn't is strange how in all those years, DJ like NEVER ages?

  31. That spider is super scary! But the tart looks delicious. I've never tried rhubarb before. I always see it paired with strawberry though. Does it taste similar or what? I need a description of what a rhubarb tastes like before I'm willing to take a chance. Because in its raw form it does not look like something I would like. LOL!

  32. Too funny. I actually had a really scary spider episode the other day. Mine was also black and BIG but it looked a little different. Well, anyway, I was on the computer and out of the corner of my eye I saw something moving. It was crawling very close to my laptop. I jumped up in a panic and it knew I spotted it. It began to furiously run around in spastic circles and I ran to get a wet paper towel (the best way to kill a spider, trust me) and it scurried right into one of the plug holes IN MY COMPUTER!!!!!
    I had to literally try to tweeze it out, although I was scared shit to even get that close. Long story short, it came running out and extended its web and landed on the floor. Thank God! I got it....

    Nice taretletts by the way. I love strawberry rhubarb pie so this looks intriguing.

  33. I have to agree with you on the bugs topic, for sure. I track the first day of summer based on how many bug bites I have! Eek. I love the mix of strawberries and lemonade; this sounds like a great summer'd definitely do a good job of temporarily warding off the itchiness of the many mosquito bites :D. I'm interested in trying rhubarb, I've never baked with it!

  43. Ughh! I hate hate hate when spiders live after you swat them. I'm afraid of spiders and would probably not be able to sit in a room if a spider were to escape after an initial attempt to kill it.

    I'm not a big burrito(s?) fan, but I do like the tartlette.
