Cherry muffins topped with a pecan-oat streusel.

Bada Bing Muffins with Ginger-Oat Streusel

Ingredients:
1 1/2 tablespoons unsalted butter, chilled, cut into small pieces
1/2 cup old fashioned oats
1/3 cup finely chopped pecans, toasted, divided use
1/4 cup firmly packed light brown sugar
3 tablespoons finely chopped crystallized ginger

3/4 cup all purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 cup granulated sugar
2 tablespoons unsalted butter, melted
3/4 cup buttermilk
1 large egg
1 teaspoon vanilla extract
1 cup stemmed, pitted, halved, bing cherries

Directions:
Preheat oven to 350 degrees F. Line 9 muffin cups with papers.

To make the streusel, in a medium sized bowl, combine 1 1/2 tablespoons butter, oats, half of the pecans, brown sugar and crystallized ginger, and rub together with your fingertips, until mealy.

In a medium sized mixing bowl, sift together flour, baking powder, baking soda, cinnamon and salt; stir in additional pecans and granulated sugar until combined.
In a large mixing bowl, whisk together 2 tablespoons melted butter, buttermilk, egg and vanilla, until well combined. Add dry ingredients to liquid ingredients, and stir until just combined. Coat cherries with about a couple of teaspoons of flour, then stir into batter.

Divide batter into 9 lined muffin cups. Top each muffin cup evenly with streusel. Bake at 350 degrees for 20-23 minutes, or until a toothpick inserted into muffins cups out with moist crumbs attached. Cool for 10 minutes, remove from pan, and cool completely on a wire rack.

Yield: 9 muffins

  4. I think we all adapt recipes in one form or another...even our own creations start somewhere. It's great that you kept them all written and the blog is another good way of keeping them down. I think you could produce your own cook book with the amount of recipes you have...

  5. OMGosh Emiline!! These look amazing! Seriously, muffins are my all time favorite and with berries they are the best. But an oat streudel and I'm in HEAVEN! YUM!

  10. Hi Emiline,
It seems that the summer months are going to be less time in the kitchen for a lot of us!

I love that you create your own recipes and that you started at such a young age. Makes me wish I would have started that young!

Your muffins look beautiful, I'll look forward to your next creations! Good look with all the tourists!

  15. Happened across your blog from a comment on Gild the Voodoolily. I am inspired by your notes and handwritten recipes...I have much the same pile of stuff from the past 20 + years.
I shall start assembling it into something I can actually use.

  16. These muffins look and sound divine!

  17. There can never be too many muffin recipes - especially ones with streusel topping!

  18. Those look great! It is good to get out of your comfort zone every once and a while - but don't totally forget about the sweet stuff - I won't know where to get my fix!

  19. Those notebooks scream Cookbook deal to me! If Zucchini and Chocolate can do it, so can you.One day when I get my s*** together I'm going to invite you to Chi Town for a visit.

  20. Now you've made me feel guilty, posting my cook book recipes. I already always hear a journalism professor from college, saying "Even though I'm photocopying these things for you, my students, and not for personal gain, I still get permission." Guilty.

  21. yum yum yum. Love the combo of ingredients you used here. Sometimes I feel the same way about my baking; I get so tired of baking the same old same old. But after I've put in 8 hours on the job and I have a hankering for something sweet, I usually take the easy way out ;).

Yes, do post more muffin entries! I'm always looking for more muffin recipes!

P.S. Your notebooks with recipes are so cool! I didn't get into cooking until college; I just have a bunch of notebooks filled with cheesy, overyly-emo poetry from the high school days :D.

  22. king about revisiting some of my old stuff too. Get good photos, that kind of stuff.

Mine aren't hand-written, but I do have a cookbook started (and it's not all stuff from my blog!). :)

  23. WOW you have a lot of recipes! love the gorgeous muffins!

  24. Emiline, sorry I missed a few of your posts but likewise have been very busy as well and guess what I did the same thing you did (sort of) I tidied up my blog and gave it a new look. Your muffins look delicious. I only made muffins once.
I have an award for you as you always make my day when I READ your posts.

  25. I think the muffins look great. That's bodybuilding food right there. As soon as I saw the titled I was like "Bing? Oh cherries, nice" You said you were cleaning out the fridge though... who has cherries just chillen around? :)

Oh and outside your zone? How about like a souffle or chessecake? Kinda typical, but still kinda dangerous

    ReplyDelete
  26. EVERYTHING that you bake is amazing, Emiline, no matter if you're "challenging yourself" or not - love these muffins, especially (and the title is too fun, haha).

  27. Ginger-Oat Streusel is very very very smart. Inspired! I'm really liking this, very much. You need to get those notes together and publish them with doodles, and everything! Kinda like Roz Chaz does. It'd be a best seller!

i'm impressed with the handwritten recipes! very cool :)

  31. Thank you for sharing your notebooks. I have five or six 3-ringed binders with tried and true recipes of my own, too.

This is your blog and you can add, delete, subtract, divide whatever it is that makes you happy. And as far as your comfort zone goes, I admire you for wanting to go above and beyond and challenge yourself. You go, girl ;)

  32. These look great - thanks for the recipe Em.

  33. All I can say is...
    Very impressive.

How do you figure out measurements? It's so hard for me in baking. That's why I usually refer to other recipes to give me a starting point.

  34. It's wonderful that you kept all your recipes from age 17, and that you started writing them at such a young age.

I wish I had started writing at age 17, instead of 40-blah something. That's why I try to encourage my granddaughter with her writing. Still, better late than never I always say.

  35. These muffins were SO good. I'm trying to decide if I should say best breakfast muffin or not. They're perfectly sweet and taste nutritious enough for breakfast. And I'm with Sophie, always on the lookout for good muffin recipes, and this one is my biggest winner in a long time!! SUPER!

I hate to be one of those dumb people who love a recipe and then tell all the changes they made, but mine were all only because of time/what I had on hand. I changed: butter-oil in muffin, buttermilk- milk/sour cream/lemon juice, used canned cherries and had no ginger and nuts but it was still SOOOO good! Thanks so much. I'll be making these often for sure.

  36. i only have to read the word "streusel" and my mouse pointer automatically moves to the tag button. streusel rules. muffins rule. heck, you rule. i order you to never give up on this dream.

    ReplyDelete
  37. You *know* I'm obsessed with muffins. Love them! And these look great. I loooove cherries.

    ReplyDelete
  38. OMG! You made up those recipes? I'm so impressed. Coming up with my own baking recipes is SCARY. I think I'm successful only about 50% of the time with them too (depending on how you define success). My most successful ones are things I've adapted anyway. Your homemade muffins are lovely.

My MO on recipes on blogs is if I'm using a recipe I found online, I link. If I'm using something from a cookbook, particularly an old one that might be hard to get, I will put the recipe in my blog since it makes things less difficult for the reader to have access to the recipe. Cookbook author gets full credit.

  39. Ooh yum!! I bet these are fabulous. Love the dish in the photo as well!

  40. Don't stress about "challenging yourself". It's good sometimes, but hey there's nothing wrong about simpler recipes. It's when you repeat things that you trully learn, at least that's what I think. Anyway, well done on the cleaning and the great-looking muffins!

  41. I just nominated you for an award on my blog :D

  42. Wow. I'm really behind on comments. I'm sorry. Why do I wait to reply to comments when I'm getting ready to go to bed? All I want to do is sleep. :(

Lisa- I'm glad you liked them! I love it when people actually make my recipes. I thought they were pretty good. I just wasn't in the mood for a muffin.

  43. The muffins look fabulous, perfect for my lone cup of coffee this morning. I also like your note book! I am visiting my family for a few weeks and have packed mine to spend some lazy afternoons, organizing and rewriting. Thanks for sharing.....

  45. I love that plate! Your muffins look beautiful - I'll have to try some gluten free.

    ReplyDelete
  46. One of the reasons that you're my foodie blogger inspiration is that you create all the recipes yourself! I haven't actually done much of that, I don't know if it's because I'm not really sure how or I don't want to epic fail, but I find those who do to be simply amazing!

    ReplyDelete
  47. major kudos to you! anything with ginger in it is worthing talking about! geez, i used to have a binder like that too, i wonder what ever happened to it.

  48. Sorry to come again to say the same thing, but I made these again, to use up the other half of the jar of cherries, and now I CAN say that they are one of my favorites, for sure. I'm linking to this recipe in my list of foods I love on my blog. Thanks again for the terrific recipe!
