


Bada Bing Muffins with Ginger-Oat Streusel
Ingredients:
1 1/2 tablespoons unsalted butter, chilled, cut into small pieces
1/2 cup old fashioned oats
1/3 cup finely chopped pecans, toasted, divided use
1/4 cup firmly packed light brown sugar
3 tablespoons finely chopped crystallized ginger
3/4 cup all purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 cup granulated sugar
2 tablespoons unsalted butter, melted
3/4 cup buttermilk
1 large egg
1 teaspoon vanilla extract
1 cup stemmed, pitted, halved, bing cherries
Directions:
Preheat oven to 350 degrees F. Line 9 muffin cups with papers.
To make the streusel, in a medium sized bowl, combine 1 1/2 tablespoons butter, oats, half of the pecans, brown sugar and crystallized ginger, and rub together with your fingertips, until mealy.
In a medium sized mixing bowl, sift together flour, baking powder, baking soda, cinnamon and salt; stir in additional pecans and granulated sugar until combined.
In a large mixing bowl, whisk together 2 tablespoons melted butter, buttermilk, egg and vanilla, until well combined. Add dry ingredients to liquid ingredients, and stir until just combined. Coat cherries with about a couple of teaspoons of flour, then stir into batter.
Divide batter into 9 lined muffin cups. Top each muffin cup evenly with streusel. Bake at 350 degrees for 20-23 minutes, or until a toothpick inserted into muffins cups out with moist crumbs attached. Cool for 10 minutes, remove from pan, and cool completely on a wire rack.
Yield: 9 muffins

I think we all adapt recipes in one form or another...even our own creations start somewhere. It's great that you kept them all written and the blog is another good way of keeping them down. I think you could produce your own cook book with the amount of recipes you have...

ReplyDeletethese look good an i love the plate with the cherries! i also love your pb-banana cupcakes, i make fluffernutter cupcakes that are really similar... they are my husband's absolute favorite. i think it's pretty much a perfect flavor combination for dessert! the pics are, as always, beautiful, too!

How do you figure out measurements? It's so hard for me in baking. That's why I usually refer to other recipes to give me a starting point.

ReplyDeleteI wish I had started writing at age 17, instead of 40-blah something. That's why I try to encourage my granddaughter with her writing. Still, better late than never I always say.
These muffins were SO good. I'm trying to decide if I should say best breakfast muffin or not. They're perfectly sweet and taste nutritious enough for breakfast. And I'm with Sophie, always on the lookout for good muffin recipes, and this one is my biggest winner in a long time!! SUPER!
ReplyDeleteI hate to be one of those dumb people who love a recipe and then tell all the changes they made, but mine were all only because of time/what I had on hand. I changed: butter-oil in muffin, buttermilk- milk/sour cream/lemon juice, used canned cherries and had no ginger and nuts but it was still SOOOO good! Thanks so much. I'll be making these often for sure.
i only have to read the word "streusel" and my mouse pointer automatically moves to the tag button. streusel rules. muffins rule. heck, you rule. i order you to never give up on this dream.

ReplyDeleteOMG! You made up those recipes? I'm so impressed. Coming up with my own baking recipes is SCARY. I think I'm successful only about 50% of the time with them too (depending on how you define success). My most successful ones are things I've adapted anyway. Your homemade muffins are lovely.

If I'm using something from a cookbook, particularly an old one that might be hard to get, I will put the recipe in my blog since it makes things less difficult for the reader to have access to the recipe. Cookbook author gets full credit.
