
I hope everyone had a good 4th! I had a good birthday - I can't say that anything exciting happened though. The family got together and I opened up some presents....we had a little pizza...chewed the fat...good times. Then we went over to a neighbor's house and shot off fireworks. There were other people there, but I didn't know any of them.
We ended up taking the cake over to their house, along with some homemade vanilla ice cream that my mom made. My mom displayed the cake and stuck some candles in it, then left to do other things. It was her intention that we were going to sing happy birthday to me, at the end of the night, and have cake and ice cream.
Halfway through the night, I was alerted that somebody had gotten into the cake and taken a huge slice. I went to check, and sure enough, somebody had.
So I took a picture.

If you saw a birthday cake with candles stuck in it, untouched, would you slice it without asking? Hmmm.
I couldn't help laugh a bit - it's really kind of funny. And hey, now you guys can see what the interior of the cake looks like!
A few of us kept our eyes on the cake the rest of the night, and discovered who the culprit was, when they went back for SECONDS. Yes, seconds.
So later that night, everyone sang happy birthday to me, with a 1/4 of the cake missing. The culprit had disappeared by then. Too bad they missed out on the ice cream - it was really good.

Sugar Plum has a floating trip coming up next week and needs to look good in a swimming suit, so that's why I bring you a healthy muffin recipe. When I make healthy recipes, I like to have lots of flavors and elements going on, because it will distract you from the fact that they're low fat. So there are quite a few ingredients, but this was stuff I already had at home. And these only have 2 tablespoons of butter in them! Wow! I'm amazing. And they're good for your digestive system - eat one of these instead of Activia.

1 cup all purpose flour
3/4 cup whole wheat flour
1 3/4 teaspoons baking powder
1 1/4 teaspoons baking soda
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon freshly ground nutmeg
1/2 cup old fashioned oats, plus an additional 3 tablespoons, divided use
2 tablespoons finely chopped crystallized ginger
1 large egg
2 tablespoons honey
2 tablespoons molasses
1/2 cup chunky applesauce
2 tablespoons unsalted butter, melted
1 cup reduced fat milk
3/4 cup fiber cereal (such as Fiber One)
1/2 cup jumbo raisins, soaked in hot water
Preheat oven to 375 degrees F. Spray 10 Texas-sized muffin cups with cooking spray.
In a medium sized mixing bowl, sift together all purpose flour, whole wheat flour, baking powder, baking soda, salt, cinnamon, allspice and nutmeg; stir in 1/2 cup oats and ginger until well combined.
In a large mixing bowl, whisk together egg, honey, molasses, applesauce, butter and milk, until well combined.
Add dry ingredients to wet ingredients, and stir until just combined. Stir in cereal and raisins until just combined. Divide batter equally into prepared muffin cups, filling each cup 3/4 full. Sprinkle the additional 3 tablespoons oats, evenly, over the tops of muffin cups.
Bake at 375 degrees F, for 22-25 minutes, or until a toothpick inserted into muffins comes out with moist crumbs attached. Cool for 10 minutes, before transferring each muffin to a wire rack to cool.
Yield: 10 Texas-sized muffins
