My absolute favorite banana bread made with peanut butter and chocolate chips.




Peanut Butter-Chocolate Chip Banana Bread
Ingredients:
Preheat oven to 350 degrees F. Coat a 9-inch loaf pan with cooking spray or butter.
In a medium sized mixing bowl, sift together flour, baking powder, baking soda and salt.
In a large mixing bowl, using a mixer on medium speed, beat together banana, peanut butter, 2 tablespoons butter, granulated sugar and brown sugar until creamy, about 2 minutes; beat in eggs and vanilla extract until combined. Reduce mixer speed to low and beat in milk and flour mixture until just combined; stir in chocolate chips
Pour batter into prepared pan; bake for 50 minutes. Remove pan from oven, melt additional tablespoon butter, brush evenly over the top, and top with turbinado sugar. Continue to bake an additional 5 minutes or until golden brown.
Cool for 20 minutes before running a knife around outside edges, removing, and transferring to a wire rack to cool an additional 30 minutes before slicing.

- 1/2 cup milk
- 3/4 cup semi-sweet or dark chocolate chips
- 1 1/2 teaspoons turbinado sugar, optional

I absolutely LOVE banana bread but have never used peanut butter in it. I will take your word on this Emily and will try it. I have all the ingredients on hand (three nice rotten bananas!). I'll let you know how it turns out. Thanks!

ReplyDeleteWhen we were much younger we used to eat peanut butter off a spoon like ice cream, so I have to admit I don't LOVE peanut butter, I have it from time to time if there's nothing else, but something drew me to this recipe, and when I have these gut feelings I'm usually right, I think I'm gonna give this a try.
ReplyDeleteYummy! I used to mash peanut butter and banana together as an after school snack. My current fav it to mix a big spoonful into a 100 calorie bag of just popped popcorn. I know that kinda defeats the purpose, but come on, it's PEANUT BUTTER!

Yummo! I am interested in trying this, because one thing I don't like about many banana bread recipes is that the banana taste is overwhelming - whereas if it was balanced out by other flavours like peanut butter and chocolate, there may be perfect harmony.

ReplyDeleteI've had this recipe bookmarked for a few weeks now, and I finally got around to making it tonight. I just finished my first slice and it's lovely! It tasted as awesome as I thought it would after seeing your photos. I used 4 bananas instead of two, and white whole wheat flour instead of ap. I recommend it! I was surprised how gentle the pb flavor was...which means my next piece will get a nice slather of it on top. Thanks for the great post!

ReplyDeletei made it this weekend...doubled the recipe...turned out beautifully. i used laura scudder's natural peanut butter, which made it even more delicious. i think next time i will add ONE more banana bc i think the peanut butter overwhelmed the banana flavor just a tad. thanks again - delish!
ReplyDeleteI'm really excited to try this (man, and I thought I was the only person who liked this combo! I used to get it made as a milkshake at a local milkshake shop) but I've only got one banana. I may add in some applesauce or something for extra moisture, and if so, I'll report back on how it is. I usually make my banana bread plain with a healthy dose of cinnamon in it but it may be time for a variation!

ReplyDeleteJust tried this recipe yesterday, and boy is it yummy. I will note that while the center of the loaf came out deliciously moist, the slices from the end bits are a little on the side of dry.
ReplyDeleteMaybe one of those silicon baking dishes would have been the solution? I used a conventional nonstick metal loaf pan for mine.
I think next time I may 'up' the PB content and see if that changes anything, because I will definitely be sticking with this recipe in the future. THANKS!
