Peanut Butter Twix Ice Cream

Peanut Butter Twix Ice Cream 

6 large egg yolks
4 cups heavy whipping cream
1 1/2 cups milk
1 1/4 cups firmly packed light brown sugar
1 cup creamy peanut butter
1 1/2 teaspoons vanilla extract
5 packages Peanut Butter Twix

Whisk the egg yolks in a large mixing bowl until well combined.

Heat the cream, milk, brown sugar and peanut butter, in a large saucepan, over medium heat, whisking frequently, until mixture is hot and starts to bubble.

Gradually whisk half of hot cream into egg yolks until well combined. Return egg-cream mixture back into saucepan and continue to cook, whisking constantly, until mixture thickens, and coats the back of a spoon (custard should be 170-175 degrees F).

Strain the custard into a large mixing bowl; whisk in vanilla. Chill bowl, covered, in the refrigerator until cold, about 3 hours, or refrigerate overnight.

Pour ice cream base into ice cream maker, and process according to manufacturer's direction. In the last 5 minutes of processing, coarsely chop Twix, add to ice cream, and allow to finish churning.
Scrape ice cream into a freezer-proof container, and freeze for 2 hours, or until ready to serve.

Makes 8-10 servings

  4. I love that you filled the ice cream with stuff. I hate ice creams that have a couple pieces of stuff in the whole quart. It's like what the heck?
    Like Ben & Jerry's used to put a ton of stuff in their ice creams, now, not so much.

  5. OK, you are gonna kill me, but I have never eaten Twix in my life. Maybe it was because candy was forbidden in my house and until today buying a bar of candy at the store seems like sin. lol Oh well, I will have to try it sometime to experiment for myself the best candy bar ever created :-p

  8. Twix are a beautiful thing. I always freeze mine before eating them to add to the crunchiness. Definitely going to have to try this ice cream because it would be like dipping frozen twix in vanilla ice cream. Could life get any better?

  15. My husband has been on an ice cream kick lately. I will have to show him this recipe. I'm sure he'll love it. The only problem is when he makes ice cream I end up eating way more of it than planned!!!! Not much beats homemade ice cream.

    Though, I am pretty much sick of ice cream because I grew up eating it pretty much every day(my family owns a restaurant/ice cream shop)

    But, I have never had Twix ice cream. This sounds great!

  23. Hm, I remember loving peanut butter Twix but I thought they were with the same wafer cookie as the original, so it was like Tagalong girl scout cookies. They must have changed it on me!

    I LOVE Twix. I think it's that buttery-tasting cookie that takes it over the edge. I can remember them being introduced. I saw commercials for them and wanted to badly to try one. My grandmother, completely independent of this knowledge, was also intrigued and decided to buy me one and see what I thought of it. They have been my favorite cheap candy ever since.

    I'm not as fond of the PB one though. I don't htink the chocolate cookie is chocolatey enough.

    I would totally eat pb ice cream laced with regular Twix though. Would you object to my making it this way?

OK, this might be overkill, but I just made extra crispy reeses pieces cookies (basically thin chocolate chip cookies, but sub reeses pieces for the chips) and spread a little whipped buttercream frosting on top. definitely satisfied my crazy sweet tooth and my subconscious desire for cavities.

  29. PB Twix has always been my favorite- but back in the 80s/early 90s the cookie was the same vanilla shortbread as is in the caramel Twix. I like the new one with the chocolate cookie, but I really think I prefer the vanilla one. However, I'm mostly glad they've started selling the PB one again, regardless of the cookie flavor.

  44. I'm a fan of the Twix too! I still remember when it was called Raider. Was it called Raider in the US too, or just in Europe? Anyway I don't remember having ever a pb twix, but there's something I would love! I also love candy in my ice cream!
