Mini Blueberry-Yogurt Muffins

6 tablespoons unsalted butter
2 cups all-purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cup firmly packed brown sugar
2 large eggs
1 cup Oikos Plain Greek Yogurt
1 1/2 teaspoons vanilla extract
1 1/4 cups blueberries
2 tablespoons turbinado sugar

Preheat oven to 375 degrees F. Place mini muffin liners in mini muffin tin.

Melt butter in a small saucepan over medium heat; cook for 3-4 minutes, whisking frequently, until foamed and golden brown. Remove pan from heat to cool.

In a medium mixing bowl, sift together flour, baking powder, baking soda and salt; whisk in brown sugar until combined.
In a large mixing bowl, whisk together eggs, yogurt, vanilla and butter until well combined. Stir flour mixture into wet ingredients until just combined; stir in blueberries.

Divide batter into muffin cups and sprinkle with turbinado sugar. Bake for 20-25 minutes or until light golden brown and a toothpick inserted into muffins comes out with moist crumbs attached. Cool 5 minutes before transferring muffins to wire racks to cool.

Makes 4 to 4 1/2 dozen mini muffins

  15. I LOVE Greek Yogurt! I just discovered this recently- and I can't eat anything else either.
Since you can't find Oikos at your local store, the FAGE brand is pretty amazing as well. Also, if you have a Trader Joe's nearby- their Greek yogurt is outstanding.

    Thanks for the giveaway!

Those are cute little muffins! Trader Joe's also has some delish Greek yogurt, but I've never had this Oikos that you speak of.

Except, I'm thinking about something that doesn't require us to jump on a plane...maybe a co-hosted breakfast blogging event?! Yeah, baby! (Breakfast is another term that should be in the same sentence as "baby!" lol).

Lucky girl! I love their yogurt, especially the greek one.

  35. We probably don't have it here in Mississippi either. If we do it's way up in Madison at Fresh Foods and that's not in my shopping area.

Glad you had fun, the muffins look really good. I wish my hubby liked cooked blueberry. He will only eat a few fresh. I keep telling him he doesn't know what he's missing.

    ...this looks great.

    Congrats on the great photos.

I love working with Greek yogurt, especially Oikos. It has such a beautiful texture and flavor.

And those muffins are calling my name. :)

  42. Greek yogurt muffins, yay! If you really get addicted to it and can't find it, you can curtail your cravings by taking regular yogurt and let it strain through a cheesecloth or coffee filter overnight in the fridge and it makes something similar to Greek yogurt. And its probably cheaper! I love cheap! Which is why I want some coupons!
