Strawberry Cheesecake Ice Cream

Strawberry Cheesecake Ice Cream

3 cups heavy whipping cream
1 cup granulated sugar
2 tablespoons cornstarch
1 cup milk (2%)
1 vanilla bean, split and scraped

4 ounces cream cheese, softened
1/4 cup confectioners' sugar
2/3 cup graham cracker crumbs

1 1/2 cups thinly sliced strawberries
1/3 cup strawberry preserves

Bring cream, granulated sugar and corn starch, to a boil, in a large saucepan, over medium heat, whisking frequently; remove pan from heat and whisk in milk, vanilla bean seeds and vanilla bean pod. Infuse for ten minutes, before removing vanilla bean pod and placing cream in a large mixing bowl. Cover and chill in the refrigerator until cold, about 3-4 hours, but preferably overnight.

In a medium mixing bowl, using a mixer on medium speed, beat together cream cheese and powdered sugar until combined, about 1 minute; beat in graham cracker crumbs until combined. Set aside.

Bring strawberries and preserves to a boil, in a small saucepan over medium heat, stirring frequently; remove from heat and chill in the refrigerator or freezer until cold.

Pour ice cream base into ice cream maker, and process according to manufacturer's direction. In the last 5 minutes of processing, add graham cracker-cream cheese chunks (breaking up the mixture using your fingers) and strawberry mixture to ice cream, and allow to finish churning.
Scrape ice cream into a freezer-proof container, and freeze for 2 hours, or until ready to serve.

Makes 8-10 servings

I can't believe this - we have a tub of storebought strawberry cheesecake ice cream in our freezer that I was trying to convince my mother was 'sugar free' only yesterday (she's doing a 'no sugar' week, and insists we suffer with her). I'm really not a very convincing liar, haha. But I don't think she could resist this one!

  14. Superb! When I was little, I loved digging out all the strawberries from strawberry ice cream, it's so tasty. This looks like it'd be more fun to eat/make than cheesecake, cheesecake takes forever! :P

  19. I used to seriously dislike cheesecake as a kid. I didn't like anything sour in my desserts. No cheesecake. No frozen yogurt (and I still don't eat frozen yogurt - yuck!). Biting into cheesecake was always so disappointing. You see this creamy looking dessert in front of you and then BANG you bite in and get that tang.

    It took years for me to acquire a taste. I think it came from deciding I liked cream cheese frosting. I moved onto cheesecake from there.

    I do loves me my graham cracker pie crusts. Yummy.

    This ice cream has it all over a DQ Cheesequake Blizzard. I love your use of REAL STRAWBERRIES.

  24. Well, I can't understand you, 'cause I love cheesecake! An ice cream of this delighful dessert sounds amazing!
    By the way, finally I tried some recipe yours. I bake cheddar scones and peanut butter-banana oatmeal bars. The scones are great! But I think I made something wrong in the bars, 'cause doesn't look so good like yours. I just can't wait to try other recipes from Sugar Plum.

  30. shhhh don't tell anyone, but cheesecake doesn't make me go crazy either...
    I also prefer brownies and tarts to cheesecake. I don't know, something about the finished result of cheesecake doesn't completely capture me. It's funny because I do make it quite often because everyone at home loves it. But if I were to bake just for myself, you'd see a never-ending parade of brownies and cakes! Yummy!
    this is a great idea, to put chunks in ice cream. Once again, very creative :)

  31. Sounds divine. I think most cheesecake icecreams I've made have had cream cheese in the icecream base... but the chunks are VERY appealing.

    Of course, I'm a big fan of cheesecake, so I'd be happy to take your slice off your hands anytime!
