White Chocolate-Almond Blueberry Blondies

2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup finely chopped sliced almonds, toasted
10 tablespoons unsalted butter, softened
1 1/4 cups granulated sugar
2 teaspoons finely grated lemon zest
2 tablespoons lemon juice
1 teaspoon almond extract
1 large egg
4 ounces white chocolate, coarsely chopped
1 1/4 cups blueberries

Preheat oven to 350 degrees F. Line a 13x9-inch baking dish with foil; coat foil with cooking spray.

In a medium mixing bowl, sift together flour, baking soda and salt; whisk in almonds. In a large mixing bowl, using a mixer on medium speed, beat together butter and sugar until creamy - about 1 minute; beat in lemon zest and juice, almond extract and egg until combined - about 1 minute. Reduce mixer speed to low and beat in flour mixture until combined; stir in white chocolate and blueberries until combined.

Spread batter into dish and bake 30 minutes or until golden brown. Cool completely before lifting foil out of pan and slicing into bars.

Makes 24 bars

  1. So funny! I called my mom asking what detergent to buy the first time I moved in alone too--there weren't any parents on facebook at the time, but now she would probably be too busy commenting on status updates to give me an answer!

Your blondies look SO good--I've been thinking about a recipe for lemon blondies with candied lemon rinds and some kind of curd swirl...white chocolate would be a good add-in!

  2. Those blueberry bars look wonderful! Someone should write a book answering all those questions you have! Everyone starting out on their own needs to know the best plastic wrap! Instead we try them all, disappointed, until one day, you pick up some Stretch-Tite and Costco and never look back!

  3. You will soon find your feet!! I think you are doing ok, if you can still muster up the time to bake these delightful blondies!!

  4. This looks fantastic! I'm so excited about all the fruits coming up! Gotta admit, I just buy the cheapest detergent, but I'm sure that's not the best idea haha. Voted for you today :).

  5. These look delicious - bright, fresh and perfect for spring! Congratulations on your new apartment!

  6. Holy cow on the White Chocolate-Almond Blueberry Blondies. I am a huge white chocolate fan so these babies are calling my name!! When I first moved out on my own I just bought the cheapest of everything!!

  7. 3 Things:
    1) Don't buy plastic wrap at all - is it just me, or is it always hard to cut and never sticks to anything but itself? Press n Seal all the way, baby (I'm a convert.)
    2) I love my salad spinner - and I actually used to think, "whoever needs one of those is totally lame." (that's before I knew what they were for!)
    3) And the blondies look delish, as usual :)

  8. holy mama, these are just what i need. i just got the very berry coffee cake from starbucks (only bc it was free pastry day) and am feeling unsatisfied. your picture alone has satisfied me, so thank you. i loooove blueberries and i love blondies. what a combo!! i seriously need to make these. and i use All too...except the last detergent i bought was target brand bc it was on sale. i swear it's not getting my stains out!!

  9. Don't buy 2-ply toilet paper. According to my ex-landlady, whose father was a plumber, you run a bigger risk of clogging the toilet. A roll of Scott tissue lasts forver too. Yes, you do use more at one time than you would one of the soft brands, but the roll still lasts longer than any other brand on the market.

I like Arm & Hammer and Seventh Generation laundry detergents 'cause they're greener and all that and I'm a politically correct kinda gal. Also like Method or Seventh Generation dish soap.

I'd also like some of those blondies please!

I will vote for you as soon as I post this.

BTW, my mother watched URS and read my blog and said you looked like a "young Goldie Hawn". I wonder why she said young Goldie Hawn rather than just saying you look like Kate Hudson.

  10. These sound great... and look so mouthwatering! Look at those vibrant colors.

This is a perfect spring time treat. or any time of the year. :)

  11. How exciting to be on your own and to even be excited by what detergent to buy. I still excited about decorating and finding new kitchen gadgets, etc. When you reach my age you buy what is on sale and get the 3-ply:D

  12. I think blondies get overlooked and they are on my list of favorite things so thanks for the recipe! I took a cupcake baking class on Sunday and learned so many baking tips and tricks that I can't wait to test them all out!

  13. My reader says you posted this a 3 a.m.! Go to bed, Girl.
Or make more of these blondies, and send 'em on over west here! ;)
Your posts always make me laugh.
Palmolive Lavender is my favorite dish soap. Just a little fyi help there for ya. ;)

  14. Oh, man, those look super nummy! I remember buying everything my parents did when I moved out on my own. But when my husband and I moved in together, we started having to compromise on the stuff we bought... he liked All, I liked Tide, things like that. Eventually, though... you'll start figuring out the brands you like. Don't be afraid to experiment! :)

  15. I'd love me some blondies! I think it goes along with the summer theme of lighter, brighter eats, too.

  16. You've truly become a grown up when you have to chose what brand of laundry detergent to use! :) These bars sounds amazing...mmmmm.

  17. My little sister did a science fair project on which detergent works best...and she found out that Wisk was awesome. I've been using it ever since.

In regards to the food, I can't wait until I move out of my college dorm so I can make everything on your website! Everything looks so good!

  18. mMMmmmm im definitely going to have to make these!! I made one of youre other blondie recipes and they were SO GOOD!

I can attest to knowing what you are talking about with which things to buy and whats good or not. I am in the same situation, slowly we'll find our favorites!!

    GOOD luck Love!

  19. Those blondies look so good! I'm kind of regreting using the blueberries I had yesterday on muffins, but well, I enjoyed them, so it's not bad. Next time I have blueberries I will definitely make this :)

  20. The blondies not only look delicious but are so pretty too! I use Tide detergent since when I bought the cheaper ones I find they fade clothes faster......

    ReplyDelete
  21. These are beautiful! :) Oh i miss blondies.

  22. I've tried so many and always go back to Tide.

Never skimp on toilet paper. Another important lesson I learned after moving out on my own. Stick with the good stuff...it's quilted for a reason! :)

  23. Those look fan-freaking-tastic!

I'm a Tide fan, all the way (they make a dye and fragrance free version too).

I usually get the cheap dish soap, but recently bought Dawn because they donate a dollar to animal charities for each bottle bought.

I recently bought hippie toilet paper at Whole Foods - it's like medium-grit sand paper. Not fun.

    Agree on the Triscuits.

Oh, and I vote for you. Again. :)

  24. Wow--these look mouthwateringly delish!! Yum! I am so happy to have found your site! And, I personally like Tide--I have 5 boys and that detergent gets out all of their dirt and stains. It is awesome! I am excited to look thru all your recipes!!

  25. Ok...having lived on my own for nearly 6 years now, (CRAZY. I just realized how long that seems...granted 2 of them were in dorms...but still) I've come to learn a few things:

I always try to get eco-friendly laundry detergent, and the cheapest is usually Method. They smell great too!

Dish Soap - I usually go with natural stuff as well and get whatever is on sale: Method, Dr. Bronners, Seventh Generation, Mrs. Meyers. There ya go. There's a 'healthy' section in Target with all of the good brands like this...

YES. Buy 2 ply. Anything better than this is just silly, but 2 ply is just a much needed amenity. I mean, you don't want to feel like you are in a public restroom at some gross stall, do you?

I am so bad at math, but I have gotten really good at looking at an item's value at the grocery store. There is always a little number on the item's sticker (the one with the barcode, on the shelf) that will tell you how much an item is per unit. It is usually in cents, like 3.8, or whatever. Then you can look at another item on the shelf (say, another bag of frozen peas, but bigger bag for more) and you can look at that price sticker...let's say 3.4. Now you know that even though you are paying more for the larger product, it is REALLY a better deal (but not by much).
Here's an example: I was just at the grocery store yesterday and needed gatorade for the bf. There were the smaller bottles (8 for $5) or the larger bottles, which were $1 each. I didn't know really which was a better deal, so I looked at the price per unit/ounce sticker on the shelf and found out that they were actually the same exact price! I live off of these little stickers when I'm at the grocery store...everyone should. THey are right below the item, on the sticker that says how much the item is. It's usually just to the left of the barcode, in the bottom left corner. It will say 'price per unit' or 'price per ounce' and is often in it's own little yellow box on the sticker. When something goes on sale and there is a sale tag below that sticker, the sale 'price per unit' will be on the sale sticker attached.
Here's a link with an example tag:

And finally, There is an awesome smaller salad spinner at Crate and Barrel, here:
    http://www.crateandbarrel.com/family.aspx?c=768&f=25106&q=salad+spinner&fromLocation=Search&DIMID=400001&SearchPage=1

    it's small and perfect. love!

Sorry that was so long...lol. Hope it helps!

  26. this mom's list:
    1. Wisk (2nd choice: All)
    2. Dawn Hand Renewal (for us dinosaurs who wash by hand)
    3. Scott TP
    4. Fresh veggies (although I do like frozen peas)
    5. Saran Wrap (2nd choice: Sam's Premium)
    6. Break the bank and don't mess with the mini food processor - get the Cuisinart that has the nested mini bowl inside of the big bowl. With all the cooking you do, it's the only way to go.
    7. Voted (and Saveur too)
    8. Short(dis)Order Cook's mom is right - you're a dead ringer for Goldie Hawn on the old Laugh-In show. There's a reason she didn't say Kate Hudson.
    9. The BB Blondies look devine; I'm a sucker for anything blueberry.

  27. I think this is the first blueberry blondie I've seen and I approve :D. I'd eat these for breakfast!

As far as detergent goes, I went with what smelled good haha. I also fall for cheesy commercials and marketing tactics, so I go for the products that have the most convincing ads. Terrible, I know!

    ReplyDelete
  28. Mm, I love the almonds in these! Do you have a Costco by you? So worth joining for household stuff! And the cheese.... :)

    ReplyDelete
  29. Trial and error, you will figure it all out, but that's the fun!
By the way... Gain, original scent haha!
Your blondies look as sound delicious, can't wait to try them!

    ReplyDelete
  30. blueberries don't sneak their way into bars and cookies often enough--these look great!
meanwhile, ALWAYS buy 2-ply toilet paper. 1-ply? you might as well just wipe with your hand. :)

    ReplyDelete
  31. Voted! :D

Those White Chocolate-Almond Blueberry Blondies look delicious. I love blueberries, almonds, and white chocolate. Hmm... perhaps I should make this soon. Very soon.

  32. These look delicious! And the BEST plastic wrap is Stretch Tite. Cook's Illustrated recommended it and I am so happy I tried it. It did take me a few stores before I found it though!

    ReplyDelete
  33. i voted for your tacos--they look delish!

when deciding what detergent to use for washing my baby's clothes, i came across country save: www.countrysave.com. i chose it mainly b/c it is free of enzymes, brighteners, dyes, fragrances and softeners PLUS it's a high efficiency detergent.

this chart is geared toward cloth diaper washing but it's a good way to compare most major brands of detergent. all free + clear gets 3 stars outta 4 ;)

  39. Tide with bleach. I've been using it since I moved out of my house forever ago, and I've never looked back! Oh - and always keep some of these blondies on hand, because they look AMAZING!!

    ReplyDelete
  40. lemon and blueberries in a blondie? fantastic! really. why didn't I think of that?

    ReplyDelete
  41. That's a yummy recipe! And I like the almond extract in there.

I buy Dreft for my laundry and Dawn is truly the very best for dish soap.

I wouldn't DARE have a box of triscuits in the house!

    ReplyDelete
  42. Skimp on EVERYTHING but toilet paper. Always 2 ply. 3 ply is even better.

Live on spaghetti-os and saltines, but NEVER skimp on the TP.

That said, these blondies look amazing and I am so happy I have room in my budget for all of the ingredients! YUM!

    ReplyDelete
  43. Oh yuummmy! looks good! have fun buying new kitchen stuff! if you get Bed Bath and Beyond gift cards, bring lots of those coupons they mail out...they still take the expired ones and you can use multiple coupons at once! I always get coffe k-cups there.

    ReplyDelete
  44. I love this idea, I love chocolate and Blueberries! You will get it, I have sensitive skin too and can't use Tide so I use Gain and I am in love and good to go! It smells delicious!

  49. I'm just catching up. Just have to say that I just love you. I think you're adorable and funny and smart. That's all. I can't stay away long. I'm sorry you didn't win URS. But maybe it's better if you're not in Cooking School. Look how much life you might miss out on. And life looks pretty good where you're at right now. Here's wishing for me good things for you!!!

    ReplyDelete
  50. Yummo! These blondies are delectable, and who can resist blueberries?

    ReplyDelete
  51. I have a really hard time buying toothpaste and toilet paper. I stand in that aisle forever. It's ridiculous. I will say that I've found if I can find a coupon for Quilted Northern I usually buy it- its super soft and lasts much longer than any other brand.
I buy the Walmart brand of dishwasher soap because it's cheaper and works just as well. Don't forget the gel stuff that makes your dishes sparkly- I did and my wine glasses were smudgy for months after.
As for laundry detergent- I usually visit Big Lots or Family Dollar when I have a coupon and then hope they already have it on sale (budget budget budget!!)

    Your blondies look super yummy!!!
