Maple Nut Goodie Cookies for Madeline


I now have a niece!

Baby Madeline has arrived! She was born on Saturday, April 3, at 7:16 AM, and she weighed six pounds nine ounces.



My sister is doing fine, the baby is healthy, and everything went smoothly. I rushed over to the hospital as soon as we got word that she was going to have the baby, and a little while later I got to hold my niece.



She's so cute and tiny. I can't wait to see her more.

Maybe someday when she gets older I can babysit and teach her how to bake cookies.
And maybe something else. What else am I good at? I can jump on a pogo stick, so I can teach that to her too.

I love baking cookies. They're the only thing I've wanted to bake lately.



I found this candy at the store called "Maple Nut Goodies" and decided to use it in a cookie.



Maple Nut Goodies are composed of toffee-peanut clusters covered with maple coating. Sounds strange but they're actually pretty tasty.

I made up a cookie batter with peanut butter, maple syrup, brown sugar, butter and oats, and stirred in chopped up Maple Nut Goodies. These cookies were thick, rich, and crisp. If you like pancakes or waffles covered with peanut butter and syrup, you'd like these.

Maple Nut Goodie Cookies (By Me)

6 tablespoons unsalted butter
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups old fashioned oats
1/2 cup creamy peanut butter
3/4 cup packed brown sugar
1/4 cup pure maple syrup
2 large eggs
1 teaspoon vanilla extract
1 cup coarsely chopped Maple Nut Goodies

Preheat oven to 350 degrees F. Coat cookie sheets with cooking spray.

Melt butter in a small saucepan over medium heat; cook 2-3 minutes, whisking frequently until butter browns and starts to foam. Remove from heat and cool in the refrigerator until butter solidifies.

In a medium sized mixing bowl, sift together flour, baking soda and salt; whisk in oats until combined. In a large mixing bowl, using a mixer on medium speed, beat together browned butter, peanut butter, brown sugar and maple syrup until creamy - about 2 minutes; beat in eggs and vanilla until combined - about 2 minutes. Reduce mixer speed to low and gradually beat in flour mixture until combined; stir in maple nut goodies until combined.

Place heaping tablespoons of dough onto cookie sheets and flatten using palms of hands. Bake 12-13 minutes or until well risen and golden. Cool 1 minute before transferring to wire racks to cool completely.

    Those are some seriously creative cookies. Too bad the baby isn't old enough to eat them yet. Stick one in the freezer for a few years and give it to her when she's old enough and say it was the cookie that commemerated her birth. ;-)
