
W owza look at those cookies!
In my last post I mentioned how hot it is here. Today, it was over a hundred degrees. I'm sure in some places it's much worse though.
I wondered if it was hot enough to pop popcorn in my car, so I did a little experimenting.

I placed a bag of Pop Secret in my car. Secretly, so I didn't get stares from the neighbors. After two hours of sitting in the hot sun, the popcorn didn't pop.
How disappointing. I wanted some sun-popped popcorn to munch on.

I had better luck with an egg. I placed a skillet with an egg in it and left it in the seat of my car for an hour and a half to see if it would cook.

And voila! Breakfast was served! I should have cooked some bacon in the skillet too.

Just kidding - I threw it away. But I picked the egg up and it was the most unusual texture. It was completely solid and very rubbery.
Anyway, in conclusion, it's hot enough here to cook an egg in a skillet in your car.
But not quite hot enough to pop popcorn.
I've been eating a lot of Andy's lately to cool me down. Have you ever had Andy's frozen custard before?

It's the most amazing frozen custard we have here in Springfield, and it's the best I've ever had, I think. It's sooo creamy and delicious. If someone asked me what I'd like for my last meal, I would say, "A giant bucket full of Andy's, please."
"And also some onion rings, please."
"And some biscuits and mustard. Mmm-hmmm."

I've been coming here since I was a kid. My family would pile in the car on a hot summer's night and drive to Andy's for a treat. Everyone usually got concretes or cones with vanilla custard, and we would eat them in the car in the parking lot. My dad always gets the Ozark Turtle Sundae and nothing can really top that.

Now that I've moved to Springfield, and there are two Andy's ten minutes from our house, I've been visiting with Eric pretty frequently.

My favorite: Vanilla Concrete with Chocolate Chip Cookie Dough.
I LOVE COOKIE DOUGH.

I love cookie dough so much, I created a new cookie recipe:
Chocolate Cookie Dough Candy-Chocolate Chunk Cookies
Because having the cookie alone was not enough. I added chocolate cookie dough candy to the batter, chocolate chunks, and toasted walnuts. I wish I could tell you how good these cookies are, but you'll just have to try them yourself.

They're all crinkly and bumpy and have lots of character. I adore cookies with character.

Chocolate Cookie Dough Candy-Chocolate Chunk Cookies (By Me)
Printable Recipe
1/2 cup unsalted butter
2 1/4 cups all purpose flour
3/4 teaspoon baking soda
1/2 teaspoon sea salt
1/4 cup oil
1 cup packed brown sugar
1/2 cup granulated sugar
2 large eggs
1 1/2 teaspoons vanilla extract
3/4 cup finely chopped walnuts, toasted
1 cup chocolate chunks
2 (4 ounce) packages chocolate covered cookie dough bites
Melt butter in a small saucepan over medium heat; cook for 2-3 minutes, whisking frequently, until butter browns and starts to foam. Pour butter into a small bowl and freeze until solid.
In a medium mixing bowl, sift together flour and baking soda; whisk in sea salt. In a large mixing bowl, using a mixer on high speed, beat oil, brown sugar, granulated sugar, eggs and vanilla for 2 minutes; beat in browned butter until combined - about 1 minute. Reduce mixer speed to low and beat in dry ingredients until combined - about 1 minute. Stir in walnuts, chocolate chunks, and cookie dough candy until combined.
Chill cookie dough in the freezer for 45 minutes or until well chilled.
Preheat oven to 375 degrees F. Coat cookie sheets with cooking spray.
Divide cookie dough and roll into balls (about 3 tablespoons per ball). Place balls on cookie sheets and bake 10-12 minutes or until light golden brown on top. Transfer cookies to wire racks to cool.
Makes 2 dozen cookies

Oh yeah, who doesn't adore cookies? (or cookie dough!) These look FANTASTIC. I bet I could eat a lot of these.

ReplyDeleteYum, I love chocolate chip cookie dough! I recently made dark chocolate ice cream with chocolate chip cookie dough in it. Oh my goodness, so great! I have never had frozen custard at an ice cream stand, but I make it in my ice cream maker.

ReplyDeleteIs it strange that I grew up in California and have no idea what this 'concrete' is? To me, concrete is what you walk on. strange. Also, never had custard...but the fact that I have been eating ice cream or frozen yogurt at least every other day is a sign that if I were to encounter either concrete or custard I would totally LOVE them.

ReplyDeleteHOWEVER, Cruisin USA in Nixa is BETTER! I prefer Cruisin USA because their custard seems to have a little more flavor to the vanilla. It's also super creamy, and doesn't melt as fast as Andys...its' great!

Thank you, Emily! I made this last night and they were delicious! I had to substitute crumbled cheesecake cookies (keebler?) instead of the cookie dough bites because I couldn't find them, but it worked out just fine. I finally learned how to brown the butter without burning it! Yah me! lol It really did add something special to the flavor.

ReplyDeleteI went to college in Springfield and LOVE Andy's. I miss it so much! My favorite to get was a concrete with brownie pieces and hot fudge. They make their brownies fresh everyday...they are soft and delicious! You have to try that combo!
