





Cinnamon Quick Bread
2 cups all purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 3/4 teaspoons ground cinnamon
1/3 cup granulated sugar
6 tablespoons unsalted butter, melted
2 large eggs
1/2 cup milk
1 teaspoon vanilla extract
Crumb Topping
1/4 cup packed brown sugar
2 tablespoons all purpose flour
1/4 teaspoon ground cinnamon
2 tablespoons cold unsalted butter cut into small pieces
Heat oven to 350 degrees F. Coat a (9-inch) loaf pan with cooking spray.
In a medium mixing bowl sift together flour, baking powder, baking soda, salt and cinnamon; whisk in sugar. In a large mixing bowl, whisk together melted butter, eggs, milk and vanilla until well combined; whisk dry ingredients into wet until combined. Place batter into prepared pan.
To make the crumb topping, in a small bowl, stir together brown sugar, flour and cinnamon until combined. Knead in butter using fingertips until well incorporated and clumps form; sprinkle over bread batter.
Bake 35-40 minutes or until golden brown, well risen, and a toothpick inserted into loaf comes out with moist crumbs attached. Cool on a wire rack.
Makes 1 loaf
I love cinnamon, and can't wait for the cooler weather to try making this! Cinnamon scented goodies, on a crisp fall day ... heaven!

ReplyDeleteTransfering to Wordpress is plenty of work but you will be happy once you are there. The time involved is the reason I haven't moved over myself.Looks like you and Eric will be eating quick meals until then.

ReplyDeleteIf everyone were eating your cinnamon bread, I could understand why it sold out so quickly. However, I can't imagine what they were actually buying was better than this.
All of the cool kids are at WordPress. *Sigh*. I've moved around the net enough these days, so I'll be a loser and stay at Blogger. I do feel sort of technically dumb for not wanting to bother with Wordpress!

ReplyDeleteAre you moving yourself to Wordpress or are you having someone do it for you? I'm at Typepad, I've heard it's very, very difficult to make the transition. Not so much with Blogger, though. I would love to make the switch but would need to pay someone to do it for me.

ReplyDeleteLorie, I paid a hosting company to switch everything to their server. The problem is I can't find a layout that I like for Wordpress. Then I tried using a programs where you design your own site and it's way too difficult to use.

Cinnamon is by far one of my favorite ingredients. This looks wonderful. I can almost smell it if I try hard enough. :)
