Orange Babycakes with Vanilla Buttercream

1 cup all purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup unsalted butter, softened, divided use
1/3 cup + 1/2 cup granulated sugar, divided use
1 1/2 teaspoons finely grated orange zest
2 large eggs
1/3 cup milk
1/3 cup fresh orange juice
1 teaspoon vanilla extract

Heat oven to 350 degrees F. Coat a (24 cup) mini muffin pan with cooking spray.

In a medium mixing bowl, sift together flour, baking powder and salt. In a large mixing bowl, using a mixer on medium speed, beat together 1/4 cup butter, 1/3 cup sugar and orange zest until creamy - about 1 minute. Crack open the eggs and place whites in a large heat-proof mixing bowl. Add yolks to mixing bowl with batter in it, along with milk and orange juice; beat 1 minute or until combined. Reduce mixer speed to low and beat in flour mixture until just combined.

Place batter into each muffin cup. Bake 10-12 minutes or until cake springs back when lightly touched. Cool babycakes 5 minutes before transferring to a wire rack to cool completely.

To make the buttercream, Place bowl with egg whites over a pot of simmering water; whisk in remaining 1/2 cup sugar. Cook, whisking frequently, until the mixture reaches 160° F and the sugar has dissolved. It will look thick and marshmallow-y.

Beat mixture using a mixer on medium-high speed until stiff peaks form and the mixture has cooled to room temperature, about 8 minutes.

Reduce speed to medium and add remaining 1/2 cup butter, a tablespoons at a time, until well incorporated and fluffy. If the frosting looks curdled, continue to beat on medium-high speed until thick and smooth again, about 3-5 minutes more. Beat in vanilla until combined.

Pipe buttercream on top of cupcakes and eat!

  1. Let's see, five foods that I associate with my childhood:

    1. Japanese rice balls flavored with just a little salt. They were my most requested home lunch.

    2. Korean chicken. My mom always made this for picnics along with said rice balls. It's still my favorite today.

    3. Chocolate chip rice krispie cookies. Those were the only chocolate chip cookies I ever knew as a child.

    4. Peanut butter sandwiches with guava jam (growing up in Hawaii, my mom never bought any other kind).

    5. Pineapple Spam. (for reasons unknown we used to have this for dinner although my sisters and I couldn't stand it)

    Those babycakes are so cute and just perfect for popping into one's mouth, or for licking the frosting off first, then popping it into one's mouth. And that creamsicle flavor does bring back a lot of memories.

  4. These little cakes are so cute! Food of my childhood, good question... I would say: strawberry shortcakes but with angel cake... Light fluffy cake, lots of wipped cream and lots of fresh, sugary, tasty, juicy strawberries... All of this dusted with powdered sugar or cocoa powder! Yum!

  7. It will be interesting the see the 5 foods that people associate with their childhood. For me it is gooseberries because mom loved them and I was forced to pick them brambles and all; potato fritters because dad would make them as a special treat and we loved them;rhubarb because I spent many a summer afternoon with my friends with a bowl of sugar and some rhubarb we had pilfered from our neighbours patch;Yorkshire pudding because it was a staple in my home;apples because there was a wild apple tree near our tree fort.

  9. Well since I was a very picky eater as a child, one of the only things I actually ate were grilled cheese sandwiches. There was also a lemon chicken dish that I remember being able to tolerate. And I would eat green beans as long as I didn't find a single string on them! Boy, have I changed!

  12. Oh...this is very exciting!! I LOVE orange...or even just the essence of orange. And a childhood food memory is the ice cream man coming around the block (I could hear the music and knew it was only a little longer) and then I would get an orange push pop. I don't even know if they sell those anymore! The packaging had flinstones on it...while I was working with Jr high kids, I mentioned pebbles and bam bam and they had no idea who I was talking about...feel like I'm getting old.

  17. 5 foods that remind me of my childhood? I like this question! Here are mine:

    1.) Pastina (tiny star pasta) - My mom used to make this whenever I was not feeling well or when she didn't want to make a big fuss of a dinner. You just cook the pasta, then add grated parmesan cheese and butter... such comfort food!
    2.) Oatmeal - Mom says I used to devour this as a kid, and I still have it everyday for breakfast.
    3.) Watermelon - I remember having this all the time in the summer at barbeques.
    4.) Lucky Charms, Cinnamon Toast Crunch - My two favorite childhood cereals that I only buy every once in a while now when I am craving sugary cereal.
    5.) Tacos - Used to have these every year on my birthday. Still one of my favorite things to make at home... but I think I've refined the art of tacos, enchiladas, and quesadillas.

  18. I hope mine don't seem weird or awkward. We were kind of a weird and awkward family, though:
    -Kraft macaroni & cheese with tuna and cream of mushroom soup. My sister hated it, but I liked it.
    -Salmon croquettes. Ugh. I hated those little bones. Mom said they were good for you.
    -Strawberries. My grandfather had a farm, and strawberries were everywhere. I loved eating them. Hated hulling them.
    -Gooseberries. Another farm fruit. Only picking gooseberries meant you were going to get scratched a lot. Mom always made us pick at least one pint each. But the gooseberry jam was WONDERFUL.
    -TAB soda. I know, it dates me. But I loved it. I felt so grown-up!
    Eh. Maybe we weren't so weird. :)

    1) Potato soup - I remember making this with my mom/ grandma/ great-grandma, and it was my favourite food.
    2) Perogies - I adored these, and we had them often.
    3) Chocolate chip cookies - my mom makes the best cookies I have ever had.
    4) Peach pie - it was my favourite and my mom packed it in my lunch.
    5) Macintosh Toffee - I would buy this, freeze it, then break it up in to chunks and eat it. It was a favourite treat.

    There are so many foods I associate with my childhood: chicken enchiladas, my favorite restaurant dish as a child, hot chocolate and toast with butter and chocolate sprinkles when I got home from school, the fruit leather I had every day as dessert for lunch...

    1. Hot dogs. Sometimes they were all I would ever eat.

    2. Chinese food. For years when Dad came to take me out on weekends, we always ate in Chinese restaurants

    3. Good Humor truck ice cream. How happy did those trucks make you as a kid?

    4. Roast beef sandwiches - that was covered in my blog recently

    5. Chicken cutlets. Those would always be on the menu for dinner once a week.

    Those cupcakes looks beautiful. Me want!

    That chocolate bread sounds wonderful too. Is there non-bread-machine version of the recipe?

    Foods from childhood...1. Fruit Loops (at my Granny's specifically...I smell them and think of her!), 2. Open faced PB&J with the jelly in the shape of a heart, 3. homemade oreo milkshakes 4. Open faced hot dog sandwich with cheddar cheese melted on top, 5. Chicken roll-ups...only when Daddy wasn't there b/c he didn't like them!

    lets seee
    1.) Sausage pasta- basically my moms version of a bolognese sauce...soooo creamy and so good. the epitome of comfort food to me.
    2.) bananas- we always had bananas at home. if i was super hungry i would add peanut butter!
    3.) eggs- haha such a simple thing but i ate eggs a lot as a kid.
    4.) ben and jerry's ice cream! our freezer always had at least one pint of this. we were a big ice cream eating family! phish food, half baked, cookie dough...ahh the good old days. now my freezer has frozen fruit :(
    5.) boston market. my parents are divorced so as a kid i spent the school year with my mom and breaks with my dad. my dad wasn't a great cook so often he picked up food from boston market. quarter white chicken with mashed potatoes and green beans was my meal. eating it now instantly brings back TONS of memories of hanging out with my dad.

    Homemade Peach Ice Cream.
    Little squares of Laughing Cow cheese.
    Chicken in Campbell's Cream of Mushroom Soup.
    Meatloaf in a glass loaf pan. (I make mine freeform.)
    My mother's German Sweet chocolate dessert.
    White Toast with mayo.

    I have to think about that some more. What a great question!

  34. 1) Potato Chips - we used to eat it every Sunday in the kitchen w/ my mom.

    2) Ramen noodles - kind of a staple in an Asian household.

    3)White rice & tons of it. Another staple in an Asian household. 99% of our meals probably had rice served with it.

    4) Chef Boyardee Raviolis - it was a treat for us to eat this.

    5) Tons of homemade soups because they're always good for you. These were always bitter & made some Chinese herbs & fruits/vegetables. They did not taste good whatsoever!
