Spiced Sweet Potato-Snickerdoodle Milkshake

Hey everyone! I'm back from my little trip with my mom and sister. I'll have to recap that trip for you soon. It was... interesting. I don't think I'll ever go to a concert again. :( I did have some good pizza though...

Also, Eric's post about his trip is coming soon. He's finishing up writing it and then I'll post it shortly.

To tide you over, I have an easy, kid friendly recipe for you all. Spiced Sweet Potato-Snickerdoodle Milkshakes! This recipe is easy to whip up and doesn't take any time at all. I think your kids would really enjoy making this with you, and also drinking it! This milkshake is really, really delicious.

Annnd, it's not that bad for you! It contains healthy cooked North Carolina sweet potatoes, low-fat ice cream (or frozen yogurt), skim milk, walnuts and cinnamon. Oh, and some chopped up snickerdoodle cookies, too. Snickerdoodles aren't healthy, but they're very, very appealing to kids.

I have a good recipe for those too, which I'll post soon. So many posts, so little time!

If you love sweet potatoes as much as I do, you'll love this milkshake!

Spiced Sweet Potato-Snickerdoodle Milkshake
Printable Recipe

3/4 cup mashed cooked North Carolina Sweet Potato
1 1/2 cups low-fat vanilla ice cream or frozen yogurt
1 cup skim milk
1 cup coarsely chopped snickerdoodle cookies
1/4 cup chopped walnuts
1/2 teaspoon ground cinnamon
Whipped cream, for topping (preferably lower in fat)
Cinnamon-sugar, for topping

In a blender, combine sweet potato, ice cream, milk, cookie, walnuts (save a few walnut pieces for topping) and cinnamon and blend until well combined and smooth.

Pour into two glasses and top with whipped cream. Sprinkle with walnut pieces and cinnamon sugar.

Makes 2 milkshakes

  10. Ah I love anything with sweet potatoes in it! I don't know what North Carolina sweet potatoes are, but I'd guess that they're just as delicious as the ones we eat up north. Can't wait to try this!

  11. Yeah at the last concert I went to, the people sitting next to me were practically injecting heroin. I tried to avert my eyes so that I couldn't testify in court...but I swear that's what it seemed like. :P

  18. This sounds very interesting. But it looks awesome! I do LOVE snickerdoodles. And I enjoy sweet potatoes. But I don't know about in a shake. Is the sweet potato flavor very noticeable?? I'm extremely interested in trying this. Thanks for sharing!
