Nutella-Peanut Butter Cookies

6 tablespoons unsalted butter, softened
2/3 cup packed brown sugar
1 large egg
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla extract
1 cup crisp rice cereal
3/4 cup old fashioned oats
1 cup sem-sweet or dark chocolate chips
1 cup all purpose flour
1/4 cup creamy peanut butter
1/3 cup Nutella

Heat oven to 350 degrees F. Coat cookie sheets with cooking spray.

In a large mixing bowl, using a mixer on medium speed, beat together butter and brown sugar until creamy - about 1 minute. Beat in egg, baking soda, salt and vanilla until combined. Beat in cereal, oats and chocolate chips until combined. Beat in flour until just combined.

Divide half of the dough into an additional large bowl. Beat peanut butter into one bowl of dough until combined. Beat Nutella into other bowl of dough until combined.

Line up doughs, side-by-side, on plastic wrap. Wrap in plastic wrap and roll into an even log. Unwrap plastic wrap and slice dough into rounds, 1/2-inch thick. Place dough slices on cookie sheets, spacing about an inch apart. Bake 11-12 minutes or until firm and slightly crisp. Cool 2 minutes before trasferring cookies to wire racks to cool completely.

Makes 2 dozen cookies

  3. these cookies are heaven/hell cookies for me! (nutella is my fav thing ever, peanutbutter= highly allergic to) I'll have to make them without the PB! They look sooo good, albeit slightly scary/deathly, lol.

  6. I made a peach pie recently. Very time consuming and I would not recommend it for labor day!

    I don't know what internet browser you use, but I have issues commenting on blogger when I'm using internet explorer on a PC...when I'm on my Mac using either Safari or Firefox it works fine though. Blogger is kind of buggy...if I wasn't intimidated by Wordpress I'd switch.

  9. I had the same problem with blogger and I simply resolve it by switching for Firefox or Google Chrome instead of Explorer. You should try it! These cookies really looks good!

    Your comment problem could have to do with your browser. IE was causing me tons of headaches. I switched to Firefox, which helped a little, but was kind of annoying. Now I use Google Chrome and I bet that might solve the comment hassles you're having.

    These cookies are a brilliant idea. I might actually make them as separate cookies too. Ooh, and wouldn't they be good used in ice cream sandwiches...with some coffee or caramel OR PEANUT BUTTER(!!!) ice cream?

  18. Very clever idea. Anything with Nutella is always good. I can never stay away from the stuff.

    I baked two batches of pudding cookies. One is made with vanilla pudding and chocolate chips and one is made with banana pudding and pb chips. I brought half of them to work and then I froze the other half to take to a friend's barbecue on Monday. Other than that my weekend is just about me and the horsies. Oh yeah, my BIL and his family are in town for the weekend. They don't have much time to socialize with Mom and only brother! We are having dinner together on Sunday night though.

  38. Made these tonight for the kiddies--and they were so psyched. Didn't have rice krispies, but used corn flakes and they worked great. My kids said I should make these every day. :)

  39. Yum yum yum! What a killer pairing! I made these a couple of days ago and oh my it is good! I didn't have packaged cereal, but plenty of oats so I just replaced the rice krispies with the same amount of oats. Also no choc chips and used white whole wheat flour. Perhaps it was because I changed up some ingredients, but I had to add more than 1/4 C nutella for an even mix throughout the batter (but then maybe I was making excuses for more nutella...!!) and refridgerated the dough before I cut it up because it was super sticky. Anyway, it came out amazing!! Thank you!!
