Peanut Butter-Toffee Chocolate Chip Cornflake Cookies

1/2 cup unsalted butter
1 cup packed brown sugar
1/3 cup peanut butter
1 large egg
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon salt
1 cup finely ground corn flakes
3/4 cup all purpose flour
3/4 cup toffee bits
1 cup semi-sweet chocolate chips

Melt butter in a small saucepan over medium heat; cook 2 minutes, whisking frequently, until butter foams and starts to turn golden. Pour butter into a large mixing bowl.

Add brown sugar to mixing bowl. Mix, using a mixer on medium speed, for 2 minutes. Mix in peanut butter, egg, vanilla, baking soda and salt until well combined - about 1 minute. Reduce mixer speed to low and beat in corn flake, flour, toffee bits and chocolate chocolate chips until just combined. Chill dough in refrigerator for 20 minutes.

Heat oven to 350 degrees F. Coat cookie sheets with cooking spray.

Drop rounded tablespoons of dough onto cookie sheets. Bake 10-12 minutes or until light golden brown. Cool 1 minute before transferring cookies to wire racks to cool.

Makes about 10-12 big cookies

  6. I just want to smooch you! The all-cookie-December idea is spectacular. I have big plans for cookie-baking these days, anyway; here in France, there are "sablés" everywhere, kinda like sugar cookies/shortbread, but American-style cookies aren't to be found. So I plan to bake away for my coworkers and friends. This would be the perfect start!

  8. Cornflakes in cookies are totally awesome! I did that in my failed batch of Halloween cookies but it was the cornflake crunch that made the dough so fun to eat!

  10. this combination sounds downright SUBLIME! Love the addition of cornflakes, too! I made some bourbon/cornflake cupcakes, but the cornflakes refused to stay crunchy. Do you have any tips on how to maintain their crisp, or did it just work automatically? This is a fantastic recipe, i can't wait to try it... and then EAT it. :)

  12. I am loving the use of cornflakes in these cookies. Very smart. I have the BIGGEST bag of rice krispy cereal to use up. I am wondering how those would work in these? Probably not as good?
