Tim’s Chocolate Peanut Butter Cookies

tim2

My friend Tim came up with this fabulous cookie recipe.  He’s famous for it.  I’ve never actually had the cookies before, but I really want to try them.  I changed a few things in the recipe: I added browned butter and a couple of fun ingredients.  I would have left the recipe the same, but I had a bunch of random leftover ingredients I needed to use up.  I’m going to have to try the original version and not mess with it at all.

But the cookie base is the same.  Except I didn’t use dark cocoa powder – I used regular.
Come to think of it, these cookies probably aren’t anything like Tim’s cookies.

Oh well, we can pretend.  Because today is Tim’s birthday!  Happy Birthday, Tim!

We have a lot of good things going on in these cookies.  The base is made out of butter, sugar, brown sugar, flour, eggs, dark cocoa and peanut butter.  Tim recommends using Reeses Peanut Butter.  I looked for it and couldn’t find it anywhere.  He said he was having problems finding it too.  Anyone else?

I believe he stirs chocolate chips and peanut butter chips into the batter.  I used chocolate chips, mini Reeses Pieces, chocolate covered peanuts, and chopped peanut butter cups. I liked having all of the different ingredients in the cookies because it made them more fun to eat.

Reeses Pieces if the most fun candy to eat at the movie theater.  Don’t you think?  Although, when I was a kid I loved Care Bear gummi bears.

And with that, I’m off to make some cinnamon popcorn.  An excellent snack to sneak into the movie theater in your giant purse.

(My adapted version) Timothy the Elder's Chocolate Peanut Butter Cookies

1 cup unsalted butter
2 1/4 cups all purpose flour
2/3 cup unsweetened dark cocoa powder (Hershey's Dark)
1 teaspoon baking powder
1 teaspoon baking soda
1/8 teaspoon salt
3/4 cup granulated sugar
3/4 cup brown sugar
1/2 cup creamy peanut butter (Reeses)
2 large eggs
1 tablespoon vanilla extract
3/4 cup mini Reeses Pieces
3/4 cup coarsely chopped Reeses peanut butter cups
1/2 cup dark chocolate chips
1/2 cup chocolate covered peanuts

Heat oven to 350 degrees F.

Melt butter in a small saucepan over medium heat; cook 2-3 minutes, whisking frequently, until foams and starts to turn golden brown.  Transfer butter to a large mixing bowl.

In a medium mixing bowl, sift together flour, cocoa powder, baking powder, baking soda and salt.

Add sugar, brown sugar and peanut butter to bowl with browned butter.  Mix together, using a mixer on medium speed, until well combined – about 1 minute.  Beat in eggs and vanilla until combined – about 1 minute.  Reduce mixer speed to low and beat in flour mixture until just combined.  Stir in Reeses Pieces, peanut butter cups, chocolate chip and peanuts until just combined.

Drop rounded tablespoons full of dough onto cookie sheets.  Bake 10-12 minutes or until well risen and set.

  10. Sidebar: You need to make some adult gummy bears. Soak them in vodka for a few days. They become plump & ripe with alcoholic goodness. Mmmm.
Ok-I'm allergic to peanut butter, but I think Reece's peanut butter is saltier than others. The salt lends itself to taste better for confectionery items paired with chocolate.

  15. These look SO good. I love how you used so many chocolate and peanut products in one cookie! Reese's Pieces were always my favorite candy growing up, but for some reason I never really think to use them in cookies.

  19. Reeses Pieces are my favorite movie candy.
Here in NYC they don't really hunt you down for bringing in food like they do in the midwest. I sat next to a woman who pulled out a quarter of a watermelon (whole--not cut up) and proceeded to eat it right there....
