Banana Peanut Butter Cap'n Crunch Muffins

1/2 cup chunky peanut butter
3 tablespoons unsalted butter, softened
3/4 cup brown sugar
1/4 cup granulated sugar
2 large ripe bananas, mashed
2 large eggs
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups all purpose flour
1/2 cup milk
1 1/2 cups finely ground Cap'n Crunch cereal
3/4 cup coarsely chopped milk or semi-sweet chocolate

Heat oven to 350 degrees F.  Coat 2 (12 cup) muffin tins with cooking spray.

In a large mixing bowl, using a mixer on medium speed, beat together peanut butter, butter, brown sugar and sugar until creamy - about 1 minute.  Beat in banana and eggs until combined - about 1 minute.  Reduce mixer speed to low and beat in baking powder, baking soda and salt until well combined.  Beat in flour, milk, and Cap'n Crunch until just combined.  Stir in chocolate until combined.
Divide batter into muffin cups.  Bake 16-18 minutes or until well risen, golden brown, and a toothpick inserted into muffin comes out with moist crumbs attached.  Cool on a wire rack.

Makes 2 dozen muffins

  3. I used to like the typical sweet cereals when I was younger (including Captain Crunch and, of course, anything with marshmallows). I usually eat Greek yogurt or eggs for breakfast, now, though. The last cereal I had a love affair with was in my teens--Cracklin' Oat Bran. It has twice as many calories as most cereals, because it's granola-based, but it's insanely delicious.

  4. Holy Smokes! You're kidding me right? Cap'n Crunch cereal in a banana peanut butter muffin? Wow. I can tell you right now these would quickly be gobbled up at my house and turn into my younger sisters favorite! I want to give them a try but it might be a dangerous can of worms to open! haha.

    i honestly dont think i have a least favorite cereal. it's just not fathomable. with that said, i don't think it's possible i have a FAVORITE cereal. they are, in no particular order: honey bunches of oats, cinnamon toast crunch, corn pops, honey combs, cinnamon life... the list goes on. i am a cereal addict!

  9. Delish! My hubby would totally do a 30-day cereal challenge. He loves it and needs to snack on some every single night, after dinner. I'm not really a huge cereal fan. I'd rather eat oatmeal.

  10. Yay for two post in one day! I checked back after reading your first one thinking just maybeee you'd suprise me with another. And you did! Oh gosh, don't even get me started on the cereal...I could eat it every meal. You should try the new Marshmellow Pebbles...they are very similar to Lucky Charms but taste more like cake to me. Yum. I currently am loving Honey Nut Oatmeal Squares and my staple, Cinnamon Life!

  12. I totally could eat cereal every day also. I love kashi golean crunch and honey bunches of oats (the cinnamon is DA BOMB). I really should put them in muffins more...these sound delicious!

  13. I. love. cereals. If I don't eat any for breakfast, I get cravings. I 100% support your challenge to eat cereal for every meal, everyday for a month, in fact I may join you! Picking a favourite cereal seems impossible though, I love mixing loads of different kinds together and eating them with yogurt and sometimes a bit of milk in the mix too (I'm enjoying a bowl right now)! Peanut butter cheerios?! Those sound magical. Cheerios are hard to find in France. If I had to pick a favourite (apart from the many varieties of cheerios) it might have to be cinnamon toast crunch!

  14. My least favorite cereal is Grape Nuts too. I can't stand the fact that they're so hard and the taste does nothing for me. I'm not a huge cereal fan though. A cold bowl of flakes or balls that slowly get soggy never thrill me. The only cereal I like to eat are the worst ones for me like Cap'N Crunch or Cocoa Pebbles. I remember back when I was living at home I convinced my health nut mother to take a walk on the wild side and get some Cap'N Crunch. First we started with regular and then decided to go for the peanut butter flavor. I remember her boyfriend saying he couldn't reconcile peanut butter in milk like that. I said, "What do you drink with a PBJ then?"

    Stuff like that is completely forbidden from my diet though. I'm almost down the first 10 pounds...

    Like these muffins a lot. Would you try them with PB cereal instead of plain?
