Almond Chocolate Orange Cookies

Almond Chocolate Orange Cookies

1/4 cup unsalted butter, softened
1/2 cup granulated sugar
1 tablespoon honey
1 large egg
2 teaspoons grated orange zest
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups almond flour
1/2 cup unsweetened cocoa powder
3/4 cup finely chopped toasted almonds
3/4 cup coarsely chopped dark chocolate
Confectioners' sugar

Heat oven to 350 degrees F.  Coat cookie sheets with cooking spray.

In a large mixing bowl, using a mixer on medium speed, beat together butter, sugar and honey until creamy.  Beat in egg, orange zest, vanilla, baking powder, baking soda and salt until well combined.  Mix in almond flour, cocoa powder, almonds and chocolate until well combined.

Drop rounded tablespoons of dough onto cookie sheets.  Bake 12 minutes or until set.  Cool 2 minutes before transferring to wire racks to cool.  Dust with confectioners' sugar.

Makes about 18 cookies

  1. OMG I've always wanted to bake with almond flour, but I've been afraid-lol. I may make these, they look so chocolatey!! I feel the same way, this reminds me of when our fridge broke...i was all "let's eat everything from the refrigerator" but we all got sick. BUT bacon should NEVER go to waste.

  2. My rule of thumb has always been, if there is a chance to make pastries...make the pastries. So I think you made the wise choice! Good luck moving!

I just moved last month from NY to MA, and I went through exactly everything you've been writing about... first wanting to save stuff, then wanting to just get rid of everything, trying to clean out your cupboard and fridge, and being completely frazzled at times. You'll feel much better once you're moved and settled in.

    These cookies sound really good. I have some almond flour I need to use, and gluten-free is a nice plus!

  5. Best wishes on your move this weekend. I am curious about which neighborhood of Chicago you are settling in.
    Chicago is so beautiful in the summer...the lake, the city parks and gardens, even the flowers along all the main roads...a very cool place for you and Eric to be young and starting a new chapter together.

    Thank goodness your sense of humor is intact! You'll need every ounce of it next week. Moving is no fun. It's tiring, dirty and dusty. Drink lots of water and STOP eating cream of wheat. That much of anything (except maybe bacon and these cookies) can't be good for you...

    These cookies looks wonderful. It's hard to find a GF cookie that has the right texture. These look right up my alley.

  14. I've been a lurker on your site for a while now, and I just wanted to say that I hope your move went well/you're settling into Chicago ok! I've lived here my whole life and I might be biased, but I really think it's the best city in the world! At the risk of sounding like a creeper, let me know if you ever need a baking buddy or someone to show you around!

    P.S. I know you mentioned Crumbs in an earlier post, but I've gotta say, Molly's and Sweet Mandy B's are where it's at. Check them out!

      I didn't know about those bakeries. I knew there were better ones than Crumbs! We should go there. First I need to practice getting around the city. :)
