Puppy Chow Brownies

Ingredients:
1/2 cup unsalted butter
1 1/4 cups granulated sugar
1 3/4 cups semisweet chocolate chips, divided use
3 large eggs
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
3 tablespoons unsweetened cocoa powder
3/4 cup all purpose flour
3 tablespoons creamy peanut butter + 2 tablespoons
2 cups rice chex cereal
Confectioners' sugar

Directions:
Heat oven to 350 degrees F.  Spray an 8x8-inch square pan with cooking spray.

Melt butter in a small saucepan over medium heat; stir in sugar, and bring to a boil.  Remove pan from heat and stir in 1 cup chocolate chips until melted and smooth.  Cool 5 minutes.
In a large mixing bowl, using a mixer on medium speed, beat together eggs and chocolate-butter mixture for 8 minutes, or until well combined and doubled in volume.  Reduce mixer speed to low and beat in baking soda, baking powder, salt and cocoa powder.  Beat in flour and 1/2 cup chocolate chips until just combined.  Spread batter in pan.  Swirl 3 tablespoons peanut butter through batter.  Bake 10 minutes.

Meanwhile, prepare the puppy chow: stir together remaining 1/4 cup chocolate chips and 2 tablespoons peanut butter in a small saucepan over low heat, until melted and smooth.  Stir in cereal until well combined.  Place cereal on top of brownies.  Lightly cover pan with foil.  Return pan to oven and bake 20 additional minutes, or until well risen and set.  Cool completely on a wire rack.  Dust with confectioners' sugar.

  1. You know, I've never had puppy chow, nor did I read about it until becoming a food blogger! Perhaps it is a regional thing?

  2. UGHHH I've been waiting for you to post these! Puppy chow is the best stuff on earth and would be incredible on a brownie. I like that there's peanut butter in the brownies, too.

  8. i LOVE puppy chow! i always called it puppy chow growing up, and then when i went to college in southern california, everyone called them "muddy buddies". i can never keep my hands out of the bowl when i make them. pair them with brownies and i'm sure they're even better!

  13. One time I saw a bag of Chex Mix brand puppy chow/muddy buddies and bought it right away! It wasn't as good as the homemade stuff though, like most things in life I suppose!

  17. These brownies look so amazing that I am going to pretend like I never saw them--so I am not tempted to bake in the forthcoming blazing weather. I think those TJ chocolate covered pb-filled pretzels would also be amazing if they were chopped up in brownies. BUT odds are good I will be trying the above recipe as soon as it gets colder again--excellent creation!

    On a side note: I made puppy chow/muddy buddies with the TJ cookie spread a few weeks ago.. talk about a bikini-killer. I was trying to make a cookie-dough flavored version of puppy chow (I have seen lots of cake-batter puppy chow recipes.. frankly, it just isn't the same without the peanut butter), and I think a Monster-cookie (pb, oatmeal, m&ms) flavored puppy chow would be ammmazing.

  18. You know...I've wondered many times why I only had puppy chow as an adult and not as a kid. Mom probably got grossed out by the name of it, so she didn't want to fix it for us.I know I would have really liked it.

  20. I made and LOVED these brownies, as did my co-workers. One word of caution, however. I doubled the recipe and used a 9x13" pan and it overflowed. So, if you're going to double it, I'd put a baking sheet under the pan. And you should definitely make these!!!
