




Dark Chocolate Cashew Lace Cookies
3/4 cup very finely chopped lightly salted cashews
2 1/2 tablespoons unsalted butter
1/3 cup granulated sugar
1 tablespoon corn syrup
1 tablespoon cream or half-n-half
1/8 teaspoon salt
1/2 teaspoon vanilla extract
2 tablespoons all purpose flour
2 oz. dark chocolate
Stir together cashews, butter, sugar, corn syrup, cream and salt in a small saucepan over medium heat; bring to a boil. Boil 1 minute. Remove pan from heat and stir in vanilla and flour until combined. Place mixture in a medium bowl, and chill 30 minutes in refrigerator, or until cold.
Heat oven to 350 degrees F.
Roll teaspoons of dough into balls. Place on cookie sheets, spacing about 3 inches apart. Bake 10-12 minutes, or until golden brown. Cool 2-3 minutes before transferring cookies to wire racks to cool.
Melt chocolate in a small bowl, in the microwave for 1 minute, or until melted. Spread a thin layer of chocolate on the bottom halves of cookies. Press two cookies together to form a sandwich; repeat process.
Makes 6 large cookies
I don't know about Trader's Joe cookies but these one looks fantastic!

ReplyDeleteI made something similar the other day (salted peanut florentines) but I didn't know that you can chill the mixture and roll it into balls and bake like cookies (florentines tend to spread a lot when baked, at least mine did in the hot Greek weather). I will give this recipe (and technique) a try soon.
