Here is the base of my chocolate sculpture!  It’s made up of seven different chocolate pieces molded together.  Tomorrow we’ll add on the flowers and leaves.  I’m wondering how I’m going to get this home on the bus.

This is another flower I’m working on, using the pieces we made yesterday.

The chef did a demo today on making a chocolate mold out of cocoa powder.  He pressed an anchor into a box of cocoa powder, carefully took it out, then flooded the area with tempered chocolate and let it set up.  This was the result:

Pretty cool, huh?  I want to try it.  He also made a chocolate mold out of gelatin.  He had this little Shrek toy that he pressed into liquid gelatin.  When it set up, he poured in the chocolate and made a chocolate Shrek.  Somebody smudged up Shrek’s face.

So see?  You don’t have to have fancy molds to make chocolates!  DIY chocolate molds.

Oh, one more thing – I got the pastry cook position I applied for!  I’ll be working part-time (mornings) at a bakery downtown.  I’m still keeping my pastry internship too, so it will be a busy three months with going to school full time.  Icandoit I candoit I candoit.  I will need lots and lots of coffee.

  3. The cocoa casting is great -- reminds me of sand casting in metal shop back in 8th grade! I've always thought I wouldn't have the patience for the sculptural aspects of dessert making, but you're inspiring me to give it a try.

    1. Ohh I don't remember doing that in shop. I took it for one semester and had enough! It's kind of fun to make sculptures. I think you should get into it.

  4. Looking at your handiwork over the last few posts reminds me of why I never can be a pastry chef. I am too big of a klutz to make such beautiful treats. I don't know how you do all of this chocolate stuff every day and not weigh a ton. I'd be eating everything in sight!

  5. Congrats! They'd have been fools not to hire you! I just hope you're not taking on too much. You'll need your strength to get through school.

    Please don't forget to reserve some 'you-time' - it's so, so important to keep balance in your life.

  6. Wow thats amazing!! Well done on your new job too. i don't knwo how you do it. Love the chocolate moulds, I really want to try this out myself now.

  7. I've been reading your blog for a long time now and just wanted to let you know how happy i am for you! Pastry school, internships, and a job at a bakery... it's a lot of work but it's all so great!! congrats :)
