Candy Cane Cookie-Stuffed Snowcaps

1 1/4 cups all-purpose flour
1/2 cup unsweetened cocoa powder
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 3/4 cups granulated sugar
2 large eggs
5 ounces unsweetened chocolate, melted
20 Candy Cane Jo-Jo's or Peppermint Oreos
1 cup confectioners' sugar

Heat oven to 350 degrees F.

In a medium bowl, sift together flour, cocoa powder, baking powder and salt.  In a large bowl, using a mixer on medium speed, beat together butter and granulated sugar until creamy.  Beat in eggs, one at a time, until well combined.  Beat in melted chocolate until well combined.  Reduce mixer speed to low and gradually beat in flour mixture until just combined.

Shape dough into 20 balls.  Chill the dough for a few minutes if it's too sticky.  Place a dough ball in your hand and flatten it as thin as possible without having it fall apart; place a cookie into the center.  Wrap dough around cookie and smooth.  Repeat process with remaining dough balls.  Roll balls in confectioners' sugar until coated.  Place on cookie sheets, spacing about an inch apart.  Bake 15 minutes, or until well risen, set, and crackled.  Cool 2 minutes before transferring to wire racks to cool.

    Also jealous! I went to TJ's yesterday looking for candy cane joe-joe's - and they said they were not only sold out at our store, but sold out of all TJ's across the country, done for the season! (So if there are still some at your Trader Joe's, maybe you should stock up! Haha.)

    Just bummed because I was going to make Oreo truffles out of them, my coworker brought them in last week and they were divine.

You always want to create something that has never been created before, when it comes to baking and cooking! 99.9% of us would never have thought of this - that is why you are going to be such a huge success in your culinary career!   8. These cookies look heavenly! And I would make them again for your cookie swap...There are plenty of other times for classic cookies! I used the candy cane joe-joe's in a brownie recipe last week, and they were divine! I'm planning to add them to some cupcake batter tomorrow for my work Christmas party. Hoping those turn out well too... I agree that you can't really just eat the joe-joe's - they are much better inside another baked good! :)

    2. For the brownies I just crushed up 4 Joe-Joe's and added to my classic brownie batter. After pouring the batter into the pan I broke up 12 Joe-Joe's by hand and tried to artfully place them and push them down a little bit to set them in place. I felt like I was making a mosaic or something!

      Joe-Joe's + chocolate cupcakes were also a hit. I used the Black Magic chocolate cake recipe you posted awhile ago for the cakes. Thanks for that! I've enjoyed so many of your recipes!
