Bourbon Blueberry Peach Hand Pies


Ingredients:
  • Pie Dough
  • 2 1/3 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons granulated sugar
  • 10 tablespoons cold unsalted butter
  • 6 tablespoons ice water
  • Egg wash
  • 1/2 cup blueberries
  • 1/2 cup diced peaches
  • 2 tablespoons bourbon
  • 2 tablespoons brown sugar
  • 1/4 teaspoon ground cinnamon
  • Sugar, for garnish
Instructions:
In a large mixing bowl, sift together flour, baking powder, salt and sugar.  Knead in butter, using fingertips, until well incorporated and pea-sized lumps form.  Sprinkle in ice water, a tablespoon at a time, stirring to combine.  When dough starts to come together, divide into two discs and wrap in plastic wrap; chill 30 minutes.

Heat oven to 350 degrees F.

Roll out dough rounds as thin as possible, on a floured surface.  Cut out circles using a cookie cutter or glass. Brush with egg wash.

In a medium bowl, stir together blueberries, peaches, bourbon, brown sugar and cinnamon until combined.  Place a teaspoon of fruit into the center of pie circles.  Fold over to make half moons, crimp edges, and place on a greased baking sheet.  Brush pies with egg wash and sprinkle with sugar.  Bake 20 minutes or until golden brown.  Cool 2 minutes before transferring to wire racks to cool.

  1. Are you a mind reader? I was just thinking about how cool it would be to make hand pies a couple days ago and now you make them. Weird!

    Yeah, they would rock deep fried, but they look delicious as is. Frying can make anything taste good, but if it tastes really good to begin with, you don't need to fry it.

    My favorite deep fried food? Chicken comes to mind. I love corn dogs although I hardly ever eat them. Hush puppies are awesome. I also love funnel cakes and zeppole.

  2. Hand pies are the best! I usually bake mine too. I am one of those people that loves butter and shortening in pie crust. It's just not as flaky without it. My favorite deep fried food is probably french fries.

  4. ugh these looks so good but i'm going to Italy in two weeks where I'll be consuming ample amounts of pasta and gelato so I'm trying not to indulge :/ but these look sooooo indulge worthy! ah.

    also could you do a post about your favorite places in st. louis?

    1. I don't blame you! I'd rather stuff my face in Italy. I would love to do a post on food in STL. I will try to get around to some of the bakeries this month. I haven't ventured out too much.

  5. my favorite deep fried food?! I love a corn dog! I bought my husband a fryer and he's been making corn dogs!
    I love these pies, but I'm not so good at making pie crust!
