Ingredients:
1/2 cup unsalted butter
1 cup brown sugar
2 tablespoons honey
1 teaspoon vanilla extract
1 large egg
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon cornstarch
2 cups all purpose flour
3/4 cup cup semi-sweet chocolate chips
1/2 cup coarsely chopped toasted salted nuts

Instructions:
Melt butter in a small saucepan over medium heat; cook and whisk for 2-3 minutes, or until butter foams and starts to brown.  Pour butter into a large mixing bowl.

Add brown sugar, honey and vanilla to bowl.  Mix on medium speed for 1 minute, or until well combined.  Mix in egg until well combined - about 2 minutes.  Sift in baking powder, baking soda, salt and cornstarch, and mix until just combined.  Sift in flour and mix until just combined.  Stir in chocolate chips and nuts until just combined.  Chill cookie dough in refrigerator for 45 minutes, or until cold.

Heat oven to 350 degrees F.

Place heaping tablespoons of dough onto cookie sheets, spacing about 1 1/2 inches apart.  Bake 12 minutes, or until golden brown.  Cool 5 minutes on cookie sheet before transferring to wire racks.

  1. I dream of the day I can grill. That way I don't have to look at grilling blog posts and just made all the Saddy McSadderson comments about how I can't grill because I don't have a grill or a yard to put one in. Maybe by the summer of 2016 I'll be making grill posts.

The cookies look pretty yummy. I imagine honey would give them a really nice flavor dimension. You should make PB cookies with honey. I love PB and honey sandwiches. (I suppose someone should come along at this point and tell me I should make my own damn cookies.)

  2. Can you not grill where you live, Rachel? I believe you when you say you'll be grilling in 2016!

That sounds like a good idea! I would love some PB honey cookies.

    1. I have no yard. Just a balcony and it's forbidden to have grills on it. I hope to be in a house at the end of 2015/beginning of 2016 so by the summer of 2016 I'll have a yard for a grill.
