


1/2 cup peanut butter (creamy or crunchy)
2 tablespoons unsalted butter, softened
2/3 cup granulated sugar
1/2 teaspoon vanilla extract
1 large egg, beaten
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup oatmeal
2/3 cup all-purpose flour
1/2 cup mini peanut butter cups or chocolate chips
Heat oven to 350 degrees F.
In a large mixing bowl, stir together peanut butter, butter, sugar and vanilla until creamy and smooth. Stir in egg, baking soda, baking powder, salt and oatmeal until well combined. Stir in flour until just combined. Stir in peanut butter cups until combined.
Drop 8-10 rounded scoops of dough onto a large cookie sheet. Bake 10-12 minutes, or until light golden brown. Cool 2 minutes before transferring cookies to a wire rack.
