


4 large bananas
2 cups whole wheat flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup oats + additional for sprinkling on top
1/2 cup natural peanut butter
2 tablespoons butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar
1 1/2 teaspoons vanilla extract
2 large eggs
1/2 cup milk
2/3 cup chocolate chips or peanut butter chips (optional)
Heat oven to 400 degrees F. Peel the bananas and place on a greased baking sheet. Bake 15 minutes or until slightly golden brown and bubbly. When cool, puree in a food processor.
In a medium bowl, sift together flour, baking powder, baking soda and salt; whisk in oats until combined. In a large mixing bowl, using a mixer on medium speed, beat together peanut butter, butter, sugar, brown sugar, vanilla, and banana until creamy and well combined. Beat in eggs until well combined. Reduce mixer speed to low and beat in flour mixture, alternating with milk until just combined. Stir in chips until combined.
Spread batter into a greased loaf pan. Sprinkle with oats, if desired. Bake 50-55 minutes or until well risen, golden brown, and a toothpick inserted into bread comes out with moist crumbs attached. Cool on a wire rack.
Yum - roasted bananas! Haven't tried that. We are at the same point with our eating. Ours will start "today". ;)
ReplyDeleteI like that Costco has a variety of organic products, more than our Sam's carries. My favorite thing at Costco so far (we just joined in November) is the variety of tomatoes - I love the Heavenly Villagio Marzano tomatoes - and more choices of brands than we had at Sam's, if that makes sense.
Yay! Go healthy eating! Oh man, you're making me regret cancelling our Costco membership! It seemed like they had more variety than Sam's.

ReplyDeleteThere are so many things I love to buy at Sam's! My favorite recent purchase is slip-on Skechers with memory foam. They are so comfy that I went back and bought two more colors. They've also had a terrific selection of charcuterie meats and cheeses lately.
I will have to check out the sketchers! I bet they'd be good to travel with. It seems like Sam's has some nice cheese. Can't wait to try them all.
