Cookies made with crystallized ginger, sweetened flaked coconut, lime zest and macadamia nuts.



You Put the Lime in the Coconut-Ginger Cookies
Ingredients:
3 tablespoons finely chopped crystallized ginger
2 tablespoons turbinado sugar
1 1/2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon finely ground sea salt
1 1/2 teaspoons finely grated key lime peel
1/4 cup unsalted butter, softened
3 tablespoons coconut oil, room temperature
1/2 cup granulated sugar
2 large eggs
1 teaspoon coconut extract
1 cup sweetened flaked coconut, toasted*
1/2 cup finely chopped cashews or macadamia nuts, toasted*
Directions:
Stir together crystallized ginger and turbinado sugar in a small bowl, and set aside.
Coat a large sheet pan with cooking spray, etc.
In a medium sized mixing bowl, sift together flour, baking soda, and salt.
In a large mixing bowl, using an electric mixer on medium speed, beat together lime peel, butter, coconut oil, and sugar, until creamy, about 1 minute. Beat in eggs and coconut extract until well combined. Reduce mixer speed to low and gradually beat in flour mixture until combined. Stir in coconut, and nuts, until combined.
Chill dough in the refrigerator for 20-30 minutes, or until it's stiff enough to handle.
Preheat oven to 375 degrees F. Shape cookie dough into 1-inch balls, using your hands. Lightly roll balls in ginger-sugar mixture, to coat. Place on prepared sheet pan and flatten slightly, using the palms of hands. Bake for 11-13 minutes, or until golden brown. Cool for 2 minutes on pan before transferring to wire racks to cool completely.
*To toast coconut, bake at 350 degrees for 10 minutes, or until light golden brown, stirring occasionally.
*To toast nuts, place in a dry skillet over medium heat and cook for 5-6 minutes, stirring often, until golden brown and fragrant.
Yield: 22 cookies

I've got some ginger beer sitting in my fridge from some recipe I tried once. I agree- ick to drink on its own.

You could make cupcakes with the rest? I made "rootbeer float" cupcakes this weekend and they were pretty good, so I could see where ginger beer cupcakes would be tasty? I'll post about the rootbeer ones when I'm not feeling so lazy.

ReplyDeleteAh, ginger beer! My first bottle came as a mistake, thinking it was my mild, familiar ginger ale. I made some ginger cookies recently with diced stem ginger, which did a great job of replicating that spicy peppery ginger flavor the beer has, but within the soothing cocoon of a cookie.
ReplyDeleteI would use the leftover two bottles for a savory meat dish, Like a pork roast slow cooked in a ginger beer BBQ SAUCE or something. Maybe you could have taken fresh ginger and made a ginger infused simple syrup for the cookies?

I've never had ginger beer, but like your mom I like root beer, banjo playing, not black licorice but I like black jelly beans so maybe I'd like it. I'll have to keep my eye out for it. Cool cookies!

ReplyDeleteginger beer is delicious. the key to avoiding coughing is to exhale as you sip/swallow. For cooking, hmmm...try using it in pancake/waffle batter. Try it as an ice cream float (vanilla, peach, coconut, chocolate would all be tasty)! It would be good for chili. Or maybe use it to cook risotto or rice? i dunno

At your next party, mix the ginger beer with rum and orange juice for an excellent cocktail - add a splash of bitters. (This is my house cocktail.)

ReplyDeleteI'm really embarrassed to say I've never even seen coconut extract. I guess it must be there alongside the lemon and almond. Where do you get coconut oil that isn't for slathering all over your body and giving yourself skin cancer? (Well, not YOU, but you know what I mean...)

ReplyDeleteSounds like a good idea, anyway! I made a ginger tea for my dad (chopped ginger sliced simmered with water), but I didn't add enough honey to his cup. He said it was fairly strong and it reminded him of a homemade ginger ale he drank at a Jamaican restaurant. He was able to dilute it about 4 times and it didn't diminish the flavor!

I also love ginger beer and black licorice, but not quilting. Ginger beer is great in a Moscow Mule, or with a splash of rum.

What to do with leftover ginger beer: add vodka and lime juice. My little neighborhood pub serves these and calles it a "Moskow Mule"- I think theres some mint in there too- it's my favorite cocktail and I am constantly stumbling home after 3 or 4 of them. They are SMOOOOTH.

This looks so yums. i absolutely love ginger beer but never would think of using it in COOKIES - right on! i actually just looked up a recipe for making your own ginger beer and on this jamaican site it said that you have to be tough to drink the homemade stuff b/c it will hurt going down and burn your throat! HA! not sure if i'll be making it. never been to this blog before... looks great and i'm going to poke around more.
