Brewberry Brownies
Ingredients:
1/2 cup unsalted butter
1/2 cup blueberry beer
4 ounces coarsely chopped bittersweet chocolate
1 cup all-purpose flour
1/3 cup dark cocoa powder (such as Hershey's Special Dark)
1/2 teaspoon salt
2/3 cup granulated sugar
1/2 cup firmly packed brown sugar
2 large eggs
1 teaspoon vanilla extract
10 ounces white chocolate chips
3/4 cup fresh blueberries, patted dry
Directions:
Preheat oven to 375 degrees F. Line an 11x8-inch baking dish with foil; coat with cooking spray.
Melt 1/2 cup butter in a small saucepan over medium heat, and cook the butter, stirring frequently, until it starts to brown and foam. Remove pan from heat and stir in beer and bittersweet chocolate, until melted and smooth; set aside.
In a medium sized mixing bowl, sift together flour, cocoa powder, and salt.
In a large mixing bowl, using an electric mixer on high speed, beat together granulated sugar, brown sugar, eggs, and vanilla, for 4 minutes. Reduce mixer speed to low, and beat in melted chocolate mixture, until well combined. Stir in flour mixture, until just combined.
Scrape batter into prepared dish; bake at 375 degrees F, for 25-30 minutes, or until set. Plunge dish into a larger baking dish, filled with ice water, until brownies are cool.
Place white chocolate in a microwave-safe bowl. Microwave until chocolate is melted, about 1 minute, stirring every 20 seconds. Pour white chocolate over brownies and smooth the surface, using a rubber spatula. Push blueberries evenly into the surface.
Freeze the brownies until set, about 1 hour. Lift the foil-lined brownies out of dish, and slice into bars, using a sharp knife.
Yield: 12 brownies

They look lovely and gooey. I don't think I could drink the blueberry beer, but it sounds perfect for these brownies.

I made cupcakes with Guinness. They were lovely and moist with a slight bitterness, almost as if it had 70% chocolate in them.
Interesting - I have never seen blueberry beer before but it seems to have given the brownies a lovely deep colour and a wonderful texture.

ReplyDeleteOhhh I've had this beer before. My favorite remains Wachusetts blueberry ale but this one is a little bit more syrup-y so I'm sure it works well for a recipe. Might have to try this!!!

Anon- Sorry for the delayed response, and thanks for dropping by. This is a habit that I picked up a few years ago. I can't remember where I read it! I think of it as stopping the cooking process as soon as possible, resulting in a fudgier brownie. I like to cool them off as soon as possible. Then I'll stick them in the freezer to get them really firm, then slice. I think it truly does change the texture of a brownie. I need to look into this more. I'm sorry that's not a great explanation! The process isn't necessary - so if it's too much of a hassle, don't worry about it.

ReplyDeleteI am not a huge fan of blueberries, but this recipe looked awesome so I decided to play a bit with it. Being up in north Idaho, I decided to use a local huckleberry ale and huckleberry jam on the top. I also added a bit of butter and cream to the white chocolate to thin it out so I could "marble" the beautiful purple jam with the white topping.

ReplyDeletei would like to point out emiline that if you like chocolate and beer i love wild blue for a blueberry beer as i am a beer connosiuer sorry if spelled wrong....but i want to inform you of another beer i think would rock in a brownie and i would appreciate if you could invent one and then email me a reply or the recipe when you do but the beer is a chocolate beer made by Miller and i dont remember the name of it but it comes in singles or a 4 pack and yes they still sell it i see it all the time but honestly oh my god it is very good.... it really has a real chocolate taste and the beer itself is a sipping beer but i love it and i love good chocolate i dont eat hersheys uck i am all about single origin top of the line chocolate so i hope my opinion matters and i hope you can construct something for me and for all the readers....i am a chef in my third year of college for culinary and i specialize in asain cuisine ...i like to bake but would rather create other foods as in cooking i dont have to measure ohhh i hate that precision measuring thing i like to just say hmmm lets toss this in and do that and you understand well hope this was good for ya....have a great day and please let me know when or if you can create something with this ....!!!!

Emiline . . . oops forgot to add, it's by AB, but doesn't flaunt it like all over the label and the 6 pack I had said it was bottled somewhere in New York it said nothing about AB on it when I purchased mine. Look for the blue bulldog though! It's such a tasty beer!
