Oreo Cream Cheese-Swirled Brownies

Ingredients:
1/2 cup (1 stick) unsalted butter
3/4 cup granulated sugar
8 ounces (1 package) cream cheese, softened
3/4 cup confectioners' sugar
2 teaspoons vanilla extract
1 cup all purpose flour
1/2 cup unsweetened dark cocoa powder
1/2 teaspoon salt (scant)
2 large eggs
1 1/3 cups coarsely chopped Oreo cookies

Directions:
Preheat oven to 350 degrees F. Line an 8x8-inch square baking dish with foil; coat foil with cooking spray.

Melt the butter in a small saucepan, over medium heat. Whisk in sugar and bring to a boil, whisking frequently; boil 1 minute. Set aside to cool for 5 minutes.

In a small mixing bowl, using a mixer on medium speed, beat together cream cheese, confectioners' sugar and vanilla extract, until well combined, about 1 minute.

In a medium sized mixing bowl, sift together flour, cocoa powder and salt; whisk until combined.
In a large mixing bowl, whisk together eggs, until combined. Whisk in melted butter-sugar mixture until well combined. Stir in flour mixture until just combined, followed by Oreo cookies.

Spread half of brownie batter into baking dish, followed by cream cheese layer; dot the top with remaining brownie batter, and spread evenly, as best as you can. Run a knife through batter to make "swirls".
Bake at 350 degrees F, for 23-25 minutes, or until...I don't know. Brownies are difficult to judge. They'll be done. Don't worry. Just take them out at 25 minutes.

Cool on a wire rack to room temperature before slicing. Lift foil out of baking dish, and slice into 9 bars. For easier slicing, try freezing the brownies for 30-60 minutes.

Yield: 9 brownies

  4. Wow! I've been diagnosed with rich desserts immunity as well! It's a bad, bad condition. Treatmeant is eating those brownies, so please pass a couple. Brownie, Cheesecake and oreos are 3 of the best things ever invented, so I know these are great!

  7. Too cruel! I'm nursing a sore throat and trying to avoid sweets but just looking at these make me want to tip the sugar bowl back and down the contents. Wish I had something this good to devour. I would stop after one, I promise. (one pan, that is)

  12. :P That whole richness thing happens to me too! I think we get desensitized from all the baking, but I think all that taste testing makes us better bakers in the long run :). These do look rich, but perfect, yummy...and I love the way they look!

    i'm always amazed at my fortitude for rich desserts. my response when my fellow dessert-eaters say "wow, this is rich, i can't eat anymore" is "well, hand it over, i've already finished mine. anybody else too weak to finish theirs?" :)

  25. Common sense would make you believe that when you make an indulgent dessert, you might be turned off from eating it knowing all the bad things that go into it. Well, I personally don't adhere to this as I'm also immune to rich desserts!! :)

  44. Other things I like about these brownies are the density and the darkness of the chocolate. There's nothing worse(to me) than a cake-like brownie. These brownies have the density of solid rock, the way it should be.

  59. I made these this past weekend and they are delicious, they taste like chocolate cheesecake! Only problem I had was that the brownie batter was very thick, it was the texture of brownies before it was even put in the oven. That made it difficult to spread the top layer on top of the cream cheese mixture, and also difficult to make swirls because if you stick a knife in to make swirls, it's like you are cutting the brownies due to the texture. I'd like to make these again since they were so tasty, I just don't understand how to properly spread the top layer or make swirls because of the brownie batter texture since it is not liquid.
