Coconut-Chocolate Chip Bread Pudding

Coconut-Chocolate Chip Bread Pudding

Ingredients:
4 large eggs
3/4 cup heavy whipping cream
1/2 cup coconut milk
3/4 cup granulated sugar
1 teaspoon vanilla extract
8 cups cubed challah, babka, brioche, etc.
1/2 cup semi-sweet or bittersweet chocolate chips
1/2 cup white chocolate chips
1/2 cup sweetened flaked coconut

Directions:
Preheat oven to 350 degrees F. Generously butter an 8x8-inch square baking dish with butter

In a large mixing bowl, whisk together eggs, cream, coconut milk, sugar and vanilla until well combined. Stir in cubed bread, chocolate chips and white chocolate chips until combined. Allow mixture to set for 10 minutes. Pour bread mixture into baking dish and evenly sprinkle with flaked coconut.

Bake at 350 degrees F, for 25-30 minutes, or until coconut is golden brown and pudding is set.

Makes 9 servings

  6. Ha, I am so right there with you. I buy various types of "chips" like they're going out of style. As a Southerner, the bagged lettuce almost doesn't surprise me. We buy some weird shit in a storm. But now I live in Iowa and I miss snow and ice actually being a reason not to leave the house. Right now it's minus three and out the door I go :-(

  14. I know I'm going to piss you off when I say that it's supposed to be 80 degrees here on Friday. We have some pretty cold mornings but it's nice and toasty for the afternoon :)

  25. Challah bread pudding ranks up there as one of the most decadent and sought after desserts on my list of favorite decadent and sought after desserts. Yet somehow, I've never thought of adding chocolate chips nor coconut! I guess I'm obligated to do so, then. Nice recipe :)

  36. Those sound like good supplies to me. My hurricane supply list generally includes Spaghetti-Os, boxed mac n' cheese, BBQ potato chips, assorted Little Debbie cakes and donuts. Hurricane/blizzard calories don't count- it's about survival!

    Weirdly, the thing that sells out fastest during a hurricane is ice cream. Weird, because if your power goes out in the middle of summer in Florida, that ice cream has, like, 45 seconds until it's Cherry Garcia soup.

  38. ...bagged lettuce? So strange! Yeah...I'm pretty tired of the cold, I think I'm turning into a ghost from lack of sun :P. I need to get out more! I would happily stay home to enjoy some of this bread pudding, though. I am a huge bread pudding fan...also love the chocolate chips, this one's a winner, hands down :D.

  39. That sucks that it is all nasty outside, it is cold here but cold to me is like 36 degrees. We are in California, in the armpit, it isn'tp pleasant like San Diego or anything.
    Seriously salad huh, I think I would want a cup of hot cocoa and some comfort food rather than salad, and I love salad!

    Hope the snow has melted. I had to hope a train at 6 AM yesterday in heavy snow to be at a meeting in Boston at 10:30. I was 40 minutes late. It was some pretty nasty weather on the east coast this week - and I had no choice but to go out!

    Maybe salad makes people think of summer?

  43. Here in OK, we've been getting the same weather as you, so I've been confined to barracks for several days. I had to go to Joplin today, I-44 and main roads were okay, but the side roads were a nightmare.

    I can't believe that people want to eat salad when it's bloody perishing.
