Gourmet Dirt Cake

Cake
1 3/4 cup all-purpose flour
1/3 cup unsweetened cocoa powder
2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, softened
1 1/4 cups granulated sugar
2 large eggs
2 teaspoons vanilla extract
3/4 cup semi-sweet chocolate chips, melted
1 3/4 cup milk

Frosting:
2/3 cup granulated sugar
1/3 cup all-purpose flour
3 tablespoons unsweeted cocoa powder
1/8 teaspoon salt
1 cup milk
1 cup unsalted butter, softened
1 cup semi-sweet chocolate chips, melted

1 1/3 cups ground Oreo cookies
Gummi worms

Preheat oven to 350 degrees F. Butter and flour 2 (9-inch) round cake pans, or grease using your preferred method.

In a medium sized mixing bowl, sift together flour, cocoa powder, baking powder, baking soda and salt.
In a large mixing bowl, using a mixer on medium speed, beat together butter and sugar until creamy, about 1-2 minutes. Beat in eggs and vanilla until combined; beat in melted chocolate until combined. Reduce mixer speed to low and beat in flour mixture, alternating with milk, until batter is well combined and smooth, about 2-3 minutes; divide batter evenly into prepared cake pans.

Bake for 35-40 minutes, or well risen, cake pulls away from edges, and a toothpick inserted into center comes out with moist crumbs attached; cool for 12 minutes before running a knife around outside edges, and inverting onto wire racks to cool completely.

To make the frosting: In a small saucepan, whisk together sugar, flour, cocoa, salt and milk; bring to a boil, whisking frequently. Boil 1 minute or until thickened; remove pan from heat and strain mixture into a small bowl. Cool completely in the refrigerator or freezer.

Beat the butter until creamy, about 1 minute, in a large mixing bowl, using a mixer on medium speed. Beat in "chocolate pudding" mixture until well combined, about 1 minute. Beat in melted chocolate until well combined and fluffy, about 2 minutes.

To assemble the cake: spread a layer of frosting over one side of cake and top with 1/3 cup oreo cookie crumbs; top with second cake layer. Spread remaining frosting over cake. Pack remaining cookie crumbs into sides and top of cake; decorate with gummi worms.

  1. I know what you mean about the urge to bake. I get it too. But my least favorite part is the mess I am left with afterward! I have been trying to give at least half of my baked goods away. People get so excited when you surprise them with cookies or cake, and I don't have to feel guilty about assigning the calories a permanent place on my thighs!

  2. Can't relate because I rarely ever get the urge to bake. If I do I find a couple glasses of scotch makes that urge go away. However, it manages to bring out a similar mad scientist meats MacGyver persona.

Those Quaker oatmeal packets are crack. Almost as bad as their new granola bars.

    Looks amazing!

  3. This cake looks like so much fun, especially for a party. You can keep the gummy worms. I'll dive into the dirt.

  6. hehe, i love to grocery shop and do the same thing most of the time! except i would've walked home with those 3 things :) i used to love these (in little cups) when i was a kid!!

  7. That looks so realistic...Ewww! But that cake recipe looks really good and the icing recipe sounds fabulous and really different. Where do you come up with these things?!

  8. Super yummy looking cake!! What's happening with your career stuff? I know you were thinking about culinary school -- but how about apprenticing with a pastry chef? You can learn, and bake a ton, and it will all get eaten! :) Just a thought.

Oh, and to answer your question, no more than 7. ;)

  9. The cake looks super tasty! As for the high fiber packets... fiber is good for you so no worries ;) Plus those little packets are tiny, you have to eat at least two for breakfast if you want to be full :)

  10. I'm the same way. I have so many different ideas bouncing around in my head that I wish someone would pay me to make them because I don't have the money or the time to try them all. And the list of things just keeps growing and growing.
I do love dirt cake. Even the store-bought version, but yours looks even better!

  12. you know I'm with you on wanting to bake all the time but it's expensive and sometimes it goes to waste. I hear ya! I have a fussy hubby. But I have heard of food bloggers who hire kids, neighbors, single guys, etc to eat their creations they in return pay a little money towards the food. I know I've thought about it. LOL

  13. oh dear, I know EXACTLY what you mean. I'm the same way! my kitchen is piled with baking ingredients and equipment, and the moment I have some money it's spent on more baking ingredients and equipment! I have so many things I want to make, too. I love when my friends birthdays come or there are special occasions so I have the excse to bake someting new and time-consuming! haha!
btw, you evil, you! now I've got another recipe I NEED to try in my already bursting file! but cake looks soooooooo good and fun and impressive!

  14. Oh my son would love that cake! As far as how many packets of oatmeal one should eat over a few days - I say as many as you want. Hey, oatmeal is healthy and good for you!!!!

  16. Your grocery shopping adventure reminds me so much of the show, Chopped, on the Food Network. I bet your little mind starts racing when they open those baskets!

We all appreciate that we get to benefit from your creative mind. Oh and I'll gladly sample any leftovers you make!

  17. Mmmmm, dirt cake!! I've made dirt cupcakes before...love the gummy worms. The Quaker High Fiber Maple-Brown Sugar Oatmeal is SO good...so I think a person can eat as many as they want. :)

  18. i've seen dirt cake before, usually advertised in magazines for little kids' birthdays, but i'd love to bake that for an ADULT sometime! ha :D

  19. Haha, maybe about as many Splenda with Fiber packets as I consume everyday :) Oy, I need to cut back. Although, there's not really anything natural about Splenda... This dirt cake sounds fabulous. Thank you, thank you for adding cake to the mix here. Dirt cake should have cake in it! Pudding and cake pair so well together!

  20. Awww, your post actually made me feel a little better because I'm the same way and it's nice to know that I'm not the only one! I have a long list of recipe ideas on my computer too and a bunch more rumbling around in my head.

I would love a slice of your dirt cake - it looks fantastic and reminds me of camp :)

  21. Heh, I haven't had dirt cake in years. Good times. :)

  23. I am always getting the urge to bake and cook things that I either a. can't afford b. don't have time for or c. are things Sir Pickypants won't eat. I am constantly obsessed with food. I never stop thinking about it. Why else would I have a food blog?

Very nice cake. This is much better than the standard pile of instant pudding and Cool Whip.

    ReplyDelete
  24. Awesome! I want a slice of this gourmet dirt! :-) It calls to mind that book "How to Eat Fried Worms" --wasn't that the title?

    ReplyDelete
  25. I am always in the mood to bake! Love it! Your cake is so fun!

  26. There really is not greater pleasure than baking my dear...so bake away!!! :o) I just wish I was around you to eat some of your treasures!!! I love dirt cake!!! I remember having it for the first time as a kid and begging for it nearly everyday after having that first taste!

  27. I loved dirt pudding as a kid, but I haven't had it in forever. Your cake is cute- I love the flower pot!

Ummm... I guess you can't really eat too much oatmeal... but you sure will have a healthy digestive track with all that fiber!

  28. How fun! I never made this, but will keep in mind!

  29. I had the perfect excuse for baking when we had builders working on our house. It's not a coincidence that I baked most of my flour experiments during that time. Mind you, we had builders in our house for over two years ... perhaps that's not a coincidence, either ;-) .

  30. I love that you made this dirt cake from scratch! I also love that you are obsessed with baking so much - I can't think of anyone who should be more obsessed! You just rock out your sweet self!

    ReplyDelete
  31. My daughters birthday is fri and I have been searching high and low for a birthday cake, and BAM! FOUND IT!! I'm so glad you posted this! Why didn't I think of that?

    ReplyDelete
  32. I think you'll know you've eaten too many oatmeal packets when you start to get a ring around your tush from all the bathroom trips.

And you can send me stuff, if you want. We're about to move into another place that is less bake-friendly than this one - no mixer, no cake pans, only cookie sheets and muffin tins.

    ReplyDelete
  33. PS, That was so fun to see you on Tastespotting!

    ReplyDelete
  34. You should keep a little food journal in your purse and jot down ideas as they come. This was a favorite treat of mine as a kiddo-yum!

    ReplyDelete
  35. I know what you mean! I don't really bake much, but I make SO much food that we have leftovers forever! I need to start cooking for the fire department or something! LOL The dirt cake is so cute. Yeah, it'd be something men would like :)

  36. this post just made me smile. i'm ten years older than my sister, and had very little interest in doing anything with her when i was a teenager and she was a small, annoying 5 year old. but i used to take her to this bakery near my house on sundays while my mom cleaned the house, and we would share a small dirt cake. i actually got to know that little five year old over this cake, and she and i still have a slice every now and then - now that she's a freshman in college and i'm knocking on the door of turning 30.

  38. I was at a party Sunday where everyone was talking about Dirt Cake. You are right men love it. They had the most comments.

I'm in love with the new Quaker Oats True Delights!

  39. haha, I'm exactly the same. All I want to do is bake but since I live with just me and my boyfriend a lot of my food goes to waste. Still, it's fun to play! I'm in the middle of writing my dissertation for uni and all I can think about is putting the laptop down and making a bakewell tart to celebrate St Georges Day. I'm obsessed!!

I love your cake, such an amazing idea. You've already set me away thinking about little cupcake versions!

  40. Em! I've never had dirt cake, but I would be pretty popular around here if I made one.

    ReplyDelete
  41. i'd limit my oatmeal intake to 12 packets. :)
meanwhile, i can empathize with your need to bake and lack of excuses (and funds) to do so. letting them go to waste is just unacceptable...but so is having to buy a new wardrobe since you've busted out of your current one... :)

  42. Ok, you're hired - I need someone with a baking obsession for Psychgrad's wedding in June :). I saw your episode on Food TV again last night - you should have won - I mean 1 point...give me a break. You looked so sweet and smiled through the whole thing.

  43. When my sons were growing up ( yes, this is a true story) I baked so often that they didn't like things if they weren't "fresh" so I would pass 2 day old (give me a break!) baked goods to my friend Pauline's family because she hates to cook and they inhaled it all. Now that my sons are 31 and 28 - they make requests for cookies, zucchini bread, whatever. My son Todd even asked me to teach his girlfriend Ravy (Cambodian) how to make Almond Tarts so she could bake them for him! Of which she promptly responded, "Todd, if you like them - YOu should learn.". So I showed them both. Your recipes look wondee! Thanks for sharing...Jennifer jennsthreegraces blogspot

  44. I can totally remember my mom making these for us when we were kids, and loving them! Always nice to be playful in the kitchen. I'm sure your grocery store visits are therapeutic, and foster greater creativity in your cooking - so wander away! :)

    Jeff, Mmm, scotch.

    Sue, is it too creepy?

Cookiepie, absolutely nothing is happening with my career!

    Sarah, exactly!

Dawn, that sounds like an excellent idea.

Colin's Mom, that is such a sweet comment.

Sara, you are incorrect about that.

Carrian, I hope you like it. It's a little crumbly.

    Amy, Ewwww.

Heather, that is such a nice story. Glad I could bring back memories.

    Grace!

Giz, I had no idea they were airing it again. Maybe they air it more in Canada.

Jennifer, thanks for the nice comment. I'm hungry for zucchini bread now.

  51. I have been having trouble getting the urge to bake lately too. I tried making cupcakes tonight and ended up throwing them out...maybe I am getting too critical of myself?

    This looks wonderful!

  52. Hmm, can I come over and help eat all your goodies? Buying butter every few days does get expensive...

Dirt cake reminds me only of good things! I love the gourmet touch.

    ReplyDelete
  53. Such a cute dirt cake! I love the pot on top! I once made one in a plant potter, but it didn't come out anywhere nearly as great as yours!

    ReplyDelete
  54. MMM! What memories that cake brings back. I love that combination!

  55. If you lived closer to me I would hire you to back! Your dirt cake looks so yummy!

  56. I ghave this recipe to my friend Gretchen - her 6 year old son is a wilderness guy. One day he came in the kitchen with a live worm and said "Mom, can I eat this?" and she said "I guess so, if you wash it first." She's more mellow than I am. Well, she glanced over at him watching tv and realized he had been munching on the same worm for 15 minutes! Now they have a book on edible wild things in case he asks if he can munch on it. I remember when....

    ReplyDelete
  57. Indded, I agree, if you lived closer to Brussels, Belgium, I would defenetely hire you to bake all my cakes!!

    Creative person you are, Emily!!

    ReplyDelete
  58. I think with your energy, creativity and passion you are talented enough to find a part-time job at a bakery somewhere. I'm sure there's something out there that can fulfill you!

  59. Food is addictive, plain and simple. But your dirt cake looks amazing!

  61. I'm sooooooo with you about obsessing with baking AND I bake for a living, so that's even worst! I have baking in my head ALL the time (oh and in my hips too). I love dirt puddings, I get to make it often since it's my cousin's favourite thing. It's nice to see it in a cake form!

    ReplyDelete
  62. I am totally in the same place as you. I will go around in the store, lovingly caressing items that would like to jump into my cart & come home with me; but due to their expense, I just let my ideas joggle around in my head until later. I'll write the down in my handy-dandy notebook, but sheesh. I can't afford my ideas. At least I get to bake at work. (even though it isn't stuff I want to do. Well, I like making the biscuits. That part is fun)

    ReplyDelete
  63. I hear you on the baking obsession - I have it too. You know it is bad when people at work tell you are obsessed. Sometimes I get so excited about a reason to bake, its like I feel justified. I am glad you bake a lot, love reading about it.

    ReplyDelete
  64. Have to confess that "dirt cake" is a new one on me! I expected not to like it but when I saw those cute jelly worms crawling out of it I realised the error of my ways!!!!

    ReplyDelete
  65. My goodness, I wish I could be a FRACTION of as enthusiastic as you are about baking!

    ReplyDelete
  66. this brings back memories! whenever i had to bring in a dessert for my birthday at school my mom would make dirt cups! so good!!

    ReplyDelete
  67. I would say 10 packets per couple days is pretty normal.

    ReplyDelete
  68. I love this....I made dirt flower pots for a recent party for my knit group :)

    ReplyDelete
  69. My daughter (10) and I made this cake. It might be old new favorite chocolate cake batter, a nice delicate crumb and my daughter appreciated that it didn't have coffee flavoring in it. I must have overcooked the pudding mixture because it was impossible to strain, so I had to modify the frosting a little (just made a basic chocolate buttacream). Anyway, thanks for the recipe!

    ReplyDelete
  70. I love this cake! I am thinking about trying it for my 3 year old's bday! Might do a tiered cake with worms and choc. rocks! If it works I will post pictures! Thanks for the idea!

    ReplyDelete
  71. I know exactly what you mean! My freezer has margarita cupcakes, brownies, banana bread, and zucchine muffins in it - and that's only from the last four days. I also tend to wander around the grocery store picking up food products and reading the ingredient lists ... my roomates always leave me a good hour if I'm going shopping.

I also wanted to let you know that I made the cake for my brother's friends birthday. It was delicious, though I ended up topping it with the whole box of oreos. (This is what happens when your 15 year old brother starts crushing the cookies!) Thanks for the recipe!

  72. I know this post is three years old now, but just found it and made this for my 6yr old girls birthday, it was a huge hit. Everyone loved it. I am forwarding on the link to all the friend that were here today.

    Thanks so much.
