Gourmet Dirt Cake
Cake
1 3/4 cup all-purpose flour
1/3 cup unsweetened cocoa powder
2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, softened
1 1/4 cups granulated sugar
2 large eggs
2 teaspoons vanilla extract
3/4 cup semi-sweet chocolate chips, melted
1 3/4 cup milk
Frosting:
2/3 cup granulated sugar
1/3 cup all-purpose flour
3 tablespoons unsweeted cocoa powder
1/8 teaspoon salt
1 cup milk
1 cup unsalted butter, softened
1 cup semi-sweet chocolate chips, melted
1 1/3 cups ground Oreo cookies
Gummi worms
Preheat oven to 350 degrees F. Butter and flour 2 (9-inch) round cake pans, or grease using your preferred method.
In a medium sized mixing bowl, sift together flour, cocoa powder, baking powder, baking soda and salt.
In a large mixing bowl, using a mixer on medium speed, beat together butter and sugar until creamy, about 1-2 minutes. Beat in eggs and vanilla until combined; beat in melted chocolate until combined. Reduce mixer speed to low and beat in flour mixture, alternating with milk, until batter is well combined and smooth, about 2-3 minutes; divide batter evenly into prepared cake pans.
Bake for 35-40 minutes, or well risen, cake pulls away from edges, and a toothpick inserted into center comes out with moist crumbs attached; cool for 12 minutes before running a knife around outside edges, and inverting onto wire racks to cool completely.
To make the frosting: In a small saucepan, whisk together sugar, flour, cocoa, salt and milk; bring to a boil, whisking frequently. Boil 1 minute or until thickened; remove pan from heat and strain mixture into a small bowl. Cool completely in the refrigerator or freezer.
Beat the butter until creamy, about 1 minute, in a large mixing bowl, using a mixer on medium speed. Beat in "chocolate pudding" mixture until well combined, about 1 minute. Beat in melted chocolate until well combined and fluffy, about 2 minutes.
To assemble the cake: spread a layer of frosting over one side of cake and top with 1/3 cup oreo cookie crumbs; top with second cake layer. Spread remaining frosting over cake. Pack remaining cookie crumbs into sides and top of cake; decorate with gummi worms.

I know what you mean about the urge to bake. I get it too. But my least favorite part is the mess I am left with afterward! I have been trying to give at least half of my baked goods away. People get so excited when you surprise them with cookies or cake, and I don't have to feel guilty about assigning the calories a permanent place on my thighs!
ReplyDeleteCan't relate because I rarely ever get the urge to bake. If I do I find a couple glasses of scotch makes that urge go away. However, it manages to bring out a similar mad scientist meats MacGyver persona.

The cake looks super tasty! As for the high fiber packets... fiber is good for you so no worries ;) Plus those little packets are tiny, you have to eat at least two for breakfast if you want to be full :)

you know I'm with you on wanting to bake all the time but it's expensive and sometimes it goes to waste. I hear ya! I have a fussy hubby. But I have heard of food bloggers who hire kids, neighbors, single guys, etc to eat their creations they in return pay a little money towards the food. I know I've thought about it. LOL

I'm the same way! my kitchen is piled with baking ingredients and equipment, and the moment I have some money it's spent on more baking ingredients and equipment! I have so many things I want to make, too. I love when my friends birthdays come or there are special occasions so I have the excse to bake someting new and time-consuming! haha!

Mmmmm, dirt cake!! I've made dirt cupcakes before...love the gummy worms. The Quaker High Fiber Maple-Brown Sugar Oatmeal is SO good...so I think a person can eat as many as they want. :)

ReplyDeleteI had the perfect excuse for baking when we had builders working on our house. It's not a coincidence that I baked most of my flour experiments during that time. Mind you, we had builders in our house for over two years ... perhaps that's not a coincidence, either ;-) .

ReplyDeletethis post just made me smile. i'm ten years older than my sister, and had very little interest in doing anything with her when i was a teenager and she was a small, annoying 5 year old. but i used to take her to this bakery near my house on sundays while my mom cleaned the house, and we would share a small dirt cake. i actually got to know that little five year old over this cake, and she and i still have a slice every now and then - now that she's a freshman in college and i'm knocking on the door of turning 30.

haha, I'm exactly the same. All I want to do is bake but since I live with just me and my boyfriend a lot of my food goes to waste. Still, it's fun to play! I'm in the middle of writing my dissertation for uni and all I can think about is putting the laptop down and making a bakewell tart to celebrate St Georges Day. I'm obsessed!!

ReplyDeleteWhen my sons were growing up ( yes, this is a true story) I baked so often that they didn't like things if they weren't "fresh" so I would pass 2 day old (give me a break!) baked goods to my friend Pauline's family because she hates to cook and they inhaled it all. Now that my sons are 31 and 28 - they make requests for cookies, zucchini bread, whatever. My son Todd even asked me to teach his girlfriend Ravy (Cambodian) how to make Almond Tarts so she could bake them for him! One day he came in the kitchen with a live worm and said "Mom, can I eat this?" and she said "I guess so, if you wash it first." She's more mellow than I am. Well, she glanced over at him watching tv and realized he had been munching on the same worm for 15 minutes! Now they have a book on edible wild things in case he asks if he can munch on it. I remember when....

I'm sooooooo with you about obsessing with baking AND I bake for a living, so that's even worst! I have baking in my head ALL the time (oh and in my hips too). I love dirt puddings, I get to make it often since it's my cousin's favourite thing. It's nice to see it in a cake form!

I will go around in the store, lovingly caressing items that would like to jump into my cart & come home with me; but due to their expense, I just let my ideas joggle around in my head until later. I'll write the down in my handy-dandy notebook, but sheesh. I can't afford my ideas. At least I get to bake at work. (even though it isn't stuff I want to do. Well, I like making the biscuits. That part is fun)

ReplyDeleteMy daughter (10) and I made this cake. It might be old new favorite chocolate cake batter, a nice delicate crumb and my daughter appreciated that it didn't have coffee flavoring in it. I must have overcooked the pudding mixture because it was impossible to strain, so I had to modify the frosting a little (just made a basic chocolate buttacream). Anyway, thanks for the recipe!

ReplyDeleteI know exactly what you mean! My freezer has margarita cupcakes, brownies, banana bread, and zucchine muffins in it - and that's only from the last four days. I also tend to wander around the grocery store picking up food products and reading the ingredient lists ... my roomates always leave me a good hour if I'm going shopping.
