Mini Peanut Butter-Oatmeal Chocolate Chip Cookies

1/4 cup unsalted butter
3/4 cup all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups quick oats
3/4 cup firmly packed brown sugar
1/2 cup creamy peanut butter
1 large egg
1 teaspoon vanilla extract
1/2 cup mini chocolate chips

Preheat oven to 375 degrees F. Grease cookie sheets.

Melt butter in a small saucepan over medium heat; continue to cook the butter, whisking frequently, until it starts to brown and foam, about 2-3 minutes. Set aside for 10 minutes.

In a medium mixing bowl, sift together flour, baking soda and salt; whisk in oats until combined.
In a large mixing bowl, using a mixer on medium speed, beat together brown sugar and peanut butter until creamy, about 1 minute; beat in browned butter until combined. Beat in egg and vanilla until combined. Reduce mixer speed to low and beat in oat mixture until combined; stir in chocolate chips.

Roll tablespoons of dough into balls, place on cookie sheets, and flatten slightly. Bake for 6-8 minutes or until golden brown around edges. Transfer to wire racks to cool.

Makes 4 dozen mini cookies

  6. Wow, you really went Boxcar Children on us? I haven't thought about them in years... awesome.

All jokes and woodchucks aside, great job on the mini-cookies. Between them and the milk, I keep thinking about doing a sober Power Hour with them :)

  7. oh. my gosh. there are no words. what a great way to start the day - a random blog by emily. love it!

  8. hee hee, thanks for my morning gigglefest... now i need to catch me sum woodchuck.

  9. At least they spelt "woodchuck" correctly. Get it, spelt! Nasty looking recipes for sure... And I think it's Happy Birthday to someone else in a few days, no?

  10. That cookbook with the woodchuck recipe? I HAVE IT! My father thought it would be amusing. If you ever need a dead critter recipe, let me know.

Incredible cookies! These are like an even better version of the Silver Palate Rocky Mountain cookies. But those have no peanut butter. Are you basically using the peanut butter in place of some of the butter and how did you figure out how to do that? You're a young genius.

The cookie right in the middle looks like it needs more chips. I would have used that as an excuse to have a nibble and then you would have had to eat the entire row to make it come out even. YUM

  11. Milk can dinner? Lol :P

Milk and cookies is more like it :). Mini cookies, there's something special about 'em.

  12. Oh MY. I think it's woodchucks that have been eating my garden. Now I something to seriously threaten them with if they continue their rampage.

  13. I'd much rather eat your cookies than a woodchuck.

I guess it's good to know if there is ever any kind of emergency food shortage though. Woodchucks are pretty plentiful, so it's good to know how to prepare one. More meat on a woodchuck than there is on a squirrel.

I don't think I would want to eat Aunt Sophie though, no matter how well prepared.

Now I must take your advice and go to Cooks.com and see what fun I can come up with!

  14. Mmmmm, I want some of these and shots of milk, right now! Your "game" is so funny...I didn't know people ate woodchucks.

  17. Ha! Frankly, I prefer my woodchuck with its scent glands intact. Really gives the dish some zing.

  22. First thing I thought of when I read about the Woodchuck was "that poor woodchuck!" Sometimes things are so crazy you simply can't make them up. Makes you really wonder about people!! Anyhow, your cookies look "normal" and very tasty!! Great post Emily!

  29. Okay, THAT does sound like a fun game that I could even play by myself (the boys and my husband probably wouldn't think it's very fun!) and just about the funniest thing. Yes, the woodchuck scent gland removal thing really got me. I can't wait to play!
And I'll definitely have to be having mini, mini of these cookies! Your recipes get me everytime. I was actually just hankerin' for some kind of pb cookie. Maybe I'll make these by the hundreds for Ind. Day! Awesome, Emily.

  30. Ooo delish! Too bad I made your oatmeal bars this week already :(

    My Cooks.com search brought up:
    "CONDIMENT"
"KIELBASA POTATO" -which I can only assume is some sort of mutant sausage/potato hybrid.
    and oddly,
"TATOR TOT CASEROLE" also. Looks like you have people going there to check it out ;)

Adam: favorite Boxcar book - The Pizza Parlor Mystery. It's a classic.

Don and Peg, you are correct!

Sue, oh my goodness. THAT is hilarious that you won that cookbook. What else is in it??
Hahaha you're funny. Thanks for nice comment! Young genius? Yesss.

Rachel, you don't want to eat Aunt Sophie? I hear she's delicious.

Heather, that is gross. PS - I'm still reading! Not commenting because I'm lazy.

Anon, just wait. I'm working on a recipe with half chocolate cookie dough, half peanut butter cookie dough, with crushed up peanut M&Ms in it. Love you!

Lisa, KIELBASA POTATO! Hilarious! Good one.

  35. All my favorite flavors mixed up into one cookie. I like the small size because it doesn't have any calories. That's my mom's belief anyway.

  37. Em, you're flippin' hilarious!!! I actually could go for some tots now...

  38. The cookies look super delicious! And sadly there was a woodchuck stew recipe in the local newspaper shortly after I moved to town. It was downright frightening.

  39. When will I get to sample those yummies? Mmz. Lol. Love you too, peanut.

    ReplyDelete
  40. I must have these. And since they're mini, I can eat the whole pan right?

  41. The woodchuck recipe made me giggle. It reminded me of an old recipe in an ancient British cookbook for Jugged Hare (Jack Rabbit), which reads, "First catch your hare." :-(

    Fab looking cookies.

  51. ah i made these last night for a hiking trip this weekend - they taste good, but the batter was sooo crumbly i could hardly make them into balls! some fell apart in the oven. i suspect my oat measurement got messed up somehow...i tried adding another 1/4 of browned butter to rectify, it kindof worked. still very crumbly. oh well, i'll still eat them all.

  52. I made these last week and posted about them today! ANOTHER perfect cookie recipe. Seriously - you are awesome.
