Mini Peanut Butter-Oatmeal Chocolate Chip Cookies
1/4 cup unsalted butter
3/4 cup all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups quick oats
3/4 cup firmly packed brown sugar
1/2 cup creamy peanut butter
1 large egg
1 teaspoon vanilla extract
1/2 cup mini chocolate chips
Preheat oven to 375 degrees F. Grease cookie sheets.
Melt butter in a small saucepan over medium heat; continue to cook the butter, whisking frequently, until it starts to brown and foam, about 2-3 minutes. Set aside for 10 minutes.
In a medium mixing bowl, sift together flour, baking soda and salt; whisk in oats until combined.
In a large mixing bowl, using a mixer on medium speed, beat together brown sugar and peanut butter until creamy, about 1 minute; beat in browned butter until combined. Beat in egg and vanilla until combined. Reduce mixer speed to low and beat in oat mixture until combined; stir in chocolate chips.
Roll tablespoons of dough into balls, place on cookie sheets, and flatten slightly. Bake for 6-8 minutes or until golden brown around edges. Transfer to wire racks to cool.

ReplyDeleteIncredible cookies! These are like an even better version of the Silver Palate Rocky Mountain cookies. But those have no peanut butter. Are you basically using the peanut butter in place of some of the butter and how did you figure out how to do that? You're a young genius.
The cookie right in the middle looks like it needs more chips. I would have used that as an excuse to have a nibble and then you would have had to eat the entire row to make it come out even. YUM
Milk can dinner? Lol :P

ReplyDeleteI guess it's good to know if there is ever any kind of emergency food shortage though. Woodchucks are pretty plentiful, so it's good to know how to prepare one. More meat on a woodchuck than there is on a squirrel.
I don't think I would want to eat Aunt Sophie though, no matter how well prepared.
Now I must take your advice and go to Cooks.com and see what fun I can come up with!

ReplyDeleteah i made these last night for a hiking trip this weekend - they taste good, but the batter was sooo crumbly i could hardly make them into balls! some fell apart in the oven. i suspect my oat measurement got messed up somehow...i tried adding another 1/4 of browned butter to rectify, it kindof worked. still very crumbly. oh well, i'll still eat them all.
