Not your traditional oatmeal raisin cookies.  These are made with candied pecans, soaked raisins, and browned butter.

Cinnamon Oatmeal Raisin Cookies with Candied Pecans

10 tablespoons unsalted butter
1 cup finely chopped pecans, toasted
1/4 cup packed brown sugar, plus 3/4 cup
1/8 teaspoon salt, plus 3/4 teaspoon
2 cups all-purpose flour
2 teaspoons baking soda
1 1/4 teaspoons ground cinnamon
2 cups quick-cooking oats
2 large eggs
2 teaspoons vanilla extract
1 cup raisins, soaked in hot water

Preheat oven to 350 degrees F. Grease cookie sheets.

Melt butter in a small saucepan over medium heat; cook for 3-4 minutes, whisking frequently, until it foams and turns golden brown. Pour all but 1 tablespoon butter out of saucepan and into a large mixing bowl. Place remaining butter back over heat, add pecans, 1/4 cup brown sugar and 1/8 teaspoon salt, and cook 2-3 minutes, stirring frequently until sugar is dissolved, and nuts are golden brown. Pour nuts into a small bowl and set aside to cool completely.

In a medium sized mixing bowl, sift together flour, baking soda, 3/4 teaspoon salt and cinnamon; whisk in oats until combined.
Add remaining 3/4 cup brown sugar into large bowl containing browned butter, and beat together using a mixer on medium speed until well combined; beat in eggs and vanilla until combined. Beat in flour mixture until just combined; stir in pecans and raisins until combined.

Roll heaping tablespoonfuls of dough into balls, place on cookie sheets, and flatten into a 1/4-inch thickness using palms of hands. Bake 12=14 minutes or until golden brown. Cool 1 minute before transferring to wire racks to cool completely.

Makes about 2 dozen cookies

  3. #1: I found no better option than to clean with Fantastic (or something similar) all the inside walls of the microwave and also dishwash clear the rotating plate. And keep it open a while till it's dry so the smell goes away...

#3: raisins are great! Though chocolate is still top priority to me...

  4. These sound great, I've never put nuts in my Oatmeal cookies, I'll have to give it a try.

I've been trying to perfect this cookie forever. I made them (AGAIN) and think the best mix is raisins and craisins together, sweet meets tart :)

  8. I am not a fan of microwave popcorn either. I read somewhere that it's full of some kind of toxin called diacetyl that is present in the butter. So now I only want to make it the old fashioned way with quality oil. I found a recipe on Simply Recipes - I know, it seems silly of me to need a recipe for something so basic but I need all the help I can get in the kitchen. That's why I love your blog! Anyway, here's the link - http://simplyrecipes.com/recipes/perfect_popcorn/ for anyone else who might need it.
    Cheers, Jood
P.S. Love your recipes and plan to try out the cookies soon.

Ooh, New York again! I'll mos def be keeping you in mind, Em.

Also, in Little House on the Prairie Ma kept telling Laura to wear her bonnet, but she didn't and ended up being browner than Nellie Olsen.

  16. Funny post. I never thought to actually look at the little raisin girl. She's kinda cute, and obviously a very hard worker as she's been holding those raisins for YEARS.

  17. I always stand by the microwave now when I make popcorn because I also have no idea how to get rid of that awful burnt popcorn smell!

Your cookies look addicting, as usual :)

  18. OHMYGAWD, candied pecans, what a fabulous idea! I'm always psyched for candied and spiced nuts around the holidays, but it never occurred to me to put them in cookies or baked goods! And this is why I love Sugar Plum.
If your microwave still smells when you get back from NYC, try putting a box of baking soda in there. That's my cure all for nasty smells.

  19. Hope you have a great time in NYC! I really would love to go back. The cookies sound delicious! I love a good oatmeal raisin cookie...and the candied pecans are the perfect addition. I've gotten hooked on craisins but I might just have to use some raisins soon!

  22. Haha nice life lessons. Microwave popcorn makes some of the worst smells ever. I couldn't agree more.

Raisin cookies are def my friend, and whenever you add pecans, well that just makes them even more special. Give them a super shot indeed :)

Good luck on the trip. You and NYC are becoming real close friends!

Have a great time in NY! *waves in that general direction* :)

  25. There is NOTHING worse than the smell of burnt microwave popcorn! It really sticks up the whole house.

I just made oatmeal raisin cookies and you are right, everyone should give raisins a chance!! They are good (although I already knew that one, hehe!)
Hope you enjoy your NY trip :)

  26. I love raisins and sultanas. Why do people treat them so badly? I think a law should be passed that everyone has to try raisins at least once a year!
