6 cups thinly sliced peeled apples
1/2 cup granulated sugar
1 1/4 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon ground clove
3 cups cranberries
1/3 cup granulated sugar
2 cups all purpose flour
1/4 cup granulated sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
4 tablespoons cold unsalted butter, cut into small pieces
4 ounces cold reduced fat cream cheese, cut into chunks
2 large eggs
2/3 cup milk
Heat oven to 375 degrees F. Butter bottom and sides of a 13x9-inch baking dish.
In a large bowl, stir together apples, 1/2 cup sugar, and spices until well combined; set aside.
Stir together cranberries and 1/3 cup sugar in a medium saucepan over medium heat; cook 4-5 minutes, stirring frequently, until cranberries start to break down and get juicy.
Pour apple mixture and cranberry mixture into baking dish and stir until combined.
To make the biscuit topping, in a large mixing bowl, stir together flour, 1/4 cup sugar, baking powder and salt until combined. Knead in butter and cream cheese using fingertips or a pastry blender until well incorporated and mixture starts to clump together. In a medium bowl, whisk together eggs and milk until well combined; add wet ingredient to dry ingredients, and stir until just combined.
Drop spoonfuls of biscuit topping evenly over fruit. Bake 45 minutes or until golden brown and bubbly.
Makes 8 servings

ReplyDeleteI started to watch top chef just desserts on hulu, but hulu never updated so I totally forgot about watching it/: I didn't really think it was the best, they kept Zach around way too long.

i am so with you on the top chef desserts, it was weird and not that good. i only sorta liked seeing what they made, the inclusion of that crazy male chef with the personality/family problems was weird, and it seemed more a contender for a soap opera emmy than any real reality tv show. too much drama! im super excited for tomorrow's start too! i love dale...for some reason, he's got a bad temper too. and i like stephen from season 1, ahahah, he's funny. i hope it doesn't disappoint like desserts!

ReplyDeletePS - buying family members kitchen items for Christmas is a great thing. It either encourages them to bake/cook, or (hopefully), when they choose not to use those items, you can steal them! Did I just say that? Shh.

ReplyDeleteI like people to tell me what they want too. Amazon wish lists are da bomb! I bug everyone who doesn't have one make one. It also helps other people buy gifts for me. They can always get something from my wish list. I have everything from high-end cookware to new socks on it, so there is something everyone can afford. Sometimes you just want to surprise people with something special though, even if it is hit or miss.

ReplyDeleteI usually avoid gift cards, because like you I think they are the easy way out, but for the first time ever, I am putting my brother in the "too hard" basket and just buying him gift cards. He likes tools and he likes boxed sets of old TV shows and music, so I bought him one gift card to a record store and one to a hardware store. Done. Love your cobbler - it looks gorgeous, and once again I am envious of the cranberries that we don't get.
