Crumb Topping
1/2 cup coarsely chopped almonds
1/2 cup packed brown sugar
1/3 cup all purpose flour
1/4 teaspoon salt
3 tablespoons cold unsalted butter, cut into small pieces
6 tablespoons unsalted butter, softened
2/3 cup packed brown sugar
3 large egg yolks
2 teaspoons baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1 teaspoon vanilla extract
1 cup sour cream
1 1/2 cups all purpose flour
2 cups coarsely chopped ripe, fresh apricots
Heat oven to 350 degrees F. Coat a 9 or 10-inch cake pan with cooking spray.
To make the crumb topping, in a medium mixing bowl, stir together almond, brown sugar, flour and salt until well combined; knead in butter, using fingertips, until well incorporated and mixture clumps together. Set aside.
In a large mixing bowl, using a mixer on medium speed, beat together butter and brown sugar until creamy - about 1 minute. Beat in egg yolks until combined - about 1 minute. Beat in baking powder, baking soda, salt, cinnamon, ginger and vanilla until combined. Reduce mixer speed to low and beat in sour cream and flour until combined. Place batter into cake pan. Top with apricot. Sprinkle crumb topping on top of apricots.
Bake 45-50 minutes or until golden brown.
Makes 8 servings
I love apricots, they are one of my favorite summer fruits. I even prefer them to peaches. Come over to my place, there are some awards waiting for you!

ReplyDeleteI am assuming it's like a "coffee cake" or a "strudel" which are the generic catch-all's I use for things like this.

"I've been having these headaches more and more lately. I'm not sure what I should do."--- One thing that can happen to people with food allergies that continue to eat their allergens, i.e. gluten and dairy, is the body mounts a toxic response to them and headaches are super common. Ever thought about laying off all gluten and dairy for 2 weeks and seeing if you feel better? Trust me, I know..it sucks. Been there!
Just a suggestion of course!

ReplyDeleteI'm sorry about your headaches! I heard that more than half of headaches in women are caused by a magnesium deficiency. I learned this when I was getting headaches all the time too, and I swear eating lots of pumpkin seeds really helped. You could always take a multivitamin though. If you're getting your vitamins and enough water, maybe it's allergies? Also supposedly eating black beans is good for headaches (some fitness magazine told me that) and getting omega 3's too. Good luck and feel better. This apricot buckle looks delicious btw, your photos are beautiful as always and I am a sucker for anything with a crumb topping. :D

ReplyDeleteI bypassed all the apricots at the Farmers Market last week because I couldn't quickly come up with what to do with them and it made me sad. Now I will have to hope they are still there this weekend because I need to make your Apricot Buckle!

ReplyDeleteI love apricots but hate that you never know whether they'll be delicious or absolutely disgusting when you bite into them! They're so hit or miss. This cake totally solves that problem though!

ReplyDeleteHeadaches suck. I usually get them once a month, and I think they are almost a migraine but not quite that bad. Excedrin is amazing, but has too much caffeine for me! So I suffer through them like you. Hope they go away fast! Maybe some dessert will help!

ReplyDeleteApricots are yummy. I find it hard to make fruit-based desserts because I always eat the fruit first, especially when it's in season and nice and ripe.
ReplyDeleteI get headaches a lot too. I've brought it up to doctors and they usually brush it off. I seem to get more when it's really hot outside or when I'm using the computer a lot (which I do at work, so that doesn't help). Good luck!

ReplyDeleteAlso with the headaches at work..I get them too! try drinking a few glasses more of water and juice throughout the day...getting enough sleep at night and not eating too many sweets in the morning (make sure you have protein). this seemed to help me...but everyone is different. Hope you get well soon!!

They sound like tension headaches to me, but if they are migraine, wine might make them worse. As for the buckle, I love Blueberry Buckle, and I love apricots...can't wait to combine the two (sans blueberries) Hope you feel better! (Fioricet is a miracle for tension headaches)
ReplyDeleteWhite Flower Oil (http://embrocation.50webs.com) was introduced to me by my mother. During one of my headaches, she gave me this tiny bottle of oil and told me to massage it on my temples and forehead. Amazingly, it worked! Somehow the oil penetrates into the affected area and relieves the pain.

My middle son worked in a fast food restaurant where people had all the time in the world to make up their minds what they wanted to order. He told me they would wait until they were at the cash register and then look up at the menu and decide. It drove him crazy! He didn't last long there!

ReplyDeleteGet yourself to a doctor, tell him you want some tests taken, and also some allergy tests wouldn't hurt.
Also about not ever having fresh spatzle ...... there is no comparison between fresh and packaged.
Try making some from scratch.
