1 cup old fashioned oats
1/4 cup unsalted butter, softened
1/2 cup Biscoff spread
2 tablespoons honey
1 large egg
3/4 teaspoon vanilla extract
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup all purpose flour
Heat oven to 350 degrees F. Coat a large cookie sheet with cooking spray.
Place oats in a medium saucepan over medium heat; cook 3-4 minutes, stirring frequently, until oats turn light golden and become fragrant.
In a large mixing bowl, using a mixer on medium speed, beat together butter, Biscoff and honey until well combined. Beat in egg, vanilla, baking soda and salt until combined. Reduce mixer speed to low and beat in oats and flour until combined.
Drop rounded tablespoons of dough onto cookie sheet (cookies don't spread much). Bake 12 minutes or until golden brown and crisp. Transfer cookies to wire racks to cool.
Makes 1 dozen cookies
I'm pretty sure I'm addicted to Delta for the measly cookies. I saw this spread in the store the other day and I giggled, inwardly and to myself so that no one could hear me.

ReplyDeleteInteresting -- I had a delicious spread at the Wafels & Dinges stand in NYC called Speculoos. I wonder if it tastes like Biscoff. I wish I had some so I could try your recipe.

ReplyDeleteI have this spread at my place. Actually here, we call it pate de speculoos... These are my favorite cookies because of the taste and the crispyness. I shall try your cookies, I'm sure I'll be crazy abour these!

ReplyDelete@Tracy, Biscoffs are Speculoos cookies. My mother-in-law is Dutch and she gives us packages of Speculoos every Christmas. The ones she gives us are shaped like windmills. Great stuff, though!

These just sound delicious and i would love to try them so very much, but i fear my biscoff lacking country (Wales) may prevent this, sad times!

ReplyDeletei used tp LOVE ryan's... when i was 10. and then i found golden corral. needless to say i've never been back to ryan's. but i hold a small fondness for it in my heart strictly because of the nostalgia. :)
ReplyDeleteYour cookies look wonderful! I have yet to try Biscoff products, but definitely will in the future. And yes, unfortunately the Ryan's I've been to was dirty too...we went a few times (mostly family things like you did), not something I'd recommend to someone who hasn't been there.
