Biscoff Toasted Oatmeal Cookies

1 cup old fashioned oats
1/4 cup unsalted butter, softened
1/2 cup Biscoff spread
2 tablespoons honey
1 large egg
3/4 teaspoon vanilla extract
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup all purpose flour

Heat oven to 350 degrees F. Coat a large cookie sheet with cooking spray.

Place oats in a medium saucepan over medium heat; cook 3-4 minutes, stirring frequently, until oats turn light golden and become fragrant.

In a large mixing bowl, using a mixer on medium speed, beat together butter, Biscoff and honey until well combined. Beat in egg, vanilla, baking soda and salt until combined. Reduce mixer speed to low and beat in oats and flour until combined.

Drop rounded tablespoons of dough onto cookie sheet (cookies don't spread much). Bake 12 minutes or until golden brown and crisp. Transfer cookies to wire racks to cool.

Makes 1 dozen cookies

  1. I'm pretty sure I'm addicted to Delta for the measly cookies. I saw this spread in the store the other day and I giggled, inwardly and to myself so that no one could hear me.

    I could go for a cookie right now!

  3. Interesting -- I had a delicious spread at the Wafels & Dinges stand in NYC called Speculoos. I wonder if it tastes like Biscoff. I wish I had some so I could try your recipe.

  5. Funny because I saw the Biscoff spread at Walmart the other day and it made me think of you! I almost tossed it in my cart. But then I knew I would be tempted possibly beyond my control, so I abstained. I think I will break down one of these days.

    I fly Delta, I swear, just so I can get biscoffs. And I ask the flight attendands for extra. And ask the next flight attendant for extra, too :)

    I hoard them. hah!

    This recipe rocks!

    I have loved all your chicago recaps (been reading in stealth and not commenting but had to say hi on the biscoff action...and nutella, that's my other lover, too :))

  9. I have this spread at my place. Actually here, we call it pate de speculoos... These are my favorite cookies because of the taste and the crispyness. I shall try your cookies, I'm sure I'll be crazy abour these!

  10. Those cookies look great Emily. Love them! I remember a Ryan's steakhouse years back in Richmond but I believe it closed down. We do have a wonderful Golden Corral here though!!!! Too tempting!

  13. Emily, I still haven't found Biscoff spread here in DC -- I may have to drive out to the suburbs. You must really like it if you keep making recipes for it!

    @Tracy, Biscoffs are Speculoos cookies. My mother-in-law is Dutch and she gives us packages of Speculoos every Christmas. The ones she gives us are shaped like windmills. Great stuff, though!

    ne-way i'm dying to try these cookies...but sort of afraid to...usually i end up eating the whole batch when they come from this blog. ;) amazing!

  16. Thanks for your comment on the macarons on my blog! These cookies look amazingly delicious! I love the biscoff cookies you get on Delta Airlines. Do these cookies taste like those cookies? I ordered a WHOLE CASE of them 2 years ago because I didn't know you could buy them at Walgreens!!!
    I still have 1/2 a sleeve left out of .....600 cookies!

  18. I recently saw and bought Biscoff spread thanks to you! I subbed it for peanut butter in some cookies and called them "meta cookies." But they were kind of a fail. hahaha. Yours look delish!

  21. Ive never heard of this spread before but your description makes me want it something silly! And the consistency of these biccies (shortbread-esque) uhm...yes please!!! These just sound delicious and i would love to try them so very much, but i fear my biscoff lacking country (Wales) may prevent this, sad times!

  34. i used tp LOVE ryan's... when i was 10. and then i found golden corral. needless to say i've never been back to ryan's. but i hold a small fondness for it in my heart strictly because of the nostalgia. :)

  35. Your cookies look wonderful! I have yet to try Biscoff products, but definitely will in the future. And yes, unfortunately the Ryan's I've been to was dirty too...we went a few times (mostly family things like you did), not something I'd recommend to someone who hasn't been there.
