Cookies
3/4 cup unsalted butter, softened
1/2 cup peanut butter
2/3 cup packed brown sugar
1/2 cup granulated sugar
1 large egg
2 teaspoons baking soda
1 teaspoon baking powder
1 1/2 teaspoons vanilla extract
1 1/4 cups coarsely ground old fashioned oats (toast them for more flavor)
1 cup all purpose flour
Filling
1/4 cup unsalted butter, softened
1/4 cup creamy peanut butter
1/2 cup + 1/3 cup confectioners' sugar
Heat oven to 350 degrees F. Coat cookie sheets with cooking spray.
To make the cookies, in a large mixing bowl, using a mixer on medium speed, beat together butter, peanut butter, brown sugar and granulated sugar until creamy - about 3 minutes. Beat in egg, baking soda, baking powder and vanilla until combined. Beat in oats and flour until just combined.
Drop rounded spoonfuls of dough onto cookie sheets, spacing about 2 inches apart. Bake 10-12 minutes, or until golden brown. Cool cookies on sheet for 5 minutes, before transferring to wire racks to cool completely.
To make the filling, in a large bowl, using a mixer on medium speed, beat together butter, peanut butter and confectioners' sugar until well combined and creamy - about 2 minutes. Spread filling in between cookies.
Makes about 12 big cookies
lucky you've got these awesome cookies to help you through the caffeine withdrawals! I wish I had some too; i'm totally craving the salty/sweet chewiness right now! ...but that seems to happen with whatever you share here, so nothing new!
ReplyDeleteYes, the headaches are from caffeine withdrawls. The caffeine affects the blood vessels in your brain. One of the main reasons why I have never been a coffee drinker of much note is that I didn't want to get myself to the point where I need coffee to function. Once you're dependent on caffeine, the jolt to your nervous system that people interpret as "energy" lessens and you are only drinking it to avoid the crash. You are doing a good thing to let it go. You'll sleep much better too once your body is on a more natural energy cycle. But the headaches are a beeyotch. I was on a business trip once where I was mindlessly drinking coffee for breakfast - at least two cups - for 5 days straight. The day I went home I had none at all and the headache was torturous. That was only after a week. I can't imagine what it would be like if I were a regular drinker and then went wihtout for a few days.

ReplyDeleteI think it's a good bet it's the caffeine. But [applause] for the juicing - it's good stuff! The cookies are lovely - peanut butter goodness stuffed with buttercream goodness.
ReplyDeleteGood for you for giving up coffee for a week! I don't like the idea of being addicted to things either. I have 1 coffee a day, and about 1 pot on the weekend, but luckily, if I go a day without, I don't get a headache or anything. If I ever start to, then I will probably take time off of coffee.
ReplyDeleteThese cookies are bookmarked. As for the headaches peioople prone to headaches should not have caffeine, chocolate or salt. These are the first thing the doc will ask you to eliminate from your dietm all the things we love.

ReplyDeleteThey look so good! As for coffee, I used to drink only coffee in the morning but I sometimes change and right now I'm on a tea period. You can get used to comething else very easily, cappuccino, hot chocolate etc
ReplyDeleteOF COURSE, your headaches are from lack of caffeine. I read awhile ago about a study that (finally!) correlated headaches in post-op patients with the fact that they had fasted (including no coffee) the day before. Simple fix - coffee!
ReplyDeleteThere is NO reason NOT to drink coffee unless you're pregnant or have some specific medical reason not to. I MEAN IT!!! I'M NOT KIDDING, EMILY! Oh! I haven't had my afternoon coffee yet. Give me five minutes and I'll simmer down. ;-)
Of course, it's better not to be dependent on something, but life WITH coffee is better than life without it.

ReplyDeleteThe recipe for Thomas Keller's Chocolate chunk cookies on that page looks good too (molasses + chocolate chunks + dark brown sugar). Have you tried that?
I commend you on your coffee-quitting attempts...it's something I could never do. I actually love it way too much.

ReplyDeleteGood luck with the no coffee thing...I'm not much of a coffee drinker, but I drink about 6 cans of Diet Coke a day to get caffeine instead. I've tried to quit only to suffer terrible withdrawal headaches! If you can do without the caffeine, more power to you!

ReplyDeletei think it's better to wean yourself off coffee rather than go cold turkey--it keeps the headaches to a minimum. that's my belief, anyway--i can't speak from experience because i'm not crazy enough to try to quit! :)

ReplyDeleteGood luck with staying away from coffee - when I stopped drinking my usual cup a day, I began getting head aches as well, maybe you can replace it with something else hot (that's what I did).
Maybe a yummy steamy cup of hot chocolate :)

ReplyDeleteI have experienced those caffeine withdrawal headaches. I quit coffee cold turkey when I was pregnant and got killer headaches. I've cut way back on the amount of coffee I consume, but I still enjoy my morning cup o joe!
