


Strawberry Zeppole with Chocolate-Hazelnut Glaze
1 large egg
1/2 cup milk + 3 tablespoons, divided use
1/2 cup ricotta cheese
3/4 cup granulated sugar
1 tablespoon butter, melted
2 1/2 teaspoons baking powder
1/4 teaspoon salt
1 3/4 cups cake flour
1 cup coarsely chopped California Strawberries
1/2 cup semi-sweet chocolate chips
Oil, for frying
1/2 cup confectioners' sugar
1/3 cup chocolate hazelnut spread
In a large mixing bowl, whisk together egg, 1/2 cup milk, ricotta, granulated sugar, butter, baking powder and salt until well combined. Whisk in cake flour, strawberries and chocolate chips until just combined.
Heat oil in a large pot, or deep fryer, over medium heat (about 350 degrees F.) until hot. Drop heaping tablespoons of dough into oil, about 6 at a time; cook 4-5 minutes, turning occasionally, until golden brown. Drain on paper towels.
To make the glaze, in a medium bowl, whisk together remaining 3 tablespoons milk, confectioners' sugar and chocolate hazelnut spread until smooth. Dunk zeppole in glaze and place on a wire rack to dry.
Makes about 20 zeppole

Your Zeppole sound wonderful - I love deep fried carbs, too:-)...as a matter of fact my husband brought me back some beignets from Cafe du Monde yesterday and I had them for dessert. So reading this is making me exceptionally hungry....and the combo of strawberries and nutella is great! These look really yummy.

ReplyDeleteNothing topped with Nutella can be bad (well, I suppose fish or brussels sprouts or something similar wouldn't work). Love these. It's funny about zeppole. That's what my family always called pizza fritta (fried pizza dough). It took years for me to learn that real zeppoli were something else entirely. Now I want to break out my deep fryer and try these!

LEVAIN BAKERY COOKIES!! AHHHHHHHHH! Oh still my beating heart. I'm sorry Emily....the donuts look incredible.....but the Levain cookie is the first thing that caught my eye. I have a friend going to NY in April- and I have cornered her already to force her to bring me cookies :) lol.....have a great trip!

ReplyDeleteI tried making these today, but when I put the dough (which was a little runny, by the way--is that supposed to happen?) into the oil to fry, the balls cooked too quickly on the outside and too slowly on the inside! Help me, Emily!
ReplyDeleteHi Evelyn! The dough is pretty runny. It makes a nice, moist, light donut though. I used an ice cream scoop to drop batter into the deep fryer. My first batch of three turned out how you described. After that, they turned out fine. I had to cook them for about 4-5 minutes to get them done. They have to be a nice golden brown. I would turn down the temperature of your deep fryer, or lower the heat on your stove. You could try frying them and then popping them in the oven for a few minutes to finish them off. I'm sorry they weren't a raging success! Thanks for trying the recipe and the feedback.
