




Peanut Butter Cheerio-Banana Chocolate Chip Cookies
1/4 cup natural peanut butter
1/3 cup mashed ripe banana
2 tablespoons unsalted butter, softened
1/2 cup brown sugar
1/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup all purpose flour
3/4 cup old fashioned oats
1 1/4 cups Peanut Butter Cheerios
3/4 cup semi-sweet chocolate chips
Heat oven to 350 degrees F. Coat cookie sheets with cooking spray.
In a large mixing bowl, using a mixer on medium speed, beat together peanut butter, banana, butter, brown sugar and granulated sugar until creamy - about 1 minute. Beat in egg, vanilla, baking soda, baking powder and salt until well combined. Reduce mixer speed to low and beat in flour and oats until combined. Beat in Cheerios and chocolate chips until combined.
Drop rounded tablespoons of dough onto cookie sheets, spacing about 1-inch apart. Bake 10-12 minutes or until golden brown. Cool 1 minute before transferring cookies to wire racks to cool.
Makes about 18 cookies

Oh wow, I need to find this cereal. I used to LOVE rice krispies treats cereal, but it's not really readily available now - it used to be in every grocery store! Why do cereals go away!?
