Peanut Butter Cap'n Crunch Banana Cookies

3/4 cup chunky peanut butter
3/4 cup brown sugar
2 tablespoons corn syrup
1 large egg
1 teaspoon vanilla extract
3/4 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup finely ground Cap'n Crunch cereal
3/4 cup finely ground banana chips
1/2 cup milk chocolate chips

Heat oven to 350 degrees F.

In a large mixing bowl, using a mixer on medium speed, beat together peanut butter, brown sugar and corn syrup until creamy - about 1 minute. Beat in egg, vanilla, baking soda, baking powder and salt until well combined. Beat in Cap'n Crunch, banana chip and milk chocolate chips until well combined.

Drop heaping tablespoons of dough onto cookie sheets. Bake 12-14 minutes or until golden brown. Cool 1 minute before transferring cookies to wire racks.

Makes 1 dozen cookies

  7. I'm not gluten-free, but it occurred to me that these cookies would be easy to 'de-gluten-ize' if you used a gluten-free peanut butter-flavored cereal. Baking for people with special needs is fun because they often don't get to eat regular baked goods and are so genuinely grateful, but also intimidating because if you're not vegan/gluten-free or whatever, it's easy to 'forget' one of the 'rules.'

  20. These look delicious. I love that you used ground banana chips. Similarly I love to make banana cookies using dehydrated bananas that I grind up in the food processor to a kind of flour. I will also say that looking at your picture of Trader Joe's, I'm wondering if we shop at the same one!
