S'mores Blondies

1/2 cup unsalted butter
1 cup brown sugar
1/2 cup Crunchy Biscoff
2 large eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon salt
1 sleeve graham crackers, finely ground
1 cup all purpose flour
1 1/2 cups mini marshmallows
3/4 cup milk chocolate chips

Heat oven to 350 degrees F. Line an 8x8-inch baking dish with foil; coat foil with cooking spray.
Melt butter in a small saucepan over medium heat; cook 2-3 minutes, whisking frequently, until butter foams and starts to turn golden brown.

Pour butter into a large mixing bowl. Mix in brown sugar, using a mixer on medium speed, until well combined - about 1 minute. Beat in Biscoff, eggs, vanilla, baking soda and salt until well combined and doubled in volume - about 3 minutes. Reduce mixer speed to low and beat in graham cracker and flour until just combined. Stir in 1 cup marshmallows and chocolate chips until combined. Spread batter into prepared pan; gently press additional 1/2 cup marshmallows into blondies. Sprinkle some additional chocolate chips or chopped milk chocolate on top.

Bake 30-35 minutes, or until golden brown, blondies pull away from edges of pan, and a toothpick inserted comes out with moist crumbs attached.

Makes 16 small blondies

  6. Yum! The only thing I might try is to push all those extra ingredients into the top of the blondies closer to the end of the baking time. But however you do it, they look amazing!

    1. That's true; milk chocolate does tend to dry out. I thought it was fine for these, though... not sure why.

  7. What is it about s'mores that anything with those flavors is always perfect? My favorite ice cream place used to make a s'mores ice cream that was to die for. My mother used to make "indoor s'mores" with Golden Grahams cereal. I'm sure these blondies are beyond wonderful. It might be a good excuse to buy some Biscoff spread or cookie butter. I don't dare buy it unless I have a purpose for it or I could eat the whole jar and 15 pounds wll come back magically.

  13. You definitely sold me on these! They sound fantastic. I guess if I've never had Biscoff spread, this is not a bad way to try it! These remind me of a bar I went to in Philly this weekend where they had an outdoor beer garden and fires to toast marshmallows and make s'mores. Genius!

    By the way, you crossed my mind yesterday since I was able to help set up for the James Beard Awards in NYC--I know how much you enjoy the city! I blogged about it if you're interested in a little behind the scenes action ;) hope Chicago is treating you well!

  23. I just put a batch of these in the oven and I can hardly wait for them to come out! The batter was delicious all by itself; I can't imagine how tasty they will be when they're done. I haven't been eating as many sweets lately, but I've started baking a treat for the weekend when I know there will be people around to eat them. Maybe I'll hide this one and eat it all myself?
