


Mini Coconut Chocolate Chunk Cookies
Ingredients:
3/4 cup (100 grams) all-purpose flour
1/4 cup coconut flour (30 grams)
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1/4 cup unsalted butter, softened
1/2 cup granulated sugar
1/4 cup coconut cream
1 teaspoon vanilla extract
1 large egg white
3 ounces coarsely chopped dark chocolate
Directions:
In a medium bowl, sift together flour, coconut flour, baking soda, baking- powder and salt. In a large bowl, using a mixer on medium speed, beat together butter, sugar and coconut cream until creamy - about 1 minute. Beat in vanilla and egg white until combined. Reduce mixer speed to low and beat in flour mixture and chocolate until just combined. Chill dough in freezer for 20 minutes.
Heat oven to 350 degrees F.
Roll teaspoons of cookie dough into balls; place on cookie sheets, spacing about 3/4-inch apart. Bake 10 minutes or until golden brown and crisp. Transfer cookies to wire racks to cool.
I definitely need to experiment more with coconut flour! These sound awesome.

ReplyDeleteThose cookies look soooo good. Coconut everything is becoming so big! Where did I just hear something about coconut oil being the best thing ever? Oh, could it have been Dr. Oz? I wish I could remember. Maybe it would change my life.
Where did you get the coconut flour, Trader Joe's?

I would try Whole Foods. Mmm I haven't tried those cookies but I will now!
DeleteThis is so weird ... I was looking around in my pantry today and found coconut flour that I bought a while ago for a recipe, but I didn't use it all. I also had a can of coconut cream that I bought by accident instead of coconut milk. I was wondering what the heck I was going to do with both of those things, and then I come across this recipe! What a coincidence!
