

Slow Cooker Apple Cinnamon Rice Pudding
Ingredients:
3 1/2 cups milk
1 cup jasmine rice
1/2 cup brown sugar
1 tablespoon unsalted butter
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup golden raisins
1 1/4 cups coarsely chopped apple
1 1/2 teaspoons vanilla extract
Directions:
Combine milk, rice, brown sugar, butter, cinnamon, salt and raisins in a slow cooker on high; cook 1 1/2 hrs, stirring once or twice. Stir in apple and vanilla, and cook an additional 30 minutes. Serve warm.
This sounds like such a delight!

Deletei had to laugh out loud at this pots, mexicans have our version of rice pudding called "arroz con leche". i remember wanting to eat just that for dinner all the time!!!

DeleteI love rice pudding and the idea of easy rice pudding is scary. If its easy then I can eat it for breakfast....and lunch....and dinner. :) I'm usually a purist when it comes to rice pudding (just creaminess and rice for me, no raisins), but your cinnamon and apples version sounds wonderful. Thanks!
ReplyDeleteI probably wouldn't have added the raisins... but I had some I needed to use up because they were getting old. I hate to waste food!
DeleteI've never had rice pudding. This looks so comforting! I eat way too much sugar! But I watch what I eat and stay healthy so I figure a little extra sugar won't kill me. I know what you mean about the pics too. Of course if I didn't ever post pics when I didn't like them, my blog would be sad and empty. It's always a good excuse to make a yummy recipe again :)

ReplyDeleteTurned out great! I used purple raisins, and also topped with chopped walnuts. Had to watch it carefully because my slow cooker tends to be really hot- it got a bit dry, but just adding a little milk at the end helped.
