Blueberry Buckle

  • 2 cups cake flour + 1/3 cup, divided use
  • 1 1/4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened, divided use
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1/2 cup milk
  • 1 1/2 cups fresh blueberries
  • 1/2 cup brown sugar
  • 1/2 teaspoon ground cinnamon
Heat oven to 375 degrees F.  Spray an 8x8-inch glass baking dish with cooking spray.

In a medium bowl, sift together 2 cups cake flour, baking powder and salt.  In a large bowl, using a mixer on medium speed, beat together butter, sugar and vanilla until creamy.  Beat in egg until well combined.  Reduce mixer speed to low and beat in flour mixture, alternating with milk, until just combined.  Gently fold in blueberries.  Spread batter into the bottom of prepared pan.

To make the topping, beat together remaining 1/4 cup butter, 1/3 cup cake flour, brown sugar and cinnamon until well combined and crumbly.  Sprinkle crumble on top of cake batter.  Bake 35-40 minutes or until well risen and golden brown.  A toothpick inserted into cake should come out with moist crumbs attached.

  1. Never had a buckle in my life... When blueberries are gonna be ready, I shall try your recipe:)

  2. I love that it's berry season. I get a nice crop of wild blackberries and raspberries from bushes that grow around the barn. Too bad I never seem to pick enough at one time for an entire dessert. If I want that many, I have to pony up at the farmer's market.

You are making me regret I keep using those blueberries I bought at the farmer's market this weekend in smoothies. I want some of this buckle instead - even if I do have a swimsuit vacation in 10 days.

I just found out I won your Malibu contest. Woo hoo! I didn't think I would since I didn't quite leave the right type of comment. I will have a nice night on the town on vacation. You deserve my indirect thanks for hosting that giveaway!

  3. I've never had a buckle (or known exactly what it is) but now that I know it is so simple, and looks so delicious, I will have to give it a shot!

  4. Ha! Thanks for making me not feel so bad about eating dinner on the couch! My BF and I have a small kitchen table that seats 2, but we ALWAYS eat in the living room instead :) Go America!

  5. Looks good - but what amount of blueberries did you use - not in the recipe.

  6. Yay for berries! This buckle is definitely summer-perfect. or just perfect in general.

  7. yum! I've never made a blueberry buckle, but I love it! I'll have to try this! can't wait to see your birthday cake recipe!

  8. I love blueberry buckle!! Yours looks awesome! Sounds like you had a great 4th :)

  9. Your parents' grapes are so pretty!

You've probably said this before, but what makes a buckle different from a coffee cake? It looks so good.

And yellow cake with chocolate icing may just be my favorite combo ever. Can't wait for that one.

Happy belated birthday / Fourth! :)
